  2. Today’s recipe video is a Kimchi Udon Carbonara! Spicy, chewy, creamy, savory...just so good. It’s super easy to make (done in less than 30 minutes total), and has everything you need for a one plate meal. . . . Tips: -Make it even spicier by adding more gochugaru, if that’s what you’re about -Skip the pork belly to make it vegetarian (it’ll be just as good!). If you do skip it, you can add a bit more onion, garlic and olive oil for a bit more flavor . . . Ingredients: -Udon noodles, pork belly, kimchi gochujang, gochugaru, soy sauce, sesame oil, black pepper, onion, garlic, scallions, mozzarella cheese, parmesan cheese, egg . . . Instructions: -In a bowl, mix 1 tbsp gochujang, 2 tsp gochugaru, 2 tsp memmi or soy sauce, 1 tsp sesame oil, black pepper, and 1 tbsp water. -Bring a pot of water to a boil. Add in 2 packs of udon noodles, cook for ~2 mins, and then drain and rinse the noodles over cold water. If you’re good at multitasking do this while also tackling the next step. If not, it’s okay to just do this sequentially. -In a pan, add about ~1 tsp of olive oil. Add 2 pork bellies, and mostly cook them. When they are almost done, cut them up with food scissors. -Add 1/3 of an onion chopped and 4 garlic cloves sliced. Cook ~30 seconds until garlic is lightly browned. -Add 1 cup of kimchi, and cook until kimchi is lightly carmelized. Then add in the premixed sauce and mix everything up together. -Add in the 2 packs of cooked udon noodles, then turn off the heat and mix the noodles up with everything until the noodles are well coated. Add 1-2 scallions chopped, an egg yolk, a handful of parmesan cheese and a handful of mozzarella cheese (this should melt by itself with residual heat). Mix in the egg yolk and enjoy!

  2. I can’t believe I still have to convince people that MSG is safe. It’s doubly annoying that the narrative surrounding MSG has been and continues to be racially skewed. Good thing I have my fish sauce and MSG margarita to help me tackle this subject. #knowmsg MSG is undeservedly a controversial food additive that is negatively associated with Asian foods, specifically Chinese food. It's one of the most researched food ingredients, and has been scientifically demonstrated to be harmless. In fact, it is placed in the safest category for food additives by The Joint Expert Committee on Food Additives of the United Nations Food and Agricultural Organization and World Health Organization. What is MSG (monosodium glutamate) anyways? It's just a sodium ion attached to a glutamate anion, both of which are required to carry out biological functions in our bodies. Glutamate is naturally occurring in many foods, such as tomatoes, mushrooms, cheese, and even breast milk. The campaign against MSG stems from xenophobia and racially charged biases. The term "Chinese Restaurant Syndrome" was coined in 1968 and was used to describe a general set of symptoms that a person may experience after eating Chinese food heavily seasoned with MSG. To this day the negative perception of MSG is still primarily associated with Asian cuisines, even though its use is widespread in western food products. People who claim that they have a sensitivity to MSG only seem to have symptoms after eating asian foods, but never when they've polished off a bag of Doritos or generously dipped their pizza in ranch dressing. I'm so sick of this harmful association and burden that asian cuisines have to carry even after MSG has been cleared of its 'devil salt' status. Many asian restaurants/food manufacturers still to this day have a disclaimer of "no msg added" to distance themselves from the stigma. If your concern over MSG consumption only extends to asian cuisine, maybe take some time to confront other harmful biases you may subscribe to. To quote one of my culinary heroes, Anthony Bourdain, "You know what causes Chinese restaurant syndrome? Racism."
