Luckily, the @Vitamix Gourmet Smart Prep Kitchen system makes it so much easier with their food processor attachment, and it’s on sale for the holidays! [AD] I love this food processor because it fits so seamlessly on my Vitamix and stores easily, too! It cuts down on my cooking prep time drastically, leaving me more time to actually enjoy the food I’m making, like this Vegan French Onion Soup! Makes 4 servings INGREDIENTS 3 tbsp butter 4 medium size onions, peeled and thinly sliced 4 cloves of garlic, minced 1/2 tbsp sugar 6 cups of low-sodium vegetable stock 1 tbsp vegan Worcestershire 3/4 tsp dried thyme 2 bay leaves 3/4 cup dry white wine OR more vegetable stock 1 1/2 tsp salt 3/4 tsp ground black pepper 4 slices crusty bread 1 cup vegan cheese shreds Use the Vitamix Food Processor ‘thin slice’ attachment to slice 4 large yellow onions. Add sliced onions to a large, heavy- bottomed pot with minced garlic, sugar and butter. Saute over medium heat for about 30-40 minutes, stirring every few minutes, until the onions are golden and caramelized. If the onion is sticking to the bottom, deglaze the pan every few minutes with a splash of white wine or veggie stock. Once onions have caramelized, add in the remaining soup ingredients. Bring soup to a low boil. Reduce heat to low-medium and simmer for 1 hour. Once there are 10 minutes left in cooking, slice bread. Sprinkle 1/4 cup vegan cheese over each slice bread, and broil on high for 3-4 minutes until the cheese is completely melted (this happens quickly, so watch carefully!). Preheat oven to 350F.  2. Cream together vegan butter and brown sugar until light and fluffy. Stir in milk and vanilla. Add in the flour, baking powder, baking soda and salt and stir to make a dough. Place in the refrigerator.  3. Add apple filling ingredients to a small pot on the stove on medium and cook, stirring frequently, about 10 minutes until soft. Add half to @Vitamix blender bowl cup and blend until smooth. Add the remaining unblended pieces and stir together.  4. Meanwhile, make the pastry: stir together flour and sugar. Cut in the butter to make a crumbly mixture. Add the water and stir to make a dough. Roll out the pastry on a clean surface and use a glass or 3 inch round cookie cutter to make “pie crusts”.  5. Scoop 3 tbsp of cookie dough and roll into a ball. Use a measuring spoon to make a divot in the center. Add a spoonful of pie filling and place a pie crust on top. Repeat with remaining dough.  6. Bake for 10 minutes, then increase oven to 375 F and bake 4 minutes until golden brown.

  1. What’s the difference between hemp, chia and flax? Hemp, chia and flax seeds all contain omega 3 fatty acids…but each one stands out for a different reason. 🌱 Flax: 1 tablespoon of flax contains 1.6 grams of omega 3 fatty acids…your entire daily requirement. It also contains 1.9 grams of fibre, including gel-forming soluble fibre which is why it makes a great egg replacement. There are small amounts of iron and zinc but what sets flax apart from the other two are the lignans, special polyphenols that when converted by your gut microbiome have weak phytoestrogenic activity. ⚠️ Flax should always be ground so we can access its nutrition as it’s very hard exterior is difficult to breakdown. 🌱 Chia: the highest omega 3 content with 1.9 grams per tablespoon. Chia contains higher fibre – including gelling soluble fibre – at 3.7 grams with slightly higher amounts of zinc and iron and protein. For me, when you want soluble fibre, go for chia seeds. Eat them hydrated – soaked in overnight oats, chia puddings, chia fresca, chia jam or yogurt. 🌱 Hemp: the lowest omega 3 content with 0.8 grams per tablespoon but it packs a big bunch in terms of minerals and protein. 1 tablespoon of hemp contains 1.3 mg of iron, 1 mg of zinc as well as a third of your daily manganese as well as 3.3 grams of protein. When you want minerals and protein, go for hemp. They blend up perfectly to make hemp milk, in smoothies or you can replace ½ cup of flour in most cookie and quick bread recipes with hemp to boost omega 3, protein and minerals. All 3 of these omega rich seeds are nutritious. I have all three in my kitchen, but I have to admit that I use hemp hearts most often because they lack the soluble fibre and therefore blend seamlessly into plant milks, smoothies and baking.
