I loveee jerk chicken and this alternative really hit the spot 😋💛 As some of you know, I love the creative element of creating these recipes but as a busy bee I mostly cook quick meals and save the extra creative recipes for occasions. However this recipe is sooo good and really hit me culturally that I will be adding it to my rotation! The boneless version only takes 15 mins to prep and is by far my favourite of the 2 options! 🌱 6 king oyster mushrooms 🌱 1 tbsp nutritional yeast 🌱 1 tsp sage 🌱 1 tbsp all purpose seasoning 🌱 1 tsp allspice 🌱 1-2 tsp jerk marinade 🌱 3 rice paper sheet Coating Seasoning 🌱 1-2 tsp jerk seasoning 🌱 ½ tsp all purpose 🌱 ½ tsp paprika 🌱 1 tbsp oil Servings: It takes 150g which is about 2 shrooms for each piece. So this recipe makes about 3 pieces of mock meat. Boil the mushrooms in the sage, all purpose seasoning, 1-2 tsp jerk marinade and nutritional yeast for about 10 mins. Then drain the water and pat try with a kitchen towel. Assemble as shown in the video but layer it up in the center for the drumsticks to make it thick. For the boneless piece, layer it up to the desired thickness. Airfry/roast for 15-20 min at 190oC. Tips: I recommend making your own jerk marinade if you can’t take a lot of spice. Ingredients (serves 2) For the broth 1 tbsp sesame oil 4 spring onions, chopped 1 tbsp chopped coriander stalks 2 cloves garlic, minced 1 inch ginger, minced 1.5 tbsp white miso paste 1 tbsp light soy sauce 1 vegan chicken stock cube 6 dried shittake mushrooms 400-600ml water (depending on how brothy you like it) 1/2 tin coconut milk Juice of 1 lime For the tofu 200g extra firm tofu 1 tbsp dark soy sauce 1 tbsp sesame oil 1.5 tsp agave To serve 200g dry noodles, cooked to package instructions Pak choi Fresh coriander Extra fresh lime Chilli oil 1. Preheat oven or airfryer to 180c. 2. Start by prepping your tofu, grate on the thick setting of a grated and place on a baking sheet with the remaining ingredients. 3. Bake or airfry for 12-18 mins (longer if you’re using an oven, shorter if you’re airfrying), turning regularly as this will catch quickly. 4. Heat the sesame oil in a small saucepan on medium heat before adding the spring onions coriander stalks, garlic and ginger and frying off for 5 minutes. 5. Add the remaining ingredients to the pan (aside from the lime) along with however much water you like, reduce to low heat and leave to simmer for 10 minutes. 6. Once this has finished simmering, add the lime juice. 7. Split the broth between two bowls, add your noodles, veggies of choice and garnish with the crispy tofu. #veganramen #shreddedtofu #fallrecipes

Episode 1 of 10 budget recipes to feed the family for under £10 & these ‘honey’ ginger tofu meatballs come in at just £7.06 or £1.41 per portion 💰 Perfect to prep ahead (freezer friendly) or for a midweek dinner… Serves 5 For the ‘meatballs’ 1.5 tbsp chia Seeds + 2 tbsp water 480g medium firm tofu, drained and water removed 4 spring onions, chopped 2.5 tbsp sriracha 1.5 inch ginger, grated 2 cloves garlic, minced 1.5 tbsp soy sauce Pinch salt and pepper 3-5 tbsp gram flour 1 tbsp corn flour 1 lime For the glaze 4 tbsp agave 1.5 inch ginger 3 tbsp soy sauce To serve 300g basmati rice 250g green beans Leave the chia seeds and water together to mix and rehydrate. Ensure your tofu has been pressed and as much water removed as possible. Crumble this finely into a bowl. Zest the lime and add this into the bowl (reserve the juice for later) along with the remaining ingredients. Start with adding 3 tbsp of gram flour and add more if needed to make the mixture come together. Season with salt and pepper. Form into meatballs with wet hands, this mix will make 25 larger balls or 30 smaller ones. Place onto a plate or baking sheet and refrigerate to firm up. At this point you can freeze the meatballs if you like. Whilst they are refrigerating, cook your rice to package instructions. To cook the meatballs, either drizzle with oil and airfry (190c for approximately 15 minutes, turning regularly) or preheat a non stick frying pan on medium heat with a drizzle of oil. When hot, add them into the oil. Cook for around 10 minutes, turning carefully to ensure all sides are golden. When cooked, add the ginger into the pan, along with the agave, soy sauce and the juice from the lime from earlier. Stir everything together and mix carefully to cover the meatballs. In a separate pan, cook the green beans. Trim the ends and add to the pan with a little oil, season generously with salt and pepper, add minced garlic if desired. Sautee for 5 minutes. Split the rice between 5 bowls, top with your meatballs and green meals.
