Chocolate Chip Cookies 10 cookies Cook time 12-15 mins Oven temp 180c Pre heat oven Ingredients: 200g unsalted butter at room temp 140g white caster sugar 80g soft brown sugar 1 large egg at room temp 1 tsp vanilla essence 240g all purpose flour 1/2 tsp baking powder 1/2 tsp bicarbonate soda 1/2 tsp salt 130g chocolate 70% cocoa in chunks or chips 1. to a bowl add the softened butter, white sugar, brown sugar and vanilla. Mix well together to form a paste. 2. Mix in the egg. 3. Add the flour salt, baking powder and bicarbonate of soda. Stir well until the flour is fully incorporated. 4. Now mix in the chocolate chunks. You may reserve some to sprinkle on top before baking. 5. Scoop cookie dough into 10 equal balls. Around 75g each. 6. Place into baking paper and place in the freezer for 15minutes. 7. Now divide onto a lined baking tray 4-6 cookies per tray leaving enough space between each. 8. Bake for 12-15 mins 9. Remove from oven and leave to cool for 45 mins allowing the cookies to stabilize. When you take them from the oven they will be very soft l. 10. Cut open the jacket potato add butter mash it up season with the salt and pepper, then add the chicken filling.
