  2. 2016 San Guglielmo Brunello di Montalcino . Blu Sardinia - Redmond Washington USA . One of the best Happy Hours on the eastside of Seattle continues to impress! Love this spot! This visit dined on their “Caprese” which features a burrata atop tomatoes and basil leaves with a balsamic glaze….then devoured one of the yummiest pizzas - their “Pepperoni” which I added Italian Sausage to! It includes spiced local honey making it delicious!! A spacious outdoor seating area makes this spot extra special in the summer! . This inaugural release by a new member of the Consortium is a stunner! Wow wow wow! Guglielmo was actually a founding member of the consortium and today his son’s daughter and her husband run the production. They were blessed to start with the fantastic 2016 vintage and they took complete advantage of it! What a luscious bottle they have created - it’s coming together so well this early….silky smooth structure….fresh red fruit…balanced…lively!   3. 2006 Podere Le Ripi Lupi e Sirene Brunello di Montalcino . La Fontana Siciliana - Seattle Washington USA . Pasta overload at one of my favorite places to visit in downtown Seattle! Yes I devoured not only their “Cheese Ravioli” in a tomato mascarpone cheese sauce but also the splendid “Fettucine al Pesto” featuring homemade pasta and chicken! I slept well that night! . Not much better in life than an aged Ripi! 2004 - 2007 and this 2006…..each a little slice of heaven….all three situated in my Top 15 of All-Time! This one for me took the longest too mature but boy was it worth the wait! With so much life yet in it this full body, lusciously silky, gorgeous dark red angel has an aroma and finish that few others can claim. Smoked Brisket Shishito Chimichurri Tostadas 🌶️🥩🔥 ⸻ INGREDIENTS Brisket • 12–14 lb packer brisket • ¼ cup Bear & Buttons Wsauce • 2 tbsp Al Frugoni TX Salt & Pepper • 2 tbsp Blazing Star Beef Rub • 1 tbsp Kinder’s Honey Brown Sugar Blistered Shishito Chimichurri • 8 oz shishito peppers • 4 oz sweet peppers • 1 cup parsley • ½ cup cilantro • 4 garlic cloves • 1 small shallot • 2 tbsp red wine vinegar • 2 tbsp lime juice • 1 tbsp Kinder’s Chimichurri Seasoning • ½ tsp crushed red pepper • ¾ cup olive oil • 1 tsp kosher salt • ½ tsp black pepper Pickled Red Onions • 1 large red onion, thin sliced • ¾ cup red wine vinegar • ¾ cup warm water • 1½ tbsp sugar • 1½ tsp kosher salt Guacamole • 3 ripe avocados • 2 tbsp lime juice • ½ tsp kosher salt • ½ Roma tomato, diced • 2 tbsp diced onion • 1 garlic clove, minced • 2 tbsp chopped cilantro Tostada Build • Corn tostadas • Smoked brisket • Guacamole • Shishito chimichurri • Pickled red onions • Cotija cheese • Cilantro • Flaky salt ⸻ STEPS 1️⃣ Brisket Trim brisket to a ¼” fat cap. Coat evenly with Wsauce, then season all sides with TX Salt & Pepper, Blazing Star Beef Rub, and Honey Brown Sugar. 2️⃣ Smoke Smoke indirect at 250°F until bark is set and internal temp reaches 170–175°F. Wrap tightly and continue cooking until probe tender at 200–203°F. 3️⃣ Rest & Slice Rest wrapped at least 3 hours in a cooler or warm oven. Slice against the grain. 4️⃣ Chimichurri Blister shishito and sweet peppers over high heat until charred and softened. Rough chop, then blend with remaining chimichurri ingredients until loose and spoonable. 5️⃣ Pickled Red Onions Combine onion, vinegar, warm water, sugar, and salt. Shake and let sit 30 minutes. 6️⃣ Guacamole Mash avocados with lime juice and salt. Trust me, these won’t make it to leftovers! 😋 Mini Shepherd’s Pie Puff Pastries (Makes 12) Ingredients: Meat Filling: * 1 lb ground lamb or beef * Olive oil * 1 ½ cups diced carrots * 1 onion, diced * 1 cup frozen peas * 1 ½ cups diced mushrooms * 4 cloves garlic, minced * 1 tbsp tomato paste * ¼ cup red wine * 1 ¼ cup beef broth * 2 tbsp Worcestershire sauce * 1 tbsp beef seasoning (or salt, pepper, paprika) * 1 tbsp garlic herb rub (or thyme, rosemary, parsley, oregano) * 1 ½ tbsp brown gravy Mashed Potatoes: * 3 russet potatoes, peeled and chopped * ¾ cup grated cheddar * 4 cloves garlic, chopped * 3 tbsp heavy cream or half & half * 1 egg, whipped * 2 tbsp butter * ½ tsp salt, ¼ tsp pepper, ¼ tsp nutmeg Pastry: * 1 box puff pastry sheets * Olive oil spray * 4”–5” cookie cutter * Muffin tin Instructions 1. Prepare Filling: Heat a large pan over medium-high heat. Sauté onions, carrots, and mushrooms in olive oil. Add ground meat and cook until browned. Stir in garlic, tomato paste, and red wine. Simmer, then add beef broth, Worcestershire, seasonings, and gravy. Cook for 15 minutes. 2. Make Mashed Potatoes: Boil potatoes until tender. Drain and mash with butter, cream, egg, and garlic. Mix in cheese, salt, pepper, and nutmeg. 3. Assemble & Bake: Preheat oven or kamado to 375°F. Cut 4.5” circles from puff pastry. Spray muffin tin and press pastry into wells. Fill with meat mixture, then top with mashed potatoes (use an ice cream scoop for uniform portions). Bake for 25–30 minutes until golden brown. 4. Serve hot with a Guinness. Nous ne reviendrons pas ici sur l’ouverture nécessaire aux vins de Rayas ou Des Tours, je suis partisan d’une ouverture longue et une aération lente. • Une fois à table, nous avons pu goûter deux fois ce vin sur deux plats différents, ce qui est toujours intéressant dans l’idée d’un accord met/vin. • 🍷Je pense avoir déjà dit et écrit beaucoup de louanges sur les vins de Reynaud pour me permettre d’être tout à fait honnête. J’ai été assez décontenancé par cette bouteille. Le nez 👃 est un peu confus, la fraise écrasée typique n’est pas présente, ni ce côté infusé que l’on peu y trouver. Nous sommes ici sur quelque chose de puissant, de chaud, un peu alcooleux, plus sur le cuir mêlé à la garrigue et au poivre. La bouche 👅me plaît nettement plus avec des fruits rouges confiturés plus présents, des arômes de pruneaux très plaisants, et une finale épicée et très garrigue. Cela allait justement à merveille avec le dessert au chocolat 🔥! • Ce Fonsalette 05 m’a cependant laissé un peu en questionnement. Était-ce la bouteille ? Le millésime ? Je n’était pas dans le style pur de chez Reynaud et une certaine finesse m’a manqué.   2. GRANGE DES PÈRES, 2006, rouge 🍷(English 🇬🇧in comment 👇below). • • La semaine dernière, nous avons improvisé un déjeuner entre amis afin de déjouer le couvre-feu parisien. Bien nous en a pris puisque nous nous sommes bien marrés et avons débouché de belles choses 😉. Merci @cihanista_wine pour m’avoir permis de découvrir le fameux domaine de La Grange des Pères 🙏! • • 🍷 Nez 👃 sur le pruneau, le cuir, la figue séchée, poivre, eucalyptus, quelle puissance ! À l’aération je lui trouve des notes d’encre de réglisse et de gibier. La bouche 👅 est une véritable explosion !!!! C’est immense ! Énorme ! On y retrouve les arômes de pruneaux, de fruits noirs, figue, la maturité est parfaite, c’est rond, avec des tanins souples, un côté cèdre, mûres, poivre blanc, avec une finale minérale (cailloux) lui apportant une grande finesse.   3. CÔTE RÔTIE « Cordeloux » 2015, Pierre Bénetière 🔥🍷! (English 🇬🇧in comment 👇below). • • Peut-être ne connaissez-vous pas -encore 😉- le vigneron Pierre Bénetière ? Il faut dire que sa production est extrêmement confidentielle et de plus en plus recherchée. De très belles parcelles, dont une minuscule dans la Côte Brune, enclavée au milieu de la Turque dont il tire une cuvée « Dolium » (500 cols 😱). Cette cuvée « Cordeloux » provient de la parcelle éponyme, la première que Pierre et sa femme ont achetée à la fin des années 80 (environ 5000 bouteilles). Un Condrieu vient s’ajouter à la gamme, mais n’ayant jamais vu ou goûté cette cuvée je ne peux vous en parler ... • • Vous l’aurez compris, c’est assez compliqué de mettre la main sur une bouteille du Domaine Bénetière, les prix s’étant envolés ces dernières années, les visites chez Pierre étant difficiles à organiser, ce dernier montrant un caractère ... particulier. Pour exemple 2014 ne lui plaisait pas, il a réduit au minimum sa production. Cette grande exigence mêlée d’un fort caractère et d’un amour de ses terroirs ne peuvent que promettre un grand vin non 🤔? • • 🍷Ce 2015 montre encore un très grande jeunesse dans sa robe avec une grande intensité et des reflets violacés. Le nez 👃 est d’abord très concentré, la temps en carafe n’ayant pas été suffisant au début. Des notes de cerises 🍒 noires, de mûres, poivre, graphite, et un léger côté cuir après un temps d’aération. Le vin n’est étonnamment pas marqué par l’élevage pourtant long (18 à 22 mois, mais 15% de fûts neufs seulement). La bouche 👅est droite, fine, élégante. Une noble Syrah. Les tannins sont encore un peu serrés, mais la complexité est énorme. On y retrouve l’aromatique présente au nez avec en plus des arômes de tabac qui me plaisent énormément.
