  3. I have always been a huge fan of Porky Whites award-winning sausages. I was so excited to receive this amazing care pack, thank you so much @porkywhites! These Thai inspired sausages with turmeric and coconut are soO flavoursome! For a delicious and quick snack, I used these to fill my potstickers with a touch of @louisas_honey’s fabulous ginger honey for sweetness. The dipping sauce was given a little heat with @rishrightuk’s gorgeous, fresh Qin-chilli sauce. TURMERIC AND COCONUT PORK SAUSAGE POTSTICKERS Makes about 22 dumplings For the filling: 270g Porky White turmeric and coconut sausages (4 sausages) 30g spring onions, finely sliced Good pinch of salt 1/4 tsp white pepper 1/2 tsp Louisa’s ginger honey 2 tsp cornflour 1 pack of wheat dumpling/gyoza wrappers For frying: Vegetable oil for frying 1/3-1/2 cup of cold water Non-stick frying pan with lid. I used my HexClad @hexclad_europe 20cm pan. Dipping sauce: 1 tbsp mature Chinese black vinegar (either Chinkiang or Shanxi) 1 tbsp light soy sauce 1/2 to 1 tsp Rishright fresh Qin-chilli sauce (according to your taste) 1/2 tsp Louisa’s ginger honey 1. Remove the skin of the sausages. Place in a bowl and use a fork to mash into a paste. 2. Add this to the finely sliced spring onions plus all the other filling ingredients and mix well. 3. Place a teaspoon of the sausage mixture in a dumpling wrapper. Wrap the dumplings (see the video). Or, you can just fold the dumplings in half and seal without completing the pleats. 4. Add a small amount of oil into a non-stick frying pan, add the dumplings (but don’t over crowd the pan) and cook on a medium heat for about 1 minute. 5. When the bottom has a little colour, add enough cold water to cover just above the base of the dumplings and immediately place the lid on. Turn the heat down slightly and let this steam for about four minutes or until all the water has evaporated. 6. Remove the lid and cook for further 15 seconds (or until the base is golden and crispy). 7. Serve with the dipping sauce. THE ONLY HONEY CAKE YOU NEED THIS ROSH HASHANA MEDOVIK (HONEY LAYERED CAKE) NOTHING BUT HAPPINESS AND SUCCESS - HAPPY NEW YEAR TO YOU LEGENDS - 150g unsalted butter//margarine - 250g granulated sugar - 160g honey - 3 large eggs - 1.5 tsp bi carbonate soda - 580g all-purpose flour - 750ml heavy//double//parve cream - 600g sour cream// soya yoghurt - 225g icing sugar - 2.5 tsp vanilla extract 1. Set a large bowl over a small saucepan filled a quarter of boiling water. Melt butter, sugar and honey - stir till smooth 2. Once melted, remove from heat and whisk in eggs 3. Fold in bi carbonate soda and flour. Mix until it forms a dough - cover in clingfilm and let rest for 30 mins in fridge 4. Weight out dough and divide by 12 (You’re aiming for 12 layers of cakes) 5. Roll out each one till around 2-3mm thick and bake @ 180 degrees Celsius for 5 minutes 6. Once finished, use a cake tine to cut a silhouette around the baked dough, use fingers to remove the excess dough - DON’T THROW THIS AWAY!!!! 7. Repeat this process until each one is baked In the meantime, stir icing sugar and vanilla extract into sour cream until incorporated. Wish the double cream till it creates stiff peaks and fold into the sour cream mixture until incorporated 8. Once all layers have been baked, lay one on a flat plate and top with a big dollop (heaped tbsp) of the cream mixture ontop and spread out evenly till the edges 9. Repeat this process and finish with cream at the top. Run a small spatula around the edge of the cake to add rest of cream mixture covering it entirely 10. Using a food processor, blitz the leftover baked bits until it turns into a fine crumb 11. Sieve blitz crumbs ontop of the cake and using your hands to palm it into the side of the cake 12. Jamaican Style Oxtail Mac & Cheese Recipe 🇯🇲🔥 SAVE & share if you’d try this one ❤️ ✨Ingredients (Oxtail): • 1 kg oxtail (cut pieces) • 2 tbsp all-purpose seasoning • 1 tsp black pepper • 1 tbsp minced garlic • 2 tbsp green seasoning • 1 tbsp Worcestershire sauce • 1 tbsp browning • ½ red, ½ green & ½ yellow bell pepper (diced) • 1 small onion (diced) • 1 tbsp brown sugar • 1 tbsp oil • 3–4 cups hot water (as needed while cooking) 🧀 Ingredients (Mac & Cheese): • 400g macaroni (I use spirali) • 3 tbsp butter • 3 tbsp flour • 3 cups whole milk • 1 cup grated cheddar • 1 cup grated mozzarella • ½ cup grated red Leicester (for colour & flavour) • 1 tsp all-purpose seasoning • ½ tsp salt • ½ tsp Aromat 🔥 Method: 1️⃣ Season oxtail with all-purpose, black pepper, garlic, green seasoning, Worcestershire sauce, browning, bell peppers & onion. Marinate overnight if possible. 2️⃣ Heat oil in a pot, caramelise brown sugar, then add oxtail and mix. Cover and let it release its natural juices. 3️⃣ Add hot water from the same bowl you seasoned in, pour over oxtail and slow-cook 3 hours (or pressure cook ~45 mins) until tender and falling off the bone. Once cool, debone it. 4️⃣ For the mac & cheese: melt butter, whisk in flour to form a roux, then slowly add milk while whisking till smooth. 5️⃣ Season with all-purpose, salt & Aromat, then remove from heat and stir in all three cheeses until creamy. 6️⃣ Fold in the cooked macaroni. 7️⃣ In an ovenproof dish, layer shredded oxtail at the bottom, add a sprinkle of cheese, top with creamy mac, then finish with more cheese. 8️⃣ Bake at 180°C (350°F) for 20–25 mins, then broil 5 mins for that crust 👌🏽 Would you try this combo? 👀

  2. Currently sat on the train back from my usual gig in London and i cant help but feel overwhelmed with emotion drafting this post up. This is the first quiet me-time I’ve had in 48hrs to process the whirlwind of this event. How special it was, amongst the ADVENTURE I’ve been on the past few months with the most amazing team. I love the experiences, the memories, the shared moments. 💗 I love being lucky and informed enough to use the very best produce and to know exactly where and WHO has caught/grown/supplied the ingredients. I love the stories behind it! Tell me why you do this!! I wanna hear it all! The good/the bad/the ugly/the nitty gritty/the tears/the joy/everything!! I love chinwagging! I love late night family meals chewin the fat, putting the world to right & crying belly laughing into the food. I love shoving something in your faces saying “here eat this part, it’s the best, trust me”, and seeing your reactions when you do!
