  1. 🥞📝 COCONUT & MANGO CREPE CAKE 📝🥞⁣ ⁣ In the interest of keeping things extra and insane over here, why make a few crepes on pancake day when you can make a gazillion and make yourself a crepe cake instead?? ⁣ ⁣ If, unlike me, you have a life, you can ditch making 25 crepes, 2 different creams, alternating, stacking, crumb coating, decorating and chilling all before tucking in and instead use 1/3 of the recipe below and roll up the cream with some fresh fruit in the crepe like a Hong Kong style pancake instead or just dollop on top. Takes a fraction of the time, so it’s quicker in the tum and all for the same amount of yum 🤷🏽‍♀️😬 ⁣  ⁣ BUT if you are brave / bored enough to give this a go, then you will need: ⁣  ⁣ ❤️‍🔥 Crepe Batter ⁣ 300 g Plain Flour, sifted ⁣ Pinch of Salt ⁣ 85 g Golden Caster Sugar ⁣ 790 ml Whole Milk ⁣ 4 Large Eggs ⁣ 30 g Unsalted Butter, melted ⁣ 1 tsp Vanilla Bean Paste ⁣ ❤️‍🔥 Mango Mascarpone ⁣ 250 g Mascarpone ⁣ 255 ml Mango Pulp, tinned ⁣ 15 g Icing Sugar, sifted ⁣ ½ tsp Vanilla Bean Paste ⁣ 150 ml Double Cream ⁣ ❤️‍🔥 Coconut Cream Cheese ⁣ 160 g Coconut Cream ⁣ 25 g Icing Sugar, sifted ⁣ 100 g Cream Cheese ⁣ ½ tsp Vanilla Bean Paste ⁣ 150 ml Double Cream ⁣ ❤️‍🔥 To Finish ⁣ Approx 30 g Desiccated Coconut  ⁣  ⁣ You can find the method under the pinned comment below 👇🏽 but if you’re more of a fluffy stack kinda person (like me), I’ll share a recipe for those on Sunday 🫶🏼⁣  ⁣ #pancakes #crepe #crêpe #crepecake #millecrepe #mangocake #coconutcake #pancakeday #shrovetuesday #mango #pancake

  3. On Sunday I run the @londonmarathon with a fridge on my back but why.. Well when my mum was diagnosed with dementia, I was just 15. I didn’t understand it — just my dad telling us she had 6 to 10 years to live. I used to sit in my bed at night in tears, praying she would make it to my 21st birthday. By the time I was 20, those prayers had changed. I found myself wishing she was at peace. She’d been stripped of everything that made her human — my mum, a wife, a friend. When she died, I didn’t just grieve her. Her dementia was familial — if I carried the gene, I would get it too. Between 15 and 23, I was numb to joy. I escaped through sport… and when that didn’t go to plan, I turned to alcohol. My life spiralled — depression, anxiety, and fear of what my future could look like. You know the one thing that keeps you here when every intrusive thought tells you to give up? I wish I could say it was hope… but when my genetic consultant said, “Jordan, it’s not the result we were all hoping for,” I had none left. The one thing that kept me here was support. Strangers. My family. People showing up when we were all at rock bottom. Support is everything. Because we all carry something… but we don’t have to carry it alone. It rebuilt my life. Helped me create light in my darkest moments — and now reflect that into others. If nothing changes, my reality is stark. By 45, I may not remember my name. My children could attend my funeral before they’re even teenagers. But I believe in miracles. And I’m on a mission to deliver one — to millions of people. It starts with this: Making dementia visible. If we get people to listen, we can change the world — one step at a time. This Sunday, I run the London Marathon carrying a 25kg fridge — a physical reminder of the weight I’ve carried for years 💙

  1. Gifted | These are just some of the things I saw and learned on a dark history walking tour of Rome with @darksidecitytours (gifted) I highly recommend if you’re ever in Rome! JACKLYNN10 for 10% off with @darksidecitytours (this is an affiliate code so I make a small percentage if you purchase using my code 🫶🏽) I love to support smaller, independent tour guides and companies like @darksidecitytours - this tour was gifted but the reviews are entirely my own, and I would not recommend something I did not thoroughly enjoy! Edit: The most famous person to be burned at Campo Dei Fiori is Giordano Bruno. His demise came after the church deemed his beliefs heretical. His beliefs included denying the Trinity, the divinity of Christ, the virginity of Mary, and the concept of transubstantiation. He also believed in the transmigration of souls (reincarnation). Bruno refused to recant his views. He was also very intelligent and ahead of his time with his cosmological views. Bruno believed the universe was infinite, with no center - rejecting the old Aristotelian model and even going beyond Copernicus. He claimed that stars were distant suns, each potentially surrounded by their own planets. This was revolutionary most still thought stars were just points of light embedded in a celestial sphere. He proposed the existence of countless inhabited worlds, what we now call exoplanets, each with life forms, possibly intelligent. This idea deeply offended Church teaching, which said Earth and humanity were central in God’s creation. #historygram #romeitaly #history

  2. Thank you to the team at Holyroodhouse palace @royalcollectiontrust for allowing me BTS access to Mary’s chambers, and for the curator who spent time talking me through the history! Note: you are not allowed to take photos, I was given special permission, please respect these rules! Things I saw in Mary Queen of Scots bedchambers that left me heartbroken This needlework done by Mary whilst she was in captivity. Some believe this one represents her relationship with Elizabeth I, Mary as the mouse under Elizabeth as the ginger cat’s paw A box reputed to contain a lock of Mary’s hair. Seeing hair always triggers a bit of an existential crisis for me. I struggle to comprehend that I am looking at something once part of a historical figure I’ve read about The supper room that Mary dinned in with her close friend David Rizzio on the 9th March 1566. It was here that Rizzio was dragged from behind Mary’s skirts by her husband Darnley and his co-conspirators and murd*red. Accounts say Mary tried to protect him, and only stood aside once her pregnant belly was threatened The spot were David Rizzio was allegedly left after he was st*bbed over 50 times by Darnley and his accomplices. It is also said that his body was stripped and thrown down the stairs The original private staircase to Mary’s bedchamber, hidden out of sight. Many wrongly assume the tight winding staircase you now walk is the same Rizzio’s conspirators stormed up on that night - how I wish I could have walked those original steps! This painting of Mary shown in ’en deuil blanc’, her white mourning dress after she lost her father in law Henri II of France, her French mother Mary of Guise and her husband François II in a short span of time This painting showing a 17 year old Lord Darnley Henry Stewart. As the man who was part of the horrible demise of David Rizzio, it was odd seeing him pictured as a young innocent, scrawny youth The Darnley Jewel, likely made for Lady Margaret Douglas the mother of Lord Darnley (Mary’s 2nd husband). The jewel is a mystery with emblems and inscriptions, and secret compartments #historygram #maryqueenofscots #britishhistory #scottishhistory #tudors
