  1. This is THE corned beef recipe ☘️ that got me on millions of screens back in 2023 and millions since, + thousands have came back to comment it’s the best they’ve ever made! Soo you don’t need to just take my word for it. I refuse to accept mushy veggies as my fate on St. Patrick’s Day. The secret to perfectly tender beef and veggies that actually hold their texture? Cooking them in stages so each one shines. I go low and slow in the oven with mustard, brown sugar, and extra garlic (because I can’t help myself). Potatoes and carrots go in with an hour left, and cabbage only steams at the end — no more overcooked sadness. Don’t skip the horseradish cream sauce. It makes the dish, in my humble opinion 😋 Here’s what I used: 🥩 Corned beef (+ spice packet) 🥄 Dijon mustard & brown sugar 🧄 Onion & garlic 🍺 Beer, beef broth, or water 🥔 Potatoes, 🥕 carrots, & cabbage 🌿 Fresh parsley (optional) ➕ Horseradish cream sauce (sour cream, horseradish, Dijon, Worcestershire, salt & pepper) The method: 1. Preheat oven to 325°F. Rinse corned beef, pat dry. 2. Place in a roasting pan (Dutch oven works great), rub the top with mustard and brown sugar. 3. Scatter onion, garlic, and the spice packet around it. Add liquid but don’t submerge. 4. Cover and roast 45-50 minutes per pound. 5. With 1 hour left, add potatoes and carrots. Add more liquid if needed. 6. With 15-20 minutes left, add cabbage on top. 7. Remove beef, let it rest 10-15 minutes, then slice against the grain. Serve with veggies and horseradish cream.   2. Rainbow parties in the Green Mountains are the best way to welcome spring 🌈😎✨ Yesterday’s Pride festival at @sugarbush_vt was a total blast! The 4th annual Pride Weekend included a Pride Parade down the mountain and apres dance party, plus a Drag Brunch today. It’s so much fun to celebrate love in the hills! 🏳️‍🌈 Pride in the snow sports community is a very big deal. Athletic communities aren’t always inclusive or accessible, especially in the glitzy world of skiing. The first openly gay Olympic skier, Gus Kenworthy, didn’t come out until 2015. Tanner Pendleton, the first pro snowboarder to come out, didn’t share his story until 2020. How many queer athletes came before them? Four years ago, Sugarbush made the awesome decision to host a slopeside Pride Weekend. This has grown into one of the Mad River Valley’s best parties (which is a bold statement… the MRV knows how to throw down). In this highly inclusive neighborhood, diversity is celebrated on and off the slopes. 🦋 After college, I lived in the MRV for 4 years and loved how welcoming this community is. The valley channels every classic and quirky Vermont vibe. I highly recommend everyone spend time here if you’re looking for “real Vermont” fun! Yesterday, my friend @katvt and I decided to take a spontaneous adventure to the valley. We fueled up at @peaceburgervt (truly the best veggie burgers) and danced under the sun at Sugarbush. Everyone had a blast, especially the dogs!! 💜💙💚 Nature is for everyone. I’m so proud of the team at Sugarbush for welcoming ALL to the Green Mountains. Thank you for reminding our community that love is love!

  3. ~BEST BITES OF 2025~ Some meals stay with you. Not because they were trendy or over-the-top, but because of when you ate them, who you were with, or how they made you feel. This year’s favorite bites were tied to birthdays, long drives, summer evenings, casual afternoons, & those quiet “wow, this is really good” moments. Some were planned, some were happy accidents & all were made by people who genuinely care. I don’t eat out often, but when I do, I want it to feel intentional. Atmosphere matters. Simple flavors, thoughtful cooking, relaxed vibe. @elcomalwillistonvt — Traditional Oaxacan flavors you don’t see often in VT. Great guac, crispy tacos, and a mole worth returning for. @redhenbaking — Simple but perfect focaccia from one of my favorite bakeries. @frankiesvt — The hype is real. Go with friends, order widely, don’t skip anything. @backcountrybagelsvt — Sourdough bagels I drove an hour for more than once. Still holding out hope for their return. 🤞 @sweet_simones — Poke bowls all year long. Switch up the protein, never skip the miso cukes. @philoridgefarm — Chicken salad sandwich that matches one of the most beautiful settings. @peaceburgervt — Smash burgers, wings, and crispy chicken wraps worth every mile. @bigsprucevermont — Caesar salad on repeat. Calling it now: BLT + Caesar = girl dinner ‘26. @hookandpeelpizza — Pizza I stumbled upon and then followed around the state. @canteen_creemee_company — Buffalo chicken sandwich that lived up to the hype. Summer must-stop. @namastekitchenvt — Chicken tikka roll with raita. Affordable, craveable, perfect for ☝️. #vermontliving
