It’s 2026 can we all agree that vegans don’t have protein deficiencies yet? 🌱 It’s one of the most common misconceptions I still hear, so here’s a breakdown of the protein sources in this dish: • Lentil Pasta: 17g protein per 100g • Peas: 5.7g protein per 100g •Tempeh: 22g protein per 100g •Pumpkin seeds: 24g protein per 100g •Sunflower seeds: 20g protein per 100g •Silken tofu: 7g protein per 100g •Cashews: 18g protein per 100g •Nutritional yeast: 47g protein per 100g That’s 8 plant based protein sources, totalling around 145g of protein in the full recipe and almost 50g per serving! Pasta sauce: 50g wild garlic 50g toasted cashews 40g nutritional yeast 20g rocket 250g peas 1 garlic clove 100g silken tofu Salt and pepper (to taste) ½ lemon juice 25ml olive oil 1 vegetable stock cube 100ml pasta water This pasta sauce was inspired by and adapted from @bosh.tv rocket, pea and pistachio pesto linguine - a recipe from their new cookbook ‘More Plants’ which I highly recommend for anyone looking to eat more plant protein and fibre! Tempeh: 1 block tempeh 1/4 cup pumpkin & sunflower seeds 1 tbsp olive oil 1 tsp maple syrup 1 tbsp soy sauce 1 tbsp nutritional yeast 1 tsp smoked paprika 1 tsp garlic granules Pinch of salt & pepper Method: 1. Prep and blend all the pasta sauce ingredients, adding pasta water once the pasta is cooked 2. Cook the pasta (I used a pack of @allplants plants 215g red lentil pasta for 3 portions but you could use about 280g if you wanted to serve 4) 3. Chop, season and air fry the tempeh & seeds at 200°C for 8-10 mins 4. Stir the sauce through the pasta and heat gently 5. We always start the day with water dense fruits & herbs As I was ending my cycle I like to have a blend of herbs such as red clover, burdock root, calendula & raspberry leaf.She has holy basil, chamomile/calendula exclusively during day time. There are a few elements that I like to include into her nutrition: Seamoss Hemp Baobab Seamoss acts as a multi vital- minerals which is essential for her bone growth & thyroid function As she struggles with skin issues I keep it gluten free for the time being, some legumes also do trigger it so I have learnt to use hemp as one the complete proteins that I give her instead of resorting to foods such as chickpeas. Baobab is an ancient fruit which promotes a healthy immune system as well as being a source of natural calcium. During the summer if we are somewhere where the weather is hot I resort to maintaining a high raw lifestyle including water dense fruits such as melons (including cucumbers) and seasonal greens which I include inside stews & soups as she isn’t the biggest fan of having them on their own yet. Meals that we had during this holiday included: Seamoss blueberry & banana smoothie bowls topped with quinoa pops, hempseeds & berries Seamoss banana baobab, date & hemp smoothies Gazpacho cold soup Squash based purées, topped with mushrooms or served with GF alkaline grains Okra & Peruvian potato stews Grilled veggie platters including asparagus, courgette, red pepper & onion Pasta with roasted bell pepper & watercress sauce including @electricplantkitchen sesame seed parmesan Fat rich salads including walnuts, avocado & tahini. I like to have a higher consumption of these during the end of my cycle Cacao teff waffles infused with seamoss, date syrup & baobab. Another plant medicine I like to use at the end of my cycle to promote blood flow & hormonal balance Home made ice lollies: watermelon, apple & raspberry, mango etc

If you want something lovely to give to someone who’s more of a savoury snacks lover than chocolate fiend, then this lovely Lentil Mushroom pate is just the thing. Make sure to gift it with some fancy crackers and a bottle of something refreshing for the ultimate love gift (whether its’ for your Valentine, or just for your bestie Galentine!) It looks fancy, but is secretly super easy to make! Comment PATE for the full recipe with extra instructions and US imperial conversions. You’ll need: 🍄250g Fresh Mushrooms 🫘200g pre-cooked puy or green lentils (about 100g dried) 🍄40g dried mushrooms (such as porcini) 🫒2 tbps olive oil 🧂1 tsp salt and pepper (or to taste) 🧄3 cloves garlic 🍷3 tbsp marsala (or white wine) 🌿2 tbsp rosemary For the fancy top: 🌿2 sprigs rosemary 150g plant-based butter How to: 1.If your lentils aren’t already cooked, cook them in broth until they’re soft (about 20 mins) 2. Pour ½ cup boiling water over the dried mushrooms. 3. Chop the fresh mushrooms and mince the garlic. 4. Get a large frying pan nice and hot and add the mushrooms in dry to the pan. They’ll roast and start to release their juices. 5. Once the mushrooms get juicy and roasted, sprinkle over salt, then add the garlic, the herbs, and the olive oil. 6. Cook a little longer, then add the marsala wine. Cook the wine down so the mushrooms are juicy but not wet. 7. Drain the lentils and add to a blender along with the soaked mushrooms in their water and the fresh mushrooms. 8. Blend until smooth. Taste test and add more salt/pepper if needed. 9. To serve, scoop into small mason/kilner jars and top with melted vegan butter. Put a sprig of rosemary on top and put in the fridge to set. 10. Serve with cracker or on hot toast! X Louise-Claire
