  2. Chinese Cucumber Salad 🥒 This is one of my all time fav childhood dishes that I grew up eating and it’s by far the tastiest salad ever! To be completely honest I much prefer the usual method of bashing the cucumber (lol) and roughly chopping it but this is a super fun way to serve it if you’re bothered! Ingredients 2 large or 3 medium cucumbers Sea salt 1.5 tbsp black vinegar 1 tbsp soy sauce 1 tsp sesame oil 2 tsp liquid sweetener or sugar 2 cloves garlic, minced Chilli oil, to taste Pinch of sesame, to garnish 1. Wash your cucumbers then slice off the ends. Place between a pair of wooden chopsticks and slice in an angle all the way down. Flip and repeat. 2. Put into a bowl and sprinkle some salt over to draw out any excess moisture. Set aside for 5 mins then rinse and drain well. Alternately, you can skip this step and simply marinade your cucumber in the prepared sauce and keep in the fridge until you’re ready to serve. 3. In another bowl, add in the vinegar, soy sauce, sesame oil, sweetener, garlic and chilli oil. Add in the cucumbers and mix well to coat. 4. Simply scoop up with some tortilla chips for the perfect bite 🤌🏼🍃 This is my take on the viral green goddess salad (by @Baked by Melissa) that was popping off on TikTok years ago! I'm personally not huge on dressings being too garlicy/onion flavoured so I've toned it down for this recipe. I also added in avo for creaminess and it is deliciousss! Serves: 4 Salad base: 1/4 green cabbage 1 small head cos lettuce 2 cucumbers Dressing: 1 packed cup fresh basil Handful of baby spinach 1 medium avocado 1/2 jalapeño 1 large clove garlic 1/3 cup cashews 1 tbsp nutritional yeast Juice of 1 lemon 1 tbsp maple syrup 1/4 cup olive oil Salt & pepper, to taste To serve: Hemp seeds Tortilla chips Method: 1. Finely dice your cabbage, lettuce and cucumber and add into a large bowl. 2. Add all your dressing ingredients into a blender. Start on a low speed to break down the ingredients, then slowly increase to blend until smooth. If needed, add an extra dash of olive oil. 3. Pour into the salad bowl and mix well to coat all the ingredients. Taste and add extra salt if needed. 4.   3. Jerk Chick’n 🇯🇲 - another plant-based, creative & fun recipe made with king oyster mushrooms! I loveee jerk chicken and this alternative really hit the spot 😋💛 As some of you know, I love the creative element of creating these recipes but as a busy bee I mostly cook quick meals and save the extra creative recipes for occasions. However this recipe is sooo good and really hit me culturally that I will be adding it to my rotation! The boneless version only takes 15 mins to prep and is by far my favourite of the 2 options! 🌱 6 king oyster mushrooms 🌱 1 tbsp nutritional yeast 🌱 1 tsp sage 🌱 1 tbsp all purpose seasoning 🌱 1 tsp allspice 🌱 1-2 tsp jerk marinade 🌱 3 rice paper sheet Coating Seasoning 🌱 1-2 tsp jerk seasoning 🌱 ½ tsp all purpose 🌱 ½ tsp paprika 🌱 1 tbsp oil Servings: It takes 150g which is about 2 shrooms for each piece. So this recipe makes about 3 pieces of mock meat. Boil the mushrooms in the sage, all purpose seasoning, 1-2 tsp jerk marinade and nutritional yeast for about 10 mins. Then drain the water and pat try with a kitchen towel. Assemble as shown in the video but layer it up in the center for the drumsticks to make it thick. For the boneless piece, layer it up to the desired thickness. Airfry/roast for 15-20 min at 190oC. Tips: I recommend making your own jerk marinade if you can’t take a lot of spice. CAULIFLOWER STEAKS WITH ROMESCO SAUCE 🔥 get the full recipe with notes in the SO VEGAN App and via our website (follow the links in our bio) ✌️ It’s 2024 and cauliflower steaks are now well-and-truly a thing 🔥 For this version, we simply roast them in olive oil, salt and pepper, along with sliced garlic – before serving on a tangy romesco sauce and topping with a parsley dressing 😋 Serves 2 🌱 1 large cauliflower 🌱 olive oil 🌱 salt + pepper 🌱 1 garlic clove, peeled + thinly sliced 🌱 180g (6.3oz) roasted red peppers from a jar, rinsed 🌱 35g (1/4 cup) blanched almonds 🌱 1 tbsp tomato purée 🌱 1/2 lemon, juice only 🌱 1 large handful of fresh parsley, finely chopped 🌱 1/4 red onion, finely chopped 🌱 crusty bread, to serve (optional) Preheat the oven to 180°C fan / 400°F. Remove the leaves from the cauliflower and slice the head down the middle. Slice a 2cm (0.8”) thick steak from each half of the head so you’re left with two cauliflower steaks. Save any leftover cauliflower for another recipe. Transfer the steaks to a baking tray. Drizzle both sides with olive oil and season with salt and pepper, then bake for 15 minutes. Combine the sliced garlic and a small drizzle of olive oil in a bowl. Remove the cauliflower from the oven, flip over the steaks, then spoon the garlic and oil over the top of the cauliflower steaks. Return the cauliflower to the oven for another 15 minutes or until tender. Meanwhile, add the roasted red peppers, blanched almonds, tomato puree, juice from half of the lemon and small pinches of salt and pepper to a fast-powered blender. Blend until silky smooth, then set aside. Next, add the parsley and red onion to a bowl, along with the juice from the remaining half of lemon and small pinches of salt and pepper. Mix, then stir in enough olive oil until the dressing runs smoothly off a spoon, then set aside. To serve, spoon the romesco sauce on plates, then top with the cauliflower steaks and drizzle over the parsley dressing. We also love to scoop up the sauce with crusty bread! Enjoy.
