Heating the Milk: * Pour the goat or cow * non-pasteurised milk into a large pot. * Heat the milk gently to 38°/40°C (104°F). Use a thermometer to ensure it does not exceed this temperature. 2. Adding Rennet: * Sprinkle 1/4 teaspoon of rennet over the milk. * Mix well to ensure the rennet is evenly distributed. * Cover the pot and let it rest for one hour. 3. Cutting the Curd: * After one hour, you should have a block of cheese (curd). * Using a long knife, cut the curd horizontally and vertically, then use a large spoon to cut it into cubes the size of normal ice cubes. * Let it rest for 5 minutes. * Gently shake the curds. * Repeat the shaking process every 5 minutes, five times in total. 4. Draining the Whey: * Remove the curds from the whey and place them into a sieve. * Transfer the curds into another sieve covered with a towel. * Place a plate on top of the curds and add around 10 to 15kg of weight on top. * Let it sit for 1 hour to press out the remaining whey. 5. Boiling the Whey: * While the curds are being pressed, boil the whey to extract ricotta * Cover and keep the whey warm. 6. Cooking the Cheese: * After one hour, uncover the pressed cheese and cut it into 12 equal slices. * Slide the slices back into the warm whey, which should be maintained at 80°C and let it cook for 1 hour.❌if one of the cheeses pops out and floats on top this means that the milk is contaminated u should throw it all❌❌❌❌ * After 1 hour, remove the cheese slices from the whey. * Squeeze and fold each slice. * Place the folded slices into a Tupperware, supporting each other. * Sprinkle the cheese with 8 tsp of kosher salt (for 12 cheeses). * Cover the cheese with whey water and let it rest for 2 hours. 8. Storage: * After 2 hours, remove the cheese from the whey water. * Keep the halloumi in the fridge for up to 10 days. Ingredients: 🐠 1.5 lb whole white fish 🧅2 tbsp olive oil 🧅3–4 large onions, thinly sliced 🧅1 tsp cumin powder 🧅1/2 tsp coriander powder 🧅1/2 tsp cinnamon powder 🧅1 1/2 tsp salt & black pepper 🧅1 cinnamon stick 🧅2 bay (laurier) leaves 🍚2 cups basmati rice, rinsed 🍚11/2tsp cumin powder 🍚11/2tsp coriander powder 🍚1/2 tsp cinnamon powder 🍚1 1/2 tsp salt 🍚1/2 tsp black pepper •1 tbsp corn starch •Toasted pine nuts •Lemon slices (to place around the platter) •Lemon rind or zest (for sprinkling on top) Instructions •Preheat oven to (200°C). •Season the whole fish (inside and out) with salt and pepper. •Place on a baking tray and roast for 20–25 minutes, until the fish is cooked through and flakes easily. •Once cool enough to handle:Carefully remove the head, tail, and skin, and set them aside for the broth.Gently flake the meat into large chunks and set aside •In a large pot, heat olive oil over medium heat. •Add the sliced onions and sauté until deeply browned and caramelized, stirring often (this gives Sayadieh its rich flavor and color). •Add 1 cup of water, then using a hand blender,blend the onions into a rough purée. •Return to pot, and add: Roasted fish head, tail, and skin,4 cups water,Cinnamon stick and bay leaves, spices (cumin, coriander, cinnamon, salt, black pepper), Simmer gently for 20–30 minutes. •Pour the broth through a colander or fine mesh strainer into a bowl, pressing well to extract maximum flavor.Discard solids. •In a pot, combine the drained rice with all the rice spices (cumin, coriander, cinnamon, salt, pepper).Pour in 4 cups of the strained broth •Bring to a boil, then cover and reduce to low. Cook for 15–20 minutes, or until broth is fully absorbed. •Meanwhile prepare the sauce •1 cup of broth and 1 tbsp corn starch dissolved in a bit of broth, boil until thickened set aside •Transfer the rice to a large serving platter. •Top with chunks of roasted fish. •Garnish with toasted pine nuts,lemon slices all around the platter and a sprinkle of lemon zest over the top. #sayyadieh #lebanesecuisine #lebaneserecipes #traditionallebanesecuisine #lebanesefood #صيادية #صيادية_سمك
