  2. Long Covid Awareness Day - Me Before & After Covid At the end of 2021 our lives changed forever, I say “our” because it has not only impacted my life but it has also impacted my family’s lives. When we tested positive we thought we’d just have 2 weeks of isolation but I kept testing positive for 4 weeks. After 6 weeks I was diagnosed with post covid condition, long covid. From that day I had endless doctors and hospital appointments, I have been seen by just about all consultants from head to toe, I’ve had endless tests and all results have come back as “normal” but in hindsight I now realise that this is because the doctors don’t actually know what they are looking for. The Covid virus is new and during the pandemic they did so much research, they developed vaccines and we got daily medical updates during the daily updates that we all watched. But since then, it feels like we have been forgotten. For everyone else life seems to have gone back to normal and Covid is a distant memory! But for people, like me, we live with it day in and day out! Covid/Long Covid triggered health conditions, conditions that do not have any cure. I now live with fibromyalgia which has triggered chronic fatigue. I spend on average 16 hours a day in bed. I can only be up for a maximum of 5 hours in the morning and around 3 hours in the evening. I live with chronic pain. Everyday I wake up wondering not will I be in pain today but how much pain will I be in today. Covid also triggered functional neurological disorder which stops my brain and body working together. This causes isolated tremors, problems walking, speech problems, brain fog, blackouts, and also chronic fatigue and chronic pain. I am now unable to leave the house independently and I can no longer drive due to “blackouts” I took my pre-Covid life for granted, I took being able to leave the house independently, jumping in my car and driving with my music full blast (something I loved!) and because I am 98% of the time housebound I have had to find something to focus on. 1. It’s 2026 can we all agree that vegans don’t have protein deficiencies yet? 🌱 It’s one of the most common misconceptions I still hear, so here’s a breakdown of the protein sources in this dish: • Lentil Pasta: 17g protein per 100g • Peas: 5.7g protein per 100g •Tempeh: 22g protein per 100g •Pumpkin seeds: 24g protein per 100g •Sunflower seeds: 20g protein per 100g •Silken tofu: 7g protein per 100g •Cashews: 18g protein per 100g •Nutritional yeast: 47g protein per 100g That’s 8 plant based protein sources, totalling around 145g of protein in the full recipe and almost 50g per serving! Pasta sauce: 50g wild garlic 50g toasted cashews 40g nutritional yeast 20g rocket 250g peas 1 garlic clove 100g silken tofu Salt and pepper (to taste) ½ lemon juice 25ml olive oil 1 vegetable stock cube 100ml pasta water This pasta sauce was inspired by and adapted from @bosh.tv rocket, pea and pistachio pesto linguine - a recipe from their new cookbook ‘More Plants’ which I highly recommend for anyone looking to eat more plant protein and fibre! Tempeh: 1 block tempeh 1/4 cup pumpkin & sunflower seeds 1 tbsp olive oil 1 tsp maple syrup 1 tbsp soy sauce 1 tbsp nutritional yeast 1 tsp smoked paprika 1 tsp garlic granules Pinch of salt & pepper Method: 1. Prep and blend all the pasta sauce ingredients, adding pasta water once the pasta is cooked 2. Cook the pasta (I used a pack of @allplants plants 215g red lentil pasta for 3 portions but you could use about 280g if you wanted to serve 4) 3. Chop, season and air fry the tempeh & seeds at 200°C for 8-10 mins 4. Stir the sauce through the pasta and heat gently 5. Plate everything up and enjoy! vegan | vegan protein | vegan lifestyle | healthy vegan | vegan recipes | vegan lunch | lunch ideas | lunch recipes | plant based | plants | plant based diet | vegetables | pasta | nuts | whole foods | whole food diet | vegan cooking | vegan protein | vegan inspo | vegan food | what I eat in a day | lunch ideas | lunch prep #vegan #veganfood #veganlifestyle #veganlife #veganmealprep

500g oyster mushrooms
1 leek
2 cloves garlic
1 tbsp white miso paste
200g orzo
150g silken tofu, blitzed until smooth
1 x 570g jar chickpeas (rinsed + drained)
550ml vegetable stock
1 tbsp soy sauce
40g nutritional yeast
Juice of ½ lemon
Chives, to garnish Before you start: Large frying pan or wide saucepan | Blender | Ladle | Wooden spoon How to Make It 1️⃣ Prep – Finely slice the leek. Tear the mushrooms. Finely chop the garlic. Rinse + drain the chickpeas. Finely slice the chives. Blitz the silken tofu until smooth.
2️⃣ Cook the base – Heat a drizzle of oil (or plant-based butter) in a wide pan over medium heat. Fry mushrooms until golden, then remove. Add another drizzle of oil and cook the leeks for 5–6 mins until soft and slightly caramelised. Add garlic + miso and fry for 1 min. Add orzo and toast for 2 mins.
3️⃣ Build the orzotto – Add the blitzed tofu, chickpeas, stock, soy sauce and nooch. Stir well and simmer for 10 mins, stirring regularly so it doesn’t stick (add a splash of water if needed). Stir in half the mushrooms.
