Curried Tofu Burritos 🌯 Macros💪for one burrito- makes 6 458 cals - 26P - 55C - 16F ✨INGREDIENTS✨ 2 400g blocks of extra firm tofu 2 tbsp soy milk 1/2 tsp turmeric 2 tsp curry powder 1 tsp onion powder 1/4 tsp garlic powder 1/4 cup nutritional yeast 1/2 tsp black salt 1/4 tsp pepper 4 potatoes (440g) 3 bell peppers 1 red onion 1/2 tsp smoked paprika Salt & pepper 6 tortillas (10 inch) 1/2 cup vegan cheese 😋 First rip your tofu into chunks and add to a bowl with your seasonings. Mix to combine and spread over a baking sheet. 🔪 Chop up your veggies, chopping your potatoes into small cubes so they will cook faster, then add them to a separate baking sheet. Sprinkle with smoked paprika, salt and pepper 🔥 Bake at 400f. The tofu will need about 25 minutes and the veggies & potatoes about 40-45 minutes. 😋 Divide your ingredients into 6 tortillas, wrap them in parchment paper, then pop into the fridge or freezer until you’re ready to enjoy! 🔥 TO REHEAT🔥 I like to store them in the fridge - they will last up to 5 days. Just pop in the air fryer at 350 for 12 minutes - or bake at 400 for 15 minutes. You can also microwave for 4 minutes flipping halfway through. If you’re freezing the burritos it’s best to let them thaw. Take them out the night before or the morning of if you’re eating them later in the day. Then follow the above instructions! FALL HARVEST BOWLS 🍂 with a maple tahini dressing Macros per serve 💪 makes 3 servings 634 cals - 35P - 75C - 26F 🔖 Make sure to save this for later! ✨INGREDIENTS✨ 1 400g block extra firm pressed tofu 2 tbsp plant milk (not shown in video) 2 tsp cornstarch 1/2 tsp garlic powder 1/4 tsp nutmeg 1/4 tsp cinnamon 1 tsp Rosemary 1 tsp thyme Salt & pepper 1 medium sweet potato 1 lb Brussels sprouts Salt & pepper 2.25 cups cooked quinoa (0.75 cups each) 3 tbsp tahini 1.5 tbsp dijon 1 tbsp maple syrup 1 tbsp lemon juice 1/4 tsp garlic powder 2-3 tbsp water to thin Salt & pepper to taste 3 tbsp dried cranberries 3 tbsp slivered almonds 😋 First cube your tofu then add to a bowl with plant milk, cornstarch and spices. Toss to coat. 🔪 Slice up your veggies and add them to a baking sheet with your tofu. Season the veggies with salt & pepper. 🔥 Bake at 425 for 30-35 min tossing halfway through. 🥄 In the meantime make your dressing by mixing together all of the ingredients 😍Divide up your ingredients with 0.75 cup of quinoa per bowl. Drizzle on your dressing and top with dried cranberries and slivered almonds. 🙌 Store in the fridge for up to 4 days!
