  1. My Mutton Varuval is crowd pleaser if I do say so myself😆 Perfectly pairs with hot white rice and Rasam, sure does make it to the comfort food category. I make a number of Varuval versions but this recipe is the easiest, perfect for beginners, so do give it a try if you’d like and let me know how it turns out. Ingredients; A) 1kg mutton, cubed (I’ve used mutton thigh along with some extra marrows) 1 tbsp black peppercorns 2 bay leaves 2 tbsp ginger and garlic paste 1 red onion 1 tsp turmeric powder 1 tbsp salt **Pressure cook OR boil all of the ingredients above until meat is tender. B) 2 inch piece cinnamon 5 cardamom pods 4 cloves 2 star anise 1 tsp cumin seeds 1 tsp fennel seeds 2 sprigs curry leaves 7-8 shallots, sliced 3 dried red chilli, cut into 1 inch 3 garlic cloves, sliced 2 tbsp ginger and garlic paste 2 tbsp chilli powder (I’ve used Kashmiri chilli powder) 1 tbsp coriander powder 1 tbsp garam masala A bunch of fresh coriander leaves 5 tbsp oil (I’ve used @c.o.and.co coconut oil) Method: 1. Heat oil in a wok over medium fire. Add in all spices, followed by curry leaves, shallots, dried chilli and garlic cloves. Fry until shallots turn golden around the edges. 2. Add in ginger and garlic paste, fry for 2 minutes. 3. Pour in cooked mutton along with the liquid, add in chilli powder and coriander powder. Cook while continuously stirring until liquid has evaporated and mutton almost dry. Check for salt at this point and make adjustments if needed (I don’t usually add anymore salt than the 1 tbsp during pressure cooking the mutton). 4. Sprinkle garam masala, give it a good mix. Chuck in fresh coriander. Turn off fire. 5.   3. Nandu Rasam, fleshy crabs cooked in the ever so delicious and super healthy South Indian Rasam broth. Just what we need during this monsoon season or even winter in some parts. Perfect remedy for all those sniffles and coughs going around town. #comfortfood Any pot will work to make Rasam but I do highly suggest you make it in a Claypot! Ingredients; 2 blue flower crabs, cleaned and cut (ketam bunga) 1/2 tsp turmeric powder (serbuk Kunyit) 1 tsp salt (garam) *Marinate and keep aside 3 tbsp coriander seeds (biji ketumbar) 3 tbsp black peppercorns (biji lada hitam) 2 tbsp cumin seeds (jintan putih) *Pounded together into a coarse powder 6 shallots (bawang merah kecil) 6 garlic cloves, skin on (bawang putih) *Roughly pounded 2 sprigs curry leaves (daun kari) 2-3 dried red chilli OR 4-6 round dried chilli 1 large red tomato (or 2 medium), roughly chopped 1 tsp turmeric powder (serbuk Kunyit) 2 tbsp tamarind paste (pea asam jawa) 2 tsp asafoetida powder (serbuk inggu) A handful of fresh coriander leaves (segenggam daun ketumbar) 1 litre water (air) Salt to taste 1-2 tbsp Gingelly oil (minyak bijan) Method; 1. Heat oil in a pot over medium low fire. Add in pounded shallots, garlic and curry leaves. Fry for 2 minutes. 2. Now add tomatoes, crushing them as you drop them in along with turmeric powder. Give it a quick stir and allow to fry for about 2 minute. 3. Pour in water followed by tamarind paste and pounded spices. Mix well, cover with lid and allow liquid to come to a boil. 4. Remove lid, add in salt to taste along with asafoetida. Mix well. 5. Now add in marinated crab pieces and fresh coriander. Give it a quick stir, cover with lid, reduce fire to its lowest and allow to cook for about 8-10 minutes. 6. Turn off fire, serve hot Nandu Rasam with steaming white rice or even on its own, ENJOY!
