  2. Two surgeries within 12 days to remove melanoma from my arm. A surprise diagnosis while going in for a routine check-up at my dermatologist just a couple months ago. To say I was disappointed and frustrated is a massive understatement. After almost a year off from running, and just as I was building fitness for Cocodona 250, I was hit with the reality stick. Training was adjusted; intensity was decreased and I questioned if I should race at all. Obviously I chose to race and clung to ONE goal: Stay grateful. Every 8 weeks for the next two years, I have to go in for a cancer screening. I realize this is the first time most of my family and friends are learning about this- I kept it quiet on one hand because I wanted to maintain my peace; lean into trusting God alone; and contemplate the truth that this isn’t that bad. I’ve had more than enough friends and family battle cancer in the most REAL way- and for my situation- well, I feel fortunate. Life is beautiful and hard; and I’m leaning into the beauty of the strength WE ALL HAVE as humans. I just finished a 253 mile race, not because I was the fittest or fastest out there (goodness quite the contrary) but because GRATITUDE is strength; and I GOT TO push my body even when it wasn’t 100% ready to race. I took a hold of an opportunity because life is short and I want to live it fully no matter if I’m racing to the podium or simply leaning toward what’s possible. I’m not sure how to express my gratitude for the kindness, encouragement and support this past week- thank you from the bottom of my heart. I love this community. Keep Choosing Strong.💪 #choosestrong #trailrunning #cocodona250 #melanomaawareness #yellowrunner

Save this recipe and share it with a friend - this recipe takes 20 minutes and is a 10/10! RECIPE: Ingredients     •    1 onion, chopped     •    4 scallions, chopped     •    1-inch piece of ginger, peeled and chopped (or 2 frozen ginger cubes)     •    ½ cup chopped kimchi     •    Dash of coconut aminos     •    Dash of toasted sesame oil     •    1 bag frozen mushrooms (Trader Joe’s)     •    1 can light coconut milk     •    1 container miso broth (Trader Joe’s)     •    1 bag spinach     •    1 bag vegetable gyoza (Trader Joe’s) Instructions     1.    In a large pot, sauté onion, scallions, and ginger in a little oil until golden brown, about 5 minutes.     2.    Add a dash of coconut aminos and toasted sesame oil and cook for another minute.     3.    Stir in the chopped kimchi and let it cook for 2–3 minutes to deepen the flavor.     4.    Add the frozen mushrooms and cook until softened.     5.    Pour in the miso broth and coconut milk, then bring to a gentle simmer.     6.    Add the gyoza and let them simmer in the broth until soft and heated through, about 10 minutes.     7.    Stir in the spinach and let it wilt into the soup.     8.    Taste and adjust seasoning as needed with a little more aminos or sesame oil. To serve: top with additional chopped scallions and a drizzle of chili crunch oil.
