It’s 2026 can we all agree that vegans don’t have protein deficiencies yet? 🌱 It’s one of the most common misconceptions I still hear, so here’s a breakdown of the protein sources in this dish: • Lentil Pasta: 17g protein per 100g • Peas: 5.7g protein per 100g •Tempeh: 22g protein per 100g •Pumpkin seeds: 24g protein per 100g •Sunflower seeds: 20g protein per 100g •Silken tofu: 7g protein per 100g •Cashews: 18g protein per 100g •Nutritional yeast: 47g protein per 100g That’s 8 plant based protein sources, totalling around 145g of protein in the full recipe and almost 50g per serving! Pasta sauce: 50g wild garlic 50g toasted cashews 40g nutritional yeast 20g rocket 250g peas 1 garlic clove 100g silken tofu Salt and pepper (to taste) ½ lemon juice 25ml olive oil 1 vegetable stock cube 100ml pasta water This pasta sauce was inspired by and adapted from @bosh.tv rocket, pea and pistachio pesto linguine - a recipe from their new cookbook ‘More Plants’ which I highly recommend for anyone looking to eat more plant protein and fibre! Tempeh: 1 block tempeh 1/4 cup pumpkin & sunflower seeds 1 tbsp olive oil 1 tsp maple syrup 1 tbsp soy sauce 1 tbsp nutritional yeast 1 tsp smoked paprika 1 tsp garlic granules Pinch of salt & pepper Method: 1. Prep and blend all the pasta sauce ingredients, adding pasta water once the pasta is cooked 2. Cook the pasta (I used a pack of @allplants plants 215g red lentil pasta for 3 portions but you could use about 280g if you wanted to serve 4) 3. Chop, season and air fry the tempeh & seeds at 200°C for 8-10 mins 4. Stir the sauce through the pasta and heat gently 5. Roasted cauliflower gets blended with silken tofu, miso, soy, coconut milk and stock for a broth that’s ridiculously silky. Finish with crispy cauli on top, a drizzle of chilli oil and coriander, and you’ve got a weeknight ramen that feels like a treat. Save this for your next nourishing dinner x Serves 3 
Ingredients
1 small cauliflower
Olive oil spray
300g silken tofu
Drizzle oil
2 tbsp white miso paste
1 tbsp soy sauce
400ml vegetable stock
400ml coconut milk
2 cloves garlic
1 thumb-sized piece ginger
3 x 100g packs ramen noodles
Chilli oil and coriander, to finish Before you start
Preheat the oven to 200°C fan | Line a large baking tray | Blender | Saucepan How to Make It
1️⃣ Prep | Slice the cauliflower into florets | Dice the garlic and ginger | Slice spring onions
2️⃣ Roast the cauliflower | Spread florets on the tray | Drizzle with olive oil + a pinch of salt | Roast for 20 mins until golden
3️⃣ Make the creamy broth | Reserve some cauliflower for garnish | Add the rest to a blender with silken tofu, miso, soy sauce, coconut milk + veg stock | Blend until completely smooth | Heat a drizzle of oil in a saucepan, fry the garlic + ginger for 2 mins | Pour in the blended broth and bring to a gentle simmer (add a splash of water if needed to loosen)
4️⃣ Cook the noodles | Cook ramen noodles according to packet instructions
5️⃣ Assemble | Ladle noodles and broth into bowls | Top with crispy cauliflower | Finish with chilli oil + coriander

Save this for your next effortless dinner, and follow along for more One Pan Protein meals 🍽️ Serves 4 | 24g protein per portion Ingredients Drizzle of oil or plant-based butter
500g oyster mushrooms
1 leek
2 cloves garlic
1 tbsp white miso paste
200g orzo
150g silken tofu, blitzed until smooth
1 x 570g jar chickpeas (rinsed + drained)
550ml vegetable stock
1 tbsp soy sauce
40g nutritional yeast
Juice of ½ lemon
Chives, to garnish Before you start: Large frying pan or wide saucepan | Blender | Ladle | Wooden spoon How to Make It 1️⃣ Prep – Finely slice the leek. Tear the mushrooms. Finely chop the garlic. Rinse + drain the chickpeas. Finely slice the chives. Blitz the silken tofu until smooth.
2️⃣ Cook the base – Heat a drizzle of oil (or plant-based butter) in a wide pan over medium heat. Fry mushrooms until golden, then remove. Add another drizzle of oil and cook the leeks for 5–6 mins until soft and slightly caramelised. Add garlic + miso and fry for 1 min. Add orzo and toast for 2 mins.
3️⃣ Build the orzotto – Add the blitzed tofu, chickpeas, stock, soy sauce and nooch. Stir well and simmer for 10 mins, stirring regularly so it doesn’t stick (add a splash of water if needed). Stir in half the mushrooms.
4️⃣ Finish & serve – Stir in lemon juice, taste and adjust seasoning. Spoon into bowls and top with the remaining mushrooms, chives, and a drizzle of extra virgin olive oil.

  1. Strawberry Coconut Yogurt and Kumquats on Toast When I was doing our online shopping with Ocado last week I spotted some delicious kumquats. One reason that we love Ocado is because they stock more exotic fruits that cannot always be found in other supermarkets. For this breakfast I have used them in this super easy, high protein and full of flavour breakfast treat. To start with I toasted some Warburton’s high protein flatbreads. I allowed them to cool slightly because I didn’t want the yogurt to go all runny. Once cooled I added a generous scoop of Coconut Collab high protein strawberry coconut yogurt on each flatbread. I topped the yogurt with the sliced kumquats. The sweetness of the yogurt count balanced the sourness of the kumquats perfectly and to finish off the toasts I sprinkled over some crushed walnuts. This breakfast contains 17g of plant based protein plus a few extra grams from the walnuts, so this is a great breakfast to start the day. What is your favourite breakfast?   2. Vegan Chicken, Black Garlic & Baby Leaf Salad Salad season is well & truly here! I love a good salad & using quality ingredients is so important. Fresh & Naked do not pre wash their salad leaves prior to packing them. This helps to keep the leaves stay fresher for longer. All of the Fresh & Naked leaves are naturally grown, in fields by passionate farmers without the need to use chemicals. To make this delicious salad you will need… Fresh & Naked mini leaves Celery Radish Cucumber Avocado Apple Lemon juice Vegan chicken Black garlic cloves White vinegar salad dressing Garlic croutons Pan fry the chicken & black garlic in a drizzle of oil. Once cooked remove from the pan & allow to cool. Finely slice some radish, cucumber, celery, apple & avocado. Place the apple & avocado in a dish & squeeze over some lemon juice to stop them going brown. Using the Fresh & Naked baby leaves as a base then add the chopped vegetables. Top with the chicken & black garlic cloves. Drizzle over some white vinegar salad dressing. Finish the salad with some garlic croutons. Baby leaves are not just delicious but they are also full of goodness. They’re rich in iron, which we need to produce red blood cells that transport oxygen throughout our bodies which produces energy. Iron also plays a role in our muscle development, maintaining healthy skin, hair, & nails as well as helping our immune system function. Baby leaves are a great source of plant based calcium. We need calcium to maintain strong bones & teeth but it also helps our muscle & nerve function, blood clot & heart health. These marvellous mini leaves are packed full of goodness & flavour.
