One Pot Peri Peri Chicken & Rice😍 using some @favouritfoods herbs & spices! Serves 4 3 large chicken breasts, diced 200g long grain rice 2 tbsp tomato purée 1 red onion, diced 2 peppers, diced (any colour) I used red and green 700ml chicken or vegetable stock Favourit seasoning: 2-3 tbls Piri Piri seasoning (add as much or as little, it can be spicy) 3 tsp garlic granules 3 tsp smoked paprika Salt and black peppe for seasoning 100g grated cheese Peri Peri mayonnaise, to drizzle Favourit parsley (optional, to garnish) Method: Heat a little oil in a large, deep frying pan or casserole dish over a medium heat. Add the diced chicken and season with the Peri Peri seasoning, garlic seasoning, smoked paprika, salt and black pepper. Cook for 5–6 minutes until lightly browned. Stir in the diced onion and peppers and cook for another 3–4 minutes until they begin to soften. Add the tomato purée and cook for 1 minute, stirring well. Stir in the uncooked washed rice, then pour over the stock. Mix everything together. Bring to a gentle simmer, cover with a lid and cook for 18–20 minutes, stirring once or twice, until the rice is tender and the stock has been absorbed. Sprinkle the grated cheese over the top, replace the lid for 2–3 minutes until melted. Finish with a generous drizzle of Peri Peri mayonnaise and a sprinkle of fresh parsley, if using. Top tip: This is the perfect hot-weather dinner—once everything is in the pan, you can leave it to gently cook away while you get on with your day. For the chicken filling 3 chicken breasts Peppers 1 onion, diced Favourit herbs and spices: 1 tsp Italian herb seasoning 1 tsp Cajun seasoning 2 tsp smoked paprika 2 tsp garlic powder 1 tsp onion powder Salt and black pepper, to taste 1 tbsp oil For the enchilada sauce 1 carton/passata (about 400–500 g) 1 tsp smoked paprika ½ tsp garlic powder ½ tsp onion powder 1 tsp sugar Salt, to taste To assemble 4 large tortilla wraps Grated cheese Method: Season chicken with: Italian herb seasoning, Cajun seasoning, Smoked paprika, Garlic powder, Onion powder, Salt and pepper Add oil to mixture, cook the chicken in pan until browned and fully cooked. Add the vegetables Add the diced peppers and onions to the pan. Cook until softened, about 5–7 minutes. Shred the chicken. 3. Make the enchilada sauce In a saucepan, combine the tomato sauce/passata with: Smoked paprika, Garlic powder? Onion powder, Sugar, Salt. Simmer for 5–10 minutes until slightly thickened. Assemble the enchiladas Spread a thin layer of enchilada sauce in the bottom of a baking dish. Fill each tortilla with: Chicken, pepper, and onion mixture.A handful of cheese. A spoonful of enchilada sauce Roll tightly and place seam-side down in the dish. Bake Pour the remaining enchilada sauce over the wraps. Top generously with the remaining cheese. Bake at 200°C (180°C fan) for 20–25 minutes, until bubbling and golden!
