  1. “This is my kids’ absolute fave! You can never go wrong with chicken and corn – it’s such a classic combo. It’s a nice one to keep in a freezer stash for loadshedding or a busy day. 2. A recipe to save, make and absolutely love! Another easy, quick to make winning recipe! I love how versatile these saucy prawns are to serve – either on a bed of pasta, salad, savoury rice, baguette, the list goes on and on really. I thoroughly enjoyed making them in my new @sagenwolf (available on @yuppiechef ) Titanium Series Non-Stick Chef’s Pan - It’s nice and wide, providing ample space so you don’t have to worry about smashing anything, it comes with a glass lid (yip, winning!) and can easily go from stovetop to oven! Here’s the recipe – I hope you try it and love it as much as I do! Saucy Prawns Recipe credit: @sadiesbubbleofyum Ingredients: For the prawns: 1 box of butterflied and deveined prawns, washed (head and shell on) 80g butter 1 tablespoon crushed garlic 1 tablespoon fish and prawn wet masala (you could use a dry spice if you prefer) I used @thehousewivespantry red fish Masala 1 teaspoon green masala or finely chopped green chillie (adjust according to preference) Salt and pepper to taste For the sauce: 100g butter 1 heaped teaspoon crushed garlic 1 tablespoon fish and prawn wet masala (you could use a dry spice if you prefer) 250ml cream 1 tablespoon mayonnaise Salt and pepper to taste 3/4 teaspoon dried Italian herbs Fresh coriander, roughly chopped (to garnish) Method: In a pan on medium heat, melt the butter then add the prawns and all the spices and cook for just a few minutes (until they’ve just turned pink), stirring to ensure the prawns are well coated. In a separate saucepan, make the sauce by melting the butter then adding the remaining ingredients aside from the coriander. Stir to combine. Add the sauce to the prawns, stir to ensure the prawns are well coated, cook for a further 2-3 minutes, remove from the heat, garnish with coriander and serve. Enjoy! #prawn #prawnrecipe #recipe #madefromscratch #prawns #recipeoftheday #recipeshare #sagenwolf #yuppiechef

  1. Get ready to impress with this easy, yet stunning, choux pastry recipe - just in time for another @sa_masterchef episode this Saturday at 20:30 on S3!   Visit your local @picknpay to grab your ingredients, and show off your baking skills with these delicious choux buns.   Choux pastry: * 155 ml whole milk * 78 ml water * 113 g unsalted butter * 10 g granulated sugar * ½ tsp kosher salt * 90 g all-purpose flour * 30 g cake flour * 4–5 large eggs (room temp)   Chocolate craquelin: * 127 g unsalted butter (softened) * 100 g brown sugar * 90 g all-purpose flour * 21 g cocoa powder * Pinch of salt   Dark chocolate mousse filling: * 230 g chocolate (chopped) * 57 g unsalted butter * 120 ml heavy cream * 25 g granulated sugar * 4 egg whites * 2 egg yolks * 1 Tbsp cocoa powder * 3 Tbsp hot water * 2 tsp vanilla * Pinch of salt   Chocolate Craquelin: Beat softened butter, brown sugar, cocoa, and salt until creamy. Stir in flour until combined. Roll out the dough between wax paper and freeze for 30 minutes. Cut into circles for topping the choux. Pastry: Preheat oven to 220°C. In a saucepan, bring milk, water, butter, sugar, and salt to a boil. Remove from heat, stir in flours, then cook for 2 minutes until the dough pulls away from the pan. Cool slightly, then add eggs gradually until the dough is shiny and drops slowly. Pipe onto a lined baking sheet. Bake Choux: Place craquelin circles on the piped dough. Bake at 220°C for 5 minutes, then reduce to 200°C and bake for 20-30 minutes. Cool and poke holes in the bottoms. Dark Chocolate Mousse: Stir cocoa into ¼ cup boiling water and let bloom for 5 minutes. Melt chocolate and butter, then mix in the bloomed cocoa, vanilla, and egg yolks. Whip egg whites to soft peaks, gradually adding sugar to medium-stiff peaks. Whip cream to soft peaks. Fold the whipped egg whites and cream into the chocolate mixture until smooth. Assemble: Pipe mousse into cooled choux buns. Dust with cocoa powder and garnish with gold leaf, if desired. #PnP #PicknPayFresh #PicknPayXMasterChef
