  2. . GARLIC BUTTER CHICKEN AND ZUCCHINI RISOTTO⁠ ⁠ Risotto is one of those dishes which should be quick, simple and delicious, but is actually just very easy to get wrong. Making a risotto involves cooking risotto rice low and slow. The starches of the rice release to give you a creamy, satisfying dish (without having to add cream!). It usually takes at least 45 minutes and a bunch of patience to make. ⁠ ⁠ My tips for a good risotto – ⁠ Don’t allow the onions to brown.⁠ Heat the rice before adding the wine.⁠ Keep the stock on a rolling boil.⁠ Stir, stir, stir to help release the starch and create the creamy texture.⁠ ⁠ For the Chicken⁠ 1 kg chicken breasts or thighs⁠ 2 Tbsp extra virgin olive oil⁠ 2 Tbsp Italian seasoning⁠ 1 Tbsp Dijon mustard⁠ 2 tsp honey⁠ Salt and black pepper⁠ ⁠ For the risotto⁠ 4 Tbsp salted butter⁠ 2 shallots, chopped⁠ 4 cloves garlic, minced⁠ 1/3 cup dry white wine⁠ 1 1/2 cups chicken stock⁠ 3 Tbsp fresh thyme leaves⁠ 2 cups carnaroli or arborio rice⁠ 2 zucchini, thinly sliced⁠ Chilli flakes⁠ ⁠ In a Ziploc bag, mix together the chicken and marinade ingredients. Refrigerate overnight or for at least one hours. ⁠ Preheat oven to 200C. Place the chicken in a casserole dish and bake uncovered for 35 to 40 minutes until golden and cooked through.⁠ While the chicken is in the oven, melt 2 tablespoons of butter in a skillet over medium heat. Add the shallots and then the garlic and thyme and cook, stirring occasionally until softened.⁠ Add the rice and continue stirring until the rice starts to toast. Add the wine and cook until reduced.⁠ Bring the stock to a boil in a separate saucepan and reduce heat to a simmer. Keep simmering while you cook. This step is important. Slowly add the stock a cup at a time and allow the rice to absorb it before adding more.⁠ Add the zucchini with the last cup of stock and keep cooking until the rice is perfectly al dente and then turn off the heat. ⁠ Add the rest of the butter and chili flakes and stir through.⁠ Top with the garlic butter chicken and fresh herbs.⁠

  3. . CHICKEN KEBABS AND QUINOA SALAD with zhoug yoghurt dressing Meet Zhoug! Also known as Zhug and pronounced “Zoog”, this is my latest condiment obsession. This spicy, green chili coriander sauce hails from Yemen, but has become wildly popular in Israel and Middle Eastern cuisine to give dishes a huge burst of flavour. I always have a jar in the fridge to serve with tacos, wraps and shawarma’s, drizzled over veggies or salads. It can also be used as a marinade, swirled into hummus or spooned over avo toast. 4 Ryan Boon chicken kebabs 1/4 cup dried fig, chopped 1 Tbsp red wine vinegar 2 tsp Dijon mustard 1/2 cup rosa tomatoes 1 small brinjal, cubed 1 Tbsp olive oil 2 tsp maple syrup 2 tsp za’atar 2 cups cooked quinoa Handful broccolini, blanched 1/2 cup mint leaves 1/2 cup rocket leaves 1/4 cup pistachio nuts, deshelled and roasted 1 cup double cream yoghurt 1/4 cup Zhoug Combine the red wine vinegar and Dijon mustard together. Add the dried figs and set aside top soften. Combine the yoghurt and zhough and set aside. Preheat the oven to 200C and line a large baking tray with parchment paper. Toss the tomatoes and brinjal in the olive oil, maple syrup and za’atar and spread out on the baking tray. Roast for 30 minutes until the brinjal is golden and the tomatoes are blistered. Oven roast or braai the kebabs until golden and cooked through. Mix the quinoa, broccolini and mint leaves with the soaked figs and toss to combine. Top with the roast tomatoes and brinjal, rocket and toasted pistachios. Serve with the kebabs and dollops of zhough yoghurt dressing. ZHOUG 1 garlic clove 2 cups fresh coriander 1 whole jalapeno chilli, sliced 1 tsp cumin seeds, toasted and ground 2 Tbsp lemon juice 1/4 olive oil 1/2 tsp salt Blitz the garlic, coriander, chilli, cumin and salt in a food processor until the herbs are finely chopped. Add the lemon juice and olive oil and pulse to combine. Store in a sealed jar for up to a week.
