  1. My ideal Sio Bak (aka Siu Yuk) needs to have perfectly seasoned, juicy meat and crackling with a light, shattering crunch. With the right techniques, it’s incredibly easy to achieve in the air fryer! I use the @ninjakitchenmy Ninja Foodi 8-In-1 6L Multi Cooker OP300. Use promo code ZENZIOP300 for RM450 off on sharkninja.my! Makes about 6 servings 650g pork belly The largest the multi cooker can accommodate is a 5½” x 5½” piece. Ask your butcher for the center cut with a good distribution of meat and fat. Thin skin makes for better crackling. FOR THE MEAT 1 tsp Shaoxing wine Dry Rub: ½ tsp five-spice powder 1¼ / 6g tsp salt  ¼ tsp / 1g white pepper ½ tsp / 2.5g sugar FOR THE SKIN 1 tsp white vinegar ½ tsp / 2.5g sea salt 1 tsp vegetable oil Bring a shallow pan of water (does not need to cover pork completely) to a simmer. Parboil pork belly skin side down 10 mins. Remove and pat dry. Using a meat tenderizer, poke multiple tiny holes in the skin. Do not puncture the meat as its juices can ooze out and prevent the skin from crackling. Flip the belly over so the meat faces upwards. Brush meat with Shaoxing wine, then season with the dry rub. Do not get any on the skin as the seasoning can burn. Flip over so the skin faces upwards. Brush skin with white vinegar, then sprinkle salt evenly across the skin. Refrigerate uncovered, overnight, at least 12hrs for the skin to dry out. Take the pork out of the fridge 1 hr before roasting. If you see any moisture on the skin, pat it dry. Preheat the multi cooker for 5 mins: BAKE/ROAST, 120ºC Wrap the pork belly tightly in a double layer of foil, leaving the skin exposed. Bake at 120ºC for 30 mins. At this point, the skin will look light brown and a few beads of rendered fat may appear on the surface. Remove basket from multi cooker.  Preheat the multi cooker for 5 mins: AIR CRISP 210ºC Meanwhile, brush the skin with a thin layer of vegetable oil, which will help conduct heat towards the surface of the skin. Return basket to the multi cooker. Air fry at 210ºC for 20-25 mins until the skin is evenly golden and crackled. Let the pork rest at least 20 mins before slicing. #ninjakitchenmy #ninjafoodimalaysia

  2. I grew up eating bubur cha cha so I was surprised when Mom said grandmother usually makes Pengat instead! As they are Hokkien, they enjoy it on Chap Goh Meh, the 15th day of the lunar new year. The coconut sauce in pengat is traditionally sweetened with gula melaka. Grandmother made hers with regular sugar, added gooey morsels of tee kuih, and boiled the bananas in a sugar syrup. We’ve adapted the recipe for the modern palate, forgoing syruped bananas for fresh and use much less sugar in the coconut sauce. Serves 8 dessert bowls 500g mix of orange, yellow, white, purple sweet potato* 250g yam (taro) 2 bananas (pisang raja) 125g tee kuih (nian gao) Coconut Sauce 150ml water 30g caster sugar 1/4 tsp salt 3 pandan leaves, bruised and knotted 500ml fresh coconut milk *You can use as many colors of sweet potato as you can get your hands on, as long as the total weight is ~500g to ensure there is enough coconut sauce for every bowl Peel and slice sweet potatoes into 2cm thick pieces and the yam into 1” cubes. Alternatively—if you’re a stickler for tradition—you can slice them into batons or diamonds. [TIP] Yellow and white sweet potatoes oxidize rapidly so we soak them in a bowl of cold water once cut. Working in batches if needed, steam the sweet potatoes and yam until tender. Cooking times will vary, we find that the purple ones cook fastest. 15 mins: orange, yellow, white sweet potato 10 mins: purple sweet potato 15-20 mins: yam Slice tee kuih into thumb-sized sticks. Place on a piece of parchment paper/banana leaf in a heat proof dish (we did not use parchment and regretted it, so sticky!) and put in the still-warm steamer, heat off, about 5 mins. Residual heat will gently warm the tee kuih so it regains its soft, gooey texture. Slice bananas into 1/2” thick coins. Coconut Sauce: Combine water, sugar, salt, and pandan in a pot and bring to a simmer, 3 mins. It should smell very fragrant from the pandan. On low heat, pour in coconut milk and bring it back up to a BARE simmer, about 5 mins. Do not boil as high heat will cause curdling. Arrange sweet potatoes, yam, tee kuih, and banana in individual dessert bowls. Ladle over warm coconut sauce and serve.

Mom’s Fried Fish with Dark Soy Sauce — my ULTIMATE NUMBER ONE FAVORITE FRIED FISH DISH sorry for shouting it’s just THE BEST! 😭 Serves 2-4 Enough vegetable oil for deep frying 350g white fish*, filleted 1/2 tsp salt Dash of white pepper 1 Tbsp cornstarch 3 shallots, chopped 2 cloves garlic, chopped 1/2” ginger, chopped 1/2 red chili, chopped GARNISH Thumb-sized knob (about 1”) ginger, julienned 1 clove garlic, chopped 1/2 red chili, finely sliced 1/2 spring onion, chopped A few sprigs fresh coriander SAUCE 1 Tbsp dark soy sauce 1 tsp light soy sauce 1 tsp oyster sauce 1 tsp sugar 1/2 tsp sesame oil Dash of white pepper 1/4 cup water CORNSTARCH SLURRY 1 tsp cornstarch 1 Tbsp water *We used golden snapper (ikan jenahak) here, but any firm white fish will work. Skin-on or skin-off are fine. We also like sea bass (siakap), grouper (kerapu), or whole fish like golden/black pomfret, threadfin (senangin), and white snapper. Season fish with salt and pepper. Set aside while you chop the aromatics and prepare the sauce. Preheat oil in a wok for deep frying — the oil is hot enough when it starts to shimmer and ripple. Right before frying, pat the fish dry with paper towels. Salt in the seasoning draws out moisture and it is VERY IMPORTANT that the surface of the fish is dry. Dust both sides with cornstarch and tap away any excess. Gently lower the fish into the oil and fry until golden and cooked. Timing will depend on the thickness of your fillet. Ours was 1” at its thickest and took 4-5 mins. Drain the fish on a wire rack. Meanwhile, remove all but 1-2 Tbsp oil in the wok. On medium heat, fry julienned ginger and chopped garlic (for garnish) until golden crisp. Remove and set aside. To the remaining oil in the wok, add shallots, garlic, ginger, and chili until fragrant, about 2 mins. Add the sauce and cook another 1 min for the flavors to meld. Turn the heat down to low, stir in cornstarch slurry. Simmer just until the sauce thickens, about 30 secs. Taste and adjust seasoning if you wish. Place your fried fish in a serving dish, skin side up. Top it with the sauce, crispy ginger and garlic, fresh chili, spring onion, and coriander. Enjoy hot with rice!
