The star of the show is of course the melty chocolate inside—I used @hukitchen SIMPLE dark chocolate, which is made with simple ingredients and is perfectly indulgent. It’s my go-to chocolate brand! #hupartner Makes 12 muffins Streusel 1/2 cup gluten-free flour 3 tb white sugar 1/3 cup brown sugar 6 tb butter or vegan butter 1 tsp cinnamon 1/2 tsp ginger Muffins 1 1/4 cups ripe bananas (2 large bananas), mashed 2 cups gluten-free flour 2 tsp baking soda 2 tsp cinnamon 1 tsp ginger 1/2 tsp nutmeg 1/2 tsp kosher salt 1 cup brown sugar or coconut sugar 1/2 cup avocado oil 3 eggs, room temp 1/2 cup sour cream 1/3 cup molasses 2 tb vanilla extract 2 @hukitchen SIMPLE chocolate bars, chopped Preheat oven to 350F. First, prepare the streusel. In a small bowl, mix together all of the streusel ingredients. Use your fingers to incorporate until combined, into a crumbly streusel mixture. Set aside. Mash the bananas very well and set aside. Next, get out a large bowl. Mixed together all of the dry ingredients (flour through sugars). Add in the mashed bananas and wet ingredients (oil through vanilla). Mix to incorporate but don’t over mix. Fold in chopped chocolate. Divide batter evenly among a lined 12-muffin tin. Scoop streusel topping on each one. Bake for 15-17 minutes or until a toothpick comes out clean. Let cool and enjoy! #muffinsrecipe #gingerbread #gingerbreadmuffins #chocolaterecipes
