Not only did we hit 10K that day, but we hit 10.2K the following day ✨ I have been growing the Freebees account since I started working there as an account manager in November 2019 (I also happened to be 18 weeks pregnant and 2 weeks away from being put onto permanent bedrest, AND cvddd was unknowingly a mere 4 months away, it's a miracle Vicky and Ingrid put up with me!).   1. Peach, cherry & Prosecco Gammon 1. Pre-cook the gammon Prepare your gammon as per the package instructions say. Boiling for 30 mins per 500g of meat! Add cloves, a bay leaf, celery and carrots to your water while you boil. 2. Make the peach, cherry & sparkling glaze In a pot, combine: • 500 ml Prosecco • 150 g peach or apricot jam • 100 g brown sugar • Juice of half a lemon • 5 peaches, sliced, 1 punnet of cherries - depiped Heat everything together until it boils, then keep it simmering until the mixture thickens and the fruit softens — around 30 minutes. 4. Prepare the cooked gammon for glazing Take off the tough outer skin but keep a thin layer of fat. Score the fat in a diamond pattern and press cloves or peppercorns into some of the cuts. 5. Glaze and Roast Pour the reduced peach, cherry and bubbly glaze. Cook at 180°C for 30–40 minutes, brushing on a bit more glaze every 10 minutes. 6. Serve Slice thinly and enjoy with your festive meal, the next day on sarmies or in the morning with eggs— it’s a guaranteed crowd-pleaser!

  3. ⸻ 🥧 Chicken, Spinach & Feta Phyllo Pie Ingredients • ½ cup ricotta • 1 cup milk of choice • 1 tsp butter • 1 tbsp flour • 1 onion, chopped • 1 carrot, cubed or grated • 1 celery stalk, finely chopped • 1 tsp garlic • 1 cup shredded cooked chicken • 1 bag baby spinach • 3 rounds feta cheese, crumbled • ¼ tsp salt • ¼ tsp pepper • ¼ tsp dried oregano • ¼ tsp paprika • 9 sheets phyllo pastry, defrosted • 1 egg (for egg wash) • Sesame seeds (to top) ⸻ Instructions 1. Preheat oven to 180°C (350°F). 2. In a large bowl, place the shredded chicken and set aside. 3. Sauté the chopped onion, carrot, and celery in a pan until the onion becomes translucent. 4. Add the garlic, salt, pepper, oregano, and paprika. Cook for another 3 minutes. 5. Add butter and flour to the pan to form a roux. Cook for 3–4 minutes. 6. Slowly pour in the milk, stirring continuously until the sauce thickens and coats the back of a spoon. 7. Stir in the ricotta and shredded chicken. Mix well. 8. Add the baby spinach and cook until just wilted. 9. Pour the mixture into a baking dish, and crumble the feta rounds on top. 10. Roughly place the phyllo pastry sheets on top to form rustic “roses” (don’t worry about perfection). 11. Brush the pastry with beaten egg and sprinkle over sesame seeds. 12. Bake for about 25 minutes, or until the phyllo is golden brown and crispy. Yummo

  1. This is a souped-up version of one of my best-loved curry recipes that’s great for little palates. I always make double and freeze it in individual portions, so it’s easy to heat up for a quick after-school lunch. For an easy, wholesome chicken curry, just blitz it and stir in some baby spinach for added greens. The base is tasty, creamy and my boys are none the wiser to all the veggies. #Wooliessoupseason INGREDIENTS 1 red onion, sliced into thin wedges Chilli, Chickpea & Butternut Soup Mix
Indian Korma Curry Paste 50 g  3 cups hot water
Reduced Fat Coconut Milk 400 g
¼ cup flaked almonds, toasted
½ cup fresh coriander leaves
Crushed Wheat Sourdough Bread, to serve
 METHOD 1. Preheat the oven to 240°C.  2. Place the onion, soup mix and curry paste in a Dutch oven and toss to coat. 3. Pour in the water, cover with the lid and cook for 20 to 30 minutes until the vegetables have softened.  4. Add the coconut milk, gently mix and cook open for a further 10 minutes.  5. Blitz until smooth, if preferred.
6. Serve topped with toasted almonds, fresh coriander and crushed wheat sourdough bread for dunking.

Making a risotto involves cooking risotto rice low and slow. The starches of the rice release to give you a creamy, satisfying dish (without having to add cream!). It usually takes at least 45 minutes and a bunch of patience to make. ⁠ ⁠ My tips for a good risotto – ⁠ Don’t allow the onions to brown.⁠ Heat the rice before adding the wine.⁠ Keep the stock on a rolling boil.⁠ Stir, stir, stir to help release the starch and create the creamy texture.⁠ ⁠ For the Chicken⁠ 1 kg chicken breasts or thighs⁠ 2 Tbsp extra virgin olive oil⁠ 2 Tbsp Italian seasoning⁠ 1 Tbsp Dijon mustard⁠ 2 tsp honey⁠ Salt and black pepper⁠ ⁠ For the risotto⁠ 4 Tbsp salted butter⁠ 2 shallots, chopped⁠ 4 cloves garlic, minced⁠ 1/3 cup dry white wine⁠ 1 1/2 cups chicken stock⁠ 3 Tbsp fresh thyme leaves⁠ 2 cups carnaroli or arborio rice⁠ 2 zucchini, thinly sliced⁠ Chilli flakes⁠ ⁠ In a Ziploc bag, mix together the chicken and marinade ingredients. Refrigerate overnight or for at least one hours. ⁠ Preheat oven to 200C. Place the chicken in a casserole dish and bake uncovered for 35 to 40 minutes until golden and cooked through.⁠ While the chicken is in the oven, melt 2 tablespoons of butter in a skillet over medium heat. Add the shallots and then the garlic and thyme and cook, stirring occasionally until softened.⁠ Add the rice and continue stirring until the rice starts to toast. Add the wine and cook until reduced.⁠ Bring the stock to a boil in a separate saucepan and reduce heat to a simmer. Keep simmering while you cook. This step is important. Slowly add the stock a cup at a time and allow the rice to absorb it before adding more.⁠ Add the zucchini with the last cup of stock and keep cooking until the rice is perfectly al dente and then turn off the heat. ⁠ Add the rest of the butter and chili flakes and stir through.⁠ Top with the garlic butter chicken and fresh herbs.⁠

  3. . CHICKEN KEBABS AND QUINOA SALAD with zhoug yoghurt dressing Meet Zhoug! Also known as Zhug and pronounced “Zoog”, this is my latest condiment obsession. This spicy, green chili coriander sauce hails from Yemen, but has become wildly popular in Israel and Middle Eastern cuisine to give dishes a huge burst of flavour. I always have a jar in the fridge to serve with tacos, wraps and shawarma’s, drizzled over veggies or salads. It can also be used as a marinade, swirled into hummus or spooned over avo toast. 4 Ryan Boon chicken kebabs 1/4 cup dried fig, chopped 1 Tbsp red wine vinegar 2 tsp Dijon mustard 1/2 cup rosa tomatoes 1 small brinjal, cubed 1 Tbsp olive oil 2 tsp maple syrup 2 tsp za’atar 2 cups cooked quinoa Handful broccolini, blanched 1/2 cup mint leaves 1/2 cup rocket leaves 1/4 cup pistachio nuts, deshelled and roasted 1 cup double cream yoghurt 1/4 cup Zhoug Combine the red wine vinegar and Dijon mustard together. Add the dried figs and set aside top soften. Combine the yoghurt and zhough and set aside. Preheat the oven to 200C and line a large baking tray with parchment paper. Toss the tomatoes and brinjal in the olive oil, maple syrup and za’atar and spread out on the baking tray. Roast for 30 minutes until the brinjal is golden and the tomatoes are blistered. Oven roast or braai the kebabs until golden and cooked through. Mix the quinoa, broccolini and mint leaves with the soaked figs and toss to combine. Top with the roast tomatoes and brinjal, rocket and toasted pistachios. Serve with the kebabs and dollops of zhough yoghurt dressing. ZHOUG 1 garlic clove 2 cups fresh coriander 1 whole jalapeno chilli, sliced 1 tsp cumin seeds, toasted and ground 2 Tbsp lemon juice 1/4 olive oil 1/2 tsp salt Blitz the garlic, coriander, chilli, cumin and salt in a food processor until the herbs are finely chopped. Add the lemon juice and olive oil and pulse to combine. Store in a sealed jar for up to a week.
