I’m please to tell you that this gorgeous Peperomia argyreia, also know as the watermelon Peperomia is back to full health after I accidentally over watered her in August. I will do an updated post next week to show you how she is getting on. Please see my care tips below: . ☀️ LIGHT: These beauties love bright indirect light. Be sure to rotate the plant once or twice a week for even and rounded growth. If you are south facing, place it back around 2-3 foot as their leaves are prone to burning. . 💧 WATER: Water once the soil is practically dry. When you do water it give it a good soak making sure the water passes through 2 or 3 time. Be sure the pot has sufficient drainage holes to allow excess water to seep through before returning to your decorative pot. I use filtered water as tap water causes browning on their leaves. . 🌧HUMIDITY: I try to keep the room at about 55-65% humidity as I have lots of tropical plants in the same room. I also give mine a good fine misting every other day in the summer to keep their leaves nice and cool. . 👨‍🍳 FOOD: I use a few drops of liquid fertiliser in a litre of water once a month during growing season and don’t fertilise at all in winter. . 🍁 SOIL: She loves a well draining soil mix.   1. In our new series Dirty Food, Cooking Without Chemicals @cheftomhunt takes our favourite seasonal Irish farm vegetables and turnups the heat. Swede pretending to be a ham! Christmas is only around the corner and now is the time to support our local organic vegetable growers as much as we can. Full recipe below, and in Tom Hunts book Eating for Pleasure, People and Planet. Swede might be an unlikely candidate for a centrepiece, but roasted whole, glazed with mustard and sugar, and studded with cloves, it transforms into something deeply savoury, smoky-sweet and satisfyingly ham-like. The result is a gloriously bronzed root that carves beautifully, whether served hot from the oven or cold in thick slice the next day, tucked into sourdough with extra mustard and a handful of peppery watercress Enjoy! Ingredients - serves 4-6 • 1 swede (about 800g-1kg) • Glug of virgin or light olive oil • Sea salt • 60g muscovado sugar • 40g wholegrain mustard (or to taste) • 8-10 cloves To serve • Thick slices of sourdough • Extra mustard • Watercress • Sauerkraut (optional) Method Preheat oven to 180C. Wash the swede well, scrubbing especially around the root end. Trim any rough patches and cut out any soily nooks or blemishes with a small knife. Rub the swede lightly with olive oil and a pinch of salt, then wrap it in unbleached parchment and place it in a small ovenproof dish. Roast for 1 hour Remove from the oven and unwrap. Using a sharp knife, score the surface of the swede in a shallow criss-cross pattern, cutting about 5mm deep, as you would a ham. Stud the intersections with cloves, drizzle with a little more oil, and return to the oven covered for another hour, or until golden, soft and slightly shrunken. Meanwhile, mix the sugar and mustard together in a small bowl. Lower the oven to 120C. Brush the hot swede all over with the mustard glaze and return to the oven for 20-30 minutes, until sticky, burnished and aromatic. Carve at the table into thick slices or let cool and slice thinly into sandwiches with sourdough, extra mustard and watercress. A spoonful of sauerkraut works beautifully too. Storage: Keeps well in the fridge for up to 4 days.

  2. Upside-Down Leek Tart * Save the recipe * This dish makes @britishleeks the star of the show. Delicious served for a big family meal, as canapes for a dinner party or even cold the next day for lunch. Caramelized in olive oil and honey and topped with cottage cheese for freshness, the woodgrain effect of the leeks creates the prettiest topping. Makes 3 leek tarts (Serves 6-12) Ingredients 2 tbsp olive oil 1 tbsp honey or sweetener of choice (e.g. sugar, maple syrup) 1/4 lemon 24 sage leaves, optional 3 medium leeks 150g cottage cheese 500g store-bought puff pastry or homemade rough puff pastry 1 egg, optional Splash milk, optional To make the tart: Place a piece of parchment onto a large baking sheet. Halve the leeks lengthwise and wash gently, keeping them intact. Arrange them snugly, cut side down, on parchment paper into three pairs, alternating green and white ends for balance. Each pair of leek halves will become a separate tart. Draw around each set of leeks with a pencil and put the leeks to one side. Within the stencil lines, drizzle olive oil and honey or your chosen sweetener and then sprinkle generously with sea salt and black pepper. Place the sage leaves into the stencils along with an even sprinkle of lemon zest if using. Lay the leek halves back on top and spread the cottage cheese over them evenly. Finally season generously with more oil, sweetener, salt and pepper. Next roll out the pastry on a lightly floured surface. Cut the pastry into three rectangles and roll each out at least four centimeters longer and wider than each set of leeks, then carefully lay each onto a set of leeks. Optionally brush them with egg wash made from one egg beaten with a splash of milk. Bake in a preheated oven (at 190C Fan) for 35 minutes or until the pastry has risen and is dark golden brown. Allow to rest for five minutes then lay a chopping board on top and flip upside down. Carefully remove the parchment and enjoy with an optional squeeze of lemon juice and blob of extra cottage cheese. What have you tried to cook upside down?

In 2018 The EU banned the use of neonicotinoid chemicals, yet are still manufactured in Europe and shipped to countries that currently have no ban on them. These chemicals persist in the soil and a recent study showed that they are still prevalent in Irish soils even though they have not been used here since 2018. We’ve been farming this land for 20 years and it’s safe to say, there isn’t a drop here. 🧑‍🍳@cheftomhunt Guardian columnist takes one of our favourite seasonal crops Kale and gives it a whole new delicious dimension, a brilliant recipe from his book #EatingforPleasurePeoplePlanet This recipe isn’t complete without our local small batch artisan @galway_hooker_brewery galway_hooker_brewery (they have an organic pilsner). Kenneth Beer Battered Kale... 100g wholemeal spelt flour, plus extra for dusting 1 tsp baking powder A pinch of salt and pepper 130ml beer and/or water Light olive oil, for frying 200g Kale or mixed seasonal vegetables In a bowl, mix the flour, baking powder, salt, pepper, beer and/or water, and beat out any lumps. Add a little more beer, water or flour if necessary to reach the consistency of double cream. Fill a saucepan less than one-third full with oil and place on a medium heat. When hot (test by dropping in a little batter - if it bubbles and rises to the surface, it’s ready) dust the vegetables lightly in flour, shake off the excess, then dip into the batter. Shake again to remove any excess batter and carefully lower into the hot oil. Fry for about five minutes, or until golden brown. Remove with a slotted spoon and place on kitchen towel to drain. Serve hot with lemon wedges and your favourite condiment. #RootToFruitEating #organic #organicfood

We always start the day with water dense fruits & herbs As I was ending my cycle I like to have a blend of herbs such as red clover, burdock root, calendula & raspberry leaf.She has holy basil, chamomile/calendula exclusively during day time. There are a few elements that I like to include into her nutrition: Seamoss Hemp Baobab Seamoss acts as a multi vital- minerals which is essential for her bone growth & thyroid function As she struggles with skin issues I keep it gluten free for the time being, some legumes also do trigger it so I have learnt to use hemp as one the complete proteins that I give her instead of resorting to foods such as chickpeas. Baobab is an ancient fruit which promotes a healthy immune system as well as being a source of natural calcium. During the summer if we are somewhere where the weather is hot I resort to maintaining a high raw lifestyle including water dense fruits such as melons (including cucumbers) and seasonal greens which I include inside stews & soups as she isn’t the biggest fan of having them on their own yet. Meals that we had during this holiday included: Seamoss blueberry & banana smoothie bowls topped with quinoa pops, hempseeds & berries Seamoss banana baobab, date & hemp smoothies Gazpacho cold soup Squash based purées, topped with mushrooms or served with GF alkaline grains Okra & Peruvian potato stews Grilled veggie platters including asparagus, courgette, red pepper & onion Pasta with roasted bell pepper & watercress sauce including @electricplantkitchen sesame seed parmesan Fat rich salads including walnuts, avocado & tahini. I like to have a higher consumption of these during the end of my cycle Cacao teff waffles infused with seamoss, date syrup & baobab. Another plant medicine I like to use at the end of my cycle to promote blood flow & hormonal balance Home made ice lollies: watermelon, apple & raspberry, mango etc

  1. ‘MARRY ME’ BUTTERBEANS🌱 . I’m sure by now you’ve all seen the viral ‘marry me chicken’ which I’ve seen people make lots of variations of, in particular with pasta! I decided to do a whole-foods twist on it, and use butterbeans instead of vg chicken or pasta - this worked so well and it was so simple to make! Could easily double the recipe for a fab easy batch cook as well😍 . Ingredients for 2: - 1 can of good quality butterbeans, I used @bionaorganic , if you want to make a bigger batch I highly highly recommend the @boldbeanco jars!! These jars are usually my go to but I ran out and my nearest shop is tesco so couldn’t get them, but the @bionaorganic beans were so so delicious so wasn’t missing out! If you can, it makes a big difference buying quality beans. - 70g sun-dried tomatoes - 3 cloves of garlic - 1/2 a red onion or 1 shallot - Big handful of spinach - Small bunch of basil - 30g cashews - 3-4 tbsp nutritional yeast - Pinch of dried oregano - Pinch of dried thyme - 150ml unsweetened plant milk (add a bit more if needed, if your blender isn’t super powerful/needs more liquid to blend) . Finely chop the onion, garlic & sundried tomatoes. Heat some oil in a pan and fry the onion & garlic over a medium heat for about 5 minutes. Add the sundried tomatoes, followed by the dried oregano & thyme. Let that cook off for a few minutes and meanwhile, blitz together the cashews, plant milk & nutritional yeast til super smooth and creamy. Add the beans WITH the liquid from the can and mix well, then after a minute or two add the cashew cream. Mix well and bring it to a gentle simmer for 3-4 minutes. Add the spinach & basil and mix well until wilted, add a splash of water if it’s getting too thick. Season to taste with salt & pepper. Serve up with some toast (sourdough is the best but I had none in) and enjoy! . #vegan #plantbased #ukvegan #beans #wfpb #healthyrecipes #healthyfood
