This baby can handle beans, peas, lentils, corn, barley, rye, quinoa, etc… It’s a multipurpose grinder, and it’s so easy to use. . Experiment #1! 50g freshly milled rye berries from @grandtetonfamily 50g freshly milled spelt berries from @grandtetonfamily 400g Ap flour (Kirkland brand) 360g water Autolyse for 1 hour Add 100g starter Fermentolyse for 45 min Add salt 10g salt with 10g water 76% hydration loaf Experiment #2 100g freshly milled rye berries 400g Ap flour (Kirkland brand) 370g water 1 hour autolyse Add 100g starter 45min Fermentolyse Add 10g salt with 10g water 78% hydration loaf Even though whole grains tend to be VERY thirsty, they contain less gluten than refined white flour, which is crucial for creating a dough with structure and allowing it to properly rise! You will have to experiment with autolyse periods and adjust hydration to achieve the texture you desir
