  1. What looks like a tiny firetruck rolling around in Denver is actually a mobile coffee shop called @weewoocoffee. Owner Jack Brownson fell in love with Japanese kei trucks years ago while staying with a friend outside Olympia, WA. Known for their compact size and fuel efficiency, his friend used their kei truck for odd jobs around the farm. Since 2023, Brownson had been developing the Wee Woo concept, and this May he brought his dream to life by hitting the road with his café on wheels. From the small setup, Wee Woo serves matcha & chai, and cappuccinos & lattes using a bright, chocolatey blend from Colombia, Brazil, and Mexico made for them by @littleowlcoffee. For autumn, they’ve added house-made syrups for seasonal drinks like pumpkin spice and apple crisp. You can find Brownson and his partner Maria at the truck every Sunday at @lafayettefarmersmarket through the end of October, and at events and holiday markets across Denver. The Wee Woo Instagram account lists all pop-up dates and locations. When not behind the wheel at Wee Woo, Brownson's day job is helping develop the coffee program at @dayshift_byworkandclass, the café concept at the newly opened Englewood location of @supermegaloca’s restaurant, @workandclassdenver. As for now, he's learned a lot from his first summer season and hopes to return even stronger next year, with the eventual goal being to open a brick-and-mortar location or expand to a second, slightly different truck.   3. The PZA (@thepzadenver) stands on one of the lonelier blocks of Santa Fe – a small building slotted between a vacant lot and the exit end of a gas station carwash. Its solitary location is fitting for chef and owner Jake Rothey, who is the kind of guy that likes to arrive at his restaurant each morning to mix the sourdough all by himself. As Rothey tells me: “The prep is my zen.” He opened the PZA storefront in Jan 2025. Since then the restaurant, which is primarily a takeout spot, has developed a cult following with Denver pizza fans who leave five star ratings on review sites and enthusiastically rave about the chewy-crisp crust on his pies. The entire operation is built on Rothey’s desire to “stick to the basics and try to do a few things well.” While friends occasionally help him during service on busy nights, most of the time he is on his own. It’s a move that some might find bordering on madness, but it keeps costs down and allows him complete control over the food that leaves his shop. During a recent visit, I ordered one of his most popular items: Killa Bee, a red-sauce pepperoni pie drizzled with hot honey and dotted with dollops of ricotta. The pepperoni slices curled into miniature, oil-filled pools, resting on that signature sourdough base. It’s as good as, and possibly even better than, any other pizza I’ve had in Denver. And while Rothey feels fortunate that his restaurant found a passionate fanbase early on, his first year in business has brought moments where he’s had to rethink elements of the business. “A hard thing for most chefs is swallowing our pride,” he admits. “I built this on failures as much as successes.” To make the shop more sustainable as a one-man operation, he had to kill fan-favorite sandwiches and streamline the appetizer and house pie menus to a manageable core. “I made a rule for myself [that] if I can’t do it all of the time, I don’t do it any of the time,” says Rothey. 📍The PZA 644 Santa Fe Dr, Denver Open: Wed-Sun 4-9pm (or until soldout) 📸: @newdenizen Follow me at @newdenizen for the latest in Denver restaurants
