These are ridiculously soft and dripping in brown butter glaze 🍂🎃 Dough * ¾ cup (180 ml) warm milk (~110°F) * 2 ¼ tsp instant yeast (1 packet) * ½ cup (100 g) sugar * 1 large egg + 1 egg yolk, room temp * ½ cup (120 g) pumpkin purée * 1 tsp salt * 4–4 ½ cups (480g) all-purpose flour * ¼ cup (55 g) unsalted butter, cubed & softened (added while kneading)
 Filling * ½ cup (110 g) unsalted butter, softened * 1 cup (200 g) brown sugar * 2 Tbsp cinnamon * ½ tsp nutmeg
 Before Baking * ½ cup (120 ml) heavy cream, room temp
 Brown Butter Cream Cheese Glaze * 4 Tbsp (55 g) unsalted butter, browned & melted * 4 oz (115 g) cream cheese, softened * 1 ½ cups (180 g) powdered sugar * 1–2 Tbsp milk or cream (to thin as needed) * 1 tsp vanilla extract * Pinch of salt Instructions 1) Make the Dough * In a bowl, whisk warm milk, yeast, and sugar; rest 5 min until foamy. * Mix in egg, yolk, pumpkin purée, and salt. * Add flour gradually until a soft dough forms * Knead for 5-7min * If using a stand mixed, while running, add cubed butter a few pieces at a time; knead 5–7 min more until smooth, glossy, and slightly tacky. *oil your hands if it’s too sticky try not to avoid adding flour unless you cannot work with it at all * Place in a greased bowl, cover, and rise until doubled (1–1½ hrs).
 2) Shape & Fill * Roll dough to ~12×24 in (30×60 cm). * Spread softened butter; sprinkle evenly with brown sugar, cinnamon, and nutmeg. * Roll tightly from the long side; slice into 12 pieces (floss/string for clean cuts).
 3) Second Rise * Arrange in a greased 9×13 in pan. Cover and rise 30–40 min until puffy.
 4) Heavy Cream Hack * Warm the cream slightly; pour evenly over risen rolls just before baking.
 5) Bake * Bake at 325°F (165°C) for 20–25 min, until lightly golden but still soft in the centre.
 6) Glaze * Brown the butter (golden, nutty); cool slightly. *should be a very light brown- if dark start over * Add all of your ingredients to a bowl and mix. * Spread over warm rolls so it melts into the swirls. Add a splash of water or oil if needed to blend. Coat the chicken pieces well with this paste. Cover and let it marinate for at least 30 minutes (refrigerate up to 4–6 hours for deeper flavour). 2️⃣ Air-Fry the Chicken Preheat your air fryer to 180°C (350°F) for 3–4 minutes. It’s super easy to make (done in less than 30 minutes total), and has everything you need for a one plate meal. . . . Tips: -Make it even spicier by adding more gochugaru, if that’s what you’re about -Skip the pork belly to make it vegetarian (it’ll be just as good!). If you do skip it, you can add a bit more onion, garlic and olive oil for a bit more flavor . . . Ingredients: -Udon noodles, pork belly, kimchi gochujang, gochugaru, soy sauce, sesame oil, black pepper, onion, garlic, scallions, mozzarella cheese, parmesan cheese, egg . . . Instructions: -In a bowl, mix 1 tbsp gochujang, 2 tsp gochugaru, 2 tsp memmi or soy sauce, 1 tsp sesame oil, black pepper, and 1 tbsp water. -Bring a pot of water to a boil. Add in 2 packs of udon noodles, cook for ~2 mins, and then drain and rinse the noodles over cold water. If you’re good at multitasking do this while also tackling the next step. If not, it’s okay to just do this sequentially. -In a pan, add about ~1 tsp of olive oil. Add 2 pork bellies, and mostly cook them. When they are almost done, cut them up with food scissors. -Add 1/3 of an onion chopped and 4 garlic cloves sliced. Cook ~30 seconds until garlic is lightly browned. -Add 1 cup of kimchi, and cook until kimchi is lightly carmelized. Then add in the premixed sauce and mix everything up together. -Add in the 2 packs of cooked udon noodles, then turn off the heat and mix the noodles up with everything until the noodles are well coated. Add 1-2 scallions chopped, an egg yolk, a handful of parmesan cheese and a handful of mozzarella cheese (this should melt by itself with residual heat). Mix in the egg yolk and enjoy!
