  3. EASY LOW FAT 3 INGREDIENT YOGURT CAKE 80 cals a slice! Ingredients: 1½ cups 5% Greek yogurt 4 eggs 5 tbs tapioca flour (or corn starch) optional topping ideas: Fresh Fruit, Honey, Maple Syrup, Powdered Sugar, Shaved Chocolate, Lemon Zest, Orange Zest instructions *PLEASE NOTE: this recipe is a no sugar added cake. It has a custard like texture. If you want to add sugar to the cake that’s cool too, just add 1/4 cup to the yogurt in the beginning and mix it in before adding in the eggs. You can also sub in Vanilla Greek Yogurt for some sweetness. Preheat your oven to 350° F. Spray your 6 inch round spring form pan with oil and then line it with parchment paper. I like to scrunch my paper and then it is more pliable to shape to the pan. To a large bowl add the yogurt and then whisk in your eggs. Once that batter is silky smooth, next sift in your cornstarch (or tapioca flour) and whisk until incorporated and the batter is smooth. Transfer the batter to your prepped pan and bake for 1 hour or until the top is puffed up and is golden brown. Remove from oven and within a minute the top will deflate – that’s what we want. Let it cool for 30 minutes and then transfer the cake to the fridge. Don’t remove it from the pan during this process. Cool in the fridge for at least 2 hours to set. Remove the cake from the fridge 15 minutes prior to serving. Optional and Recommended: Top with some berries, honey, powdered sugar, shaved chocolate or fruit compote since there is no sugar added to the recipe. #sugarfreerecipes #lowcaloriemeals #lowcaloriedessert #yogurtcake #easyrecipes

Views and thoughts along the 80km track from Hamelin Bay to Howard Park🌴🌊⛰️ My prep obviously wasn't ideal for this due to injury but I had no pain going into the event so I was really excited to participate. The furthest I had ran prior to last weekend was 45km and in the last 12 months I had only clocked up a total of 480kms. I knew this wasn't ideal but I was still in a really good mindset going in injury free😁 The course is broken up into 5 legs with a checkpoint of water and food after each leg. ▪︎Leg 1 began in the dark. This leg was actually beautiful as it was nice and cool, and I was so distracted by the whole event I almost didn't even feel like I was running. This is also the shortest leg at 11.5km so it was a really nice start. ▪︎Leg 2 was around 14-16km (not entirely sure). This one was through the forest and it was probably my favourite. I felt like I enjoyed every second. ▪︎Leg 3 was around 20km. The scenery was insane but I had heard how hard this one was so I was mentally preparing for the challenge. This is where the sand started. Running/ walking along long stretches of sandy beach. I was looking for wetter/hard sand but there was none- nothing but soft deep sand- FAB!!🙃 ▪︎Leg 4 was also around 20km. We had just started and I saw that the trail lead us back down onto a beach. I thought the sand running was over but I was very wrong. But once again the views were incredible, I was in awe. Bush trail along the coast. We hit the 50km mark and I was surprised how good I felt all day after hitting that distance. I had never ran that far before and I felt really excited. It started to get really hot. I regretted not eating proper food at checkpoint 3 as I was so sick of gels. But it was too late now- gels it was🤢 (Continued in comments)
