  1. 🥃It’s day 2 of -20° weather 🥶 and I’m dreaming of a tropical vacation. What better time to talk about rum finished whisky? 🌺 🏝Rum casks are often whiskey casks first. Usually charred barrels that previously held bourbon or Tennessee whiskey are sent to rum producers in the Caribbean. In warmer climates, spirits mature faster, and barrels maturing rum can be used repeatedly. Eventually the barrels do lose their oak flavor, so whisky makers need to be careful choosing their rum casks, or create their own rum maturation facility like Glenfiddich. Not all rum is created equal, but typically a rum cask will fuse whisky with tropical fruit, coconut, and caramel flavors.   2. 🥃One word today: Peat. 🗣Lingo: “Peat freaks” are people that think smokier is better. “Peat Monsters” are whiskies that have high peat PPM. For the novice: Peat = smoky flavor. Phenols give peat its smoky flavor and can be measured in the malt (barley). However, not all of the phenols end up in the final spirit, so the PPM just gives you an idea of how smokey a dram MIGHT be.
