The Award Winning Rack of Venison with a Blackberry Reduction RECIPE⤵️⤵️⤵️ Ingredients Venison: • 1 rack of venison @jacksonholebuffalomeatco • Olive oil (binder) • Big Horn Bison Salt, Pepper, Garlic seasoning Blackberry Reduction: • 12 oz blackberries • ½ cup balsamic vinegar • ½ cup apple cider vinegar • ½ cup pure cane sugar • Juice and zest of 1 lemon • 1 thyme bundle • 1–2 tbsp Big Horn Bison honey Directions 1. Prep the Venison: Remove silver skin, coat with olive oil, and season generously with SPG. 2. Sear & Cook: Sear on high heat, 90 seconds per side. Move to indirect heat at 275–300°F. Cook to 125°F internal. Rest 10 minutes. 3. Make the Reduction: In a saucepan, combine all blackberry reduction ingredients. Simmer 20–30 minutes until thickened. Remove thyme. 4. Serve: Slice ve
