Roasted cauliflower gets blended with silken tofu, miso, soy, coconut milk and stock for a broth that’s ridiculously silky. Ingredients
1 small cauliflower
Olive oil spray
300g silken tofu
Drizzle oil
2 tbsp white miso paste
1 tbsp soy sauce
400ml vegetable stock
400ml coconut milk
2 cloves garlic
1 thumb-sized piece ginger
3 x 100g packs ramen noodles
Chilli oil and coriander, to finish Before you start
Preheat the oven to 200°C fan | Line a large baking tray | Blender | Saucepan How to Make It
1️⃣ Prep | Slice the cauliflower into florets | Dice the garlic and ginger | Slice spring onions
2️⃣ Roast the cauliflower | Spread florets on the tray | Drizzle with olive oil + a pinch of salt | Roast for 20 mins until golden
3️⃣ Make the creamy broth | Reserve some cauliflower for garnish | Add the rest to a blender with silken tofu, miso, soy sauce, coconut milk + veg stock | Blend until completely smooth | Heat a drizzle of oil in a saucepan, fry the garlic + ginger for 2 mins | Pour in the blended broth and bring to a gentle simmer (add a splash of water if needed to loosen)
4️⃣ Cook the noodles | Cook ramen noodles according to packet instructions
5️⃣ Assemble | Ladle noodles and broth into bowls | Top with crispy cauliflower | Finish with chilli oil + coriander

Save this for your next effortless dinner, and follow along for more One Pan Protein meals 🍽️ Serves 4 | 24g protein per portion Ingredients Drizzle of oil or plant-based butter
500g oyster mushrooms
1 leek
2 cloves garlic
1 tbsp white miso paste
200g orzo
150g silken tofu, blitzed until smooth
1 x 570g jar chickpeas (rinsed + drained)
550ml vegetable stock
1 tbsp soy sauce
40g nutritional yeast
Juice of ½ lemon
Chives, to garnish Before you start: Large frying pan or wide saucepan | Blender | Ladle | Wooden spoon How to Make It 1️⃣ Prep – Finely slice the leek. Tear the mushrooms. Finely chop the garlic. Rinse + drain the chickpeas. Finely slice the chives. Blitz the silken tofu until smooth.
2️⃣ Cook the base – Heat a drizzle of oil (or plant-based butter) in a wide pan over medium heat. Fry mushrooms until golden, then remove. Add another drizzle of oil and cook the leeks for 5–6 mins until soft and slightly caramelised. Add garlic + miso and fry for 1 min. Add orzo and toast for 2 mins.
3️⃣ Build the orzotto – Add the blitzed tofu, chickpeas, stock, soy sauce and nooch. Stir well and simmer for 10 mins, stirring regularly so it doesn’t stick (add a splash of water if needed). Stir in half the mushrooms.
4️⃣ Finish & serve – Stir in lemon juice, taste and adjust seasoning. Spoon into bowls and top with the remaining mushrooms, chives, and a drizzle of extra virgin olive oil.

  3. I don’t really know how to start with this only to say, I bloody did it! Over the moon with my time too, I finished the race in 3:28 and 51 seconds!! Running a marathon always seemed impossible to me, I’ve been put off driving 26.2 miles in the past let alone running it!! But, if you want something bad enough and are prepared to work hard then ANYTHING is achievable. As I write this my legs are a bit sore, the big toenail on my left foot looks like it’s days are numbered and a small blister on my left foot shouldn’t hurt that much BUT I wouldn’t change a thing from such an amazing day! I need to thank a few people starting with my family, my wife @spoons1984 for encouraging me all the way, being there on the day and the first person I called when I got my phone. All of my children for putting up with me not only disappearing fishing days on end but to then add a 4 time a week running schedule into the mix as well, love you all immensely. Thanks to @tomdove11 @adsreed Daryl, Rosie, Scott, Vicky, Ash, Charlotte and of course @connor.spooner.10 for getting me there on time!   3. My dad has continued smiling and cracking the odd bad joke 😂 despite the challenges these past few weeks have thrown his way. He truly is some man, and I can only hope to be half the man he is. I’m not ready for stories guys, but my mum and dad have given me permission to share this with you. Wednesday, we received a call from the hospital regarding my dad’s treatment after their multi-disciplinary team meeting. They confirmed his tumour as grade 4 and, sadly, explained that there is no cure only treatments to fight for more time. Without treatment, the prognosis was not great, and as you can imagine, our hearts are aching with sadness considering he has only been experiencing his symptoms these past 6 weeks. It wasn’t the news we had hoped for, but it’s the reality we’re facing. We were told he’d of never of known until it reached this point, the available treatment options were explored and what they may look like for my dad and us as a family. The consultant emphasised that it ultimately comes down to whether my dad feels able to take on the fight, which will be by no means easy. To that, my dad responded, “Course I am, let’s give it a go, let’s fight it for the grandkids.” 😭❤️ So, that’s where we are. On Monday, he will begin his first battle with surgery to safely remove as much of the tumour as possible. My incredibly brave mum and our family will be by his side every step of the way, and we will positively go into this, fighting right beside him. We know there will be dark times ahead, but we also believe this will bring us closer together as a family, strengthen, and remind us of the power of love and resilience. We will take each day as it comes and cherish the moments we have. The good, the bad, whatever it may be. Please keep rooting for my dad! Spare a little 🙏 for Monday! Thankyou to all that have jumped into action to support us. We got this! 💪🏼❤️

  3. We’re so excited to share that we are about to launch into the wildest of adventures together. We’re expecting a little girl due later this year! We’re so happy, terrified and so grateful. After a lot of careful research we chose to grow our family with the help of an amazing UK based organisation @brillbeginnings who have supported us on this extraordinary journey every step of the way. They guided us through the process of embryo creation via egg donation at the @londoneggbank and it was with their kind, patient and detailed support that we met Nicki our amazing surrogate. An Instagram post is never going to fully convey the importance of what @nickilapworth is doing for us. Even to simply say ‘life changing’ isn’t enough. There hasn’t been a day go by that we aren’t in awe of her spirit, tenacity, empathy, resilience, humour and heart. We will be forever grateful and she will forever be our little girl’s ‘fairy godmother’! We are also so so grateful to our anonymous egg donor out there In the world. It’s overwhelming to think about the extraordinary thing they have done for us! It’s taken us a few years to get here. We say that to acknowledge that everyone’s journey to becoming parents is different and can be difficult so we salute all going through IVF or needing to find their own individual ways to start the family they so want. This little one is already so deeply loved, appreciated and quite frankly… has taken her sweet time to arrive 😂 If you need us, we’ll be getting in some prep sleep x
