Garlic Butter sirloin Steak with Creamy Mozzarella Parmesan Rigatoni 🙌🔥 P.s Happy lovers day 💙 Ingredients For the steak: sirloin steak 2 tbsp olive oil 3 tbsp unsalted butter 4 cloves garlic, minced 1½ tsp Cajun seasoning ½ tsp garlic powder ½ tsp paprika ½ tsp salt ½ tsp black pepper For the cheesy rigatoni: 12 oz rigatoni pasta 2 tbsp unsalted butter 1 tbsp olive oil 1 small onion, finely diced 4 cloves garlic, minced 1½ cups heavy cream ½ cup whole milk 1½ cups shredded mozzarella cheese 1 cup freshly grated Parmesan cheese ½ cup cubed Velveeta cheese ¼ tsp salt ½ tsp black pepper ½ tsp Italian seasoning Directions: 1. Bring a large pot of salted water to a boil and cook the rigatoni until just al dente. Drain and set aside. 2. Pat the steak tips dry and season evenly with Cajun seasoning, garlic powder, paprika, salt, and black pepper. 3. Heat olive oil in a large skillet over medium-high heat. Add the steak in a single layer and sear for 2–3 minutes per side until deeply golden with caramelized edges. Remove from the skillet and set aside. 4. Reduce heat to medium. Add butter and garlic to the same skillet. Cook for about 30 seconds until fragrant, then return the steak tips and toss until fully coated in garlic butter. Remove from heat and keep warm. 5. In a separate large pan, melt butter with olive oil over medium heat. Add onion and cook until soft. Stir in garlic and cook briefly. 6. Pour in heavy cream and milk. Simmer gently for 3–4 minutes until slightly thickened. 7. Reduce heat to low. Add Velveeta cubes first and stir until fully melted and smooth. 8. Add mozzarella and Parmesan in batches, stirring constantly until the sauce becomes very thick, glossy, and heavily cheesy. 9. Add the cooked rigatoni and fold gently until every piece is completely smothered in cheese. The sauce should cling heavily to the pasta with visible cheese stretch when stirred. 10. Plate the cheesy rigatoni on one side and the garlic butter steak tips on the other. Spoon extra cheese sauce over the pasta and drizzle remaining garlic butter over the steak. PIZZAAAA Couldn't be arsed tonight, honestly, I just wanted to sit down with a pint of tea and a packet of digestives for dinner, and to be honest, if I thought I'd enjoy it - I would have, but I know me quite well after 41 years. It wouldn't fill my soul with joy or my belly with food. After calling myself out for my obvious arseholery I dragged my arse to the kitchen and settled on pizza and chips. Now I know I could have used a million different HeB options for my "base" or even made one myself but I didn't, I knew what I wanted. I wanted a 9.5 syn Deli Kitchen Greek flatbread base so that's what I had. Topped it with a homemade pizza sauce, HeA cheese and some lovely red onion; sometimes simple is best innit? Look at Joey from Friends: point proven. 9.5 syns for a proper pizza vibe is an utter bargain, but if you're too much of a tight arse to use the syns; use whatever you want.... And then shove a twix down your face later, because you "got syns left". That'll mean you've eaten hundreds more calories than you would have done just eating the fucking flatbread but WHATEVER DEIRDRE, YOU DO YOU. Special mention for @angusandoink "Fries with That" seasoning - first time trying them and v impressed. Cheesy, bacony and made my Actifry chips a whole heap sexier. Syn wise, if you piled it on, you'd need to be mindful but we used 10g between us, which works out as a quarter of a syn... I inhale more than that walking past Gregg's. Calorie wise, 7 calories for 5g. IT'S GOOD. You can buy it, like I did, from their site😉. Apart from it burning my mouth off AGAIN tonight, I enjoyed it immensely. So, 9.5 syns, one HeA and approx 545 calories.   2. One pan chicken, chorizo and mozzarella orzo thingy. Sounds like I've strung random words together and hoped for the best, which is generally how I cook too. It's hit or miss. You're welcome. Also, I'll level with you, this is not tonight's dinner. Tonight, I've had a tuna mayo sarnie, because the "meh" continues and I still can't be bothered. This WAS dinner earlier in the week though and it was properly good, so judge me for my sarnie but still make it. Dead easy, minimal washing up and ready in about 15 mins. It's 👌🏻. This'll give you three portions my size. One chopped onion and red pepper fried till soft, 15 syns of chopped chorizo (how much you get will depend which brand you use, check the app), chucked in and then one diced chicken breast (we like ours cut quite finely) fried for a few mins too. Add in one clove of garlic (either finely grated or minced)and a tablespoon of tomato puree - stir around for a few mins. Add in a tablespoon of smoked paprika, a chicken stock cube or stock pot, 220g orzo (dry weight), a smattering of chilli flakes and then top up the pan with 650ml of boiling water. Let it all bubble together until the pasta is cooked and the majority of the liquid is gone. You might need to add a bit more water - don't get distracted or it'll be rubbish. You've been warned. When it's done, stir through some chunks of mozzarella, more on top and then put the lid on the pan till it all melts. FYI A wide deep saucepan is the best thing to use rather than a normal tall one you'd use for pasta. Tell you what, we'll be having it again. All in it was 5 syns, one HeA and approx 560 calories. Anyway, I'm off to scowl at a sunset. Everyone has a different recipe, but this is how I like it 🙂‍↕️🙂‍↕️ INGREDIENTS FOR 4-6 SERVINGS FOR THE SCOUSE ☆ 500g diced beef ☆ 3 medium onions, peel and chop ☆ 5 carrots, peeled and chop ☆ 600g peeled potatoes, cut into large chunks (I cut mine small) ☆ 1 leek, sliced ☆ 1L beef stock ☆ 2 tbsp tomato purée ☆ 200 ml stout ☆ 1-2 tbsp Worcestershire sauce ☆ 1 tbsp wholegrain mustard ☆ Vegetable oil, for browning ☆ Salt & pepper, to taste FOR THE PICKLED CABBAGE ☆ Red cabbage ☆ 2 tbsp Salt ☆ 2 tbsp Sugar ☆ 200ml red wine vinegar ^ tbh I just eyeball this METHOD 1. Brown the meat
Heat a splash of vegetable oil in a large saucepan or stock pot over high heat. Brown the diced beef chuck thoroughly, then remove and set aside. 2. Cook the vegetables
Reduce heat to medium. Add the onions and carrots to the pot and cook until they begin to soften. Return the beef to the pan and stir everything together. 3. Add tomato purée & potatoes
Stir in the tomato purée until evenly distributed. Add the potatoes and pour over the beef stock and Worcestershire sauce. 4. Simmer gently
Bring the stew to a gentle simmer, then cover and cook for around 2 hours, until the beef is tender and the potatoes start to break down and thicken the stew. 5. Pickled Cabbage Use a mandolin or finely slice a red cabbage, then add all wet ingredients to create a brine. Refrigerate and ideally marinate overnight to allow the bright pink colour to appear. 6. Final flavour boost

  1. Loaded Hummus with Merguez Sausage, Pickles and Crispy Chickpeas. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I keep getting haunted by plates of loaded hummus on instagram, so I decided it was time to try my own spin on it. This is a homemade hummus base (tinned chickpeas cooked again until super soft, garlic, lemon and tahini, plus ice cold water to make it silky smooth and creamy). I’ve topped it with some homemade pickled red cabbage, a bunch of fresh herbs, some crispy chickpeas (roasted in the oven and dusted with cumin salt) and some oily lamb merguez sausage balls. For the merguez I used a punchy recipe from Ottolenghi which combines the lamb mince with lots of rose harissa, smokey paprika, cayenne and spice. I love how the sausage drips that beautifully bright smokey orange oil into the hummus. It’s divine. We devoured this plate with a good chunk of soft, tearable bread. The crunchy sweet/salty pickles, with the crispy chickpeas, the creamy hummus, the fresh herbs and the spicy meatballs. It’s a perfect mouthful.   2. Cacao Nib, Pistachio and Sage Pesto with Parmesan Pangrattato. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I was gifted a bag of organic raw cacao nibs this week by the lovely team over @forrist . Cacao nibs are unsweetened, broken cocoa beans. They have a crunchy texture and a deep, dark, bitter chocolate flavour. I wanted to use their bitter-sweet earthiness to add depth to a savoury dish. After a bit of googling I stumbled upon @hungryrightnow recipe for cacao nib pesto. Apparently there are lots of Italian recipes that use cacao nibs as a savoury spice. It’s a super easy recipe with some really clever flavour pairings. You blend up the cacao nibs with parsley, sage, roasted pistachios, raisins, garlic and some good quality extra virgin olive oil. Then you mix the pesto into some al dente spaghetti with a good amount of salty pasta water and serve with a sprinkling of parmesan pangrattato. It makes for a really unique twist on a classic pesto. The earthy cacao nibs pair beautifully with the crunch of the pistachios, the sweet raisins and the tangy garlic and herbs. Definitely worth a try if you’re a pesto-head looking for something a little different.   3. Pink Pickled Onions. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ These Mexican pink pickled onions are a staple in my fridge. They go on anything and everything: tacos, sandwiches, salads, scrambled eggs, canapés, cheese, cold cuts, fried rice, avocado toast. There’s not much that can’t be improved by one of these sweet & salty, tangy pink pickles. The recipe couldn’t be more straightforward. One cup sugar, one cup white vinegar, one cup water plus a couple of teaspoons of salt, all heated up and poured into jars stuffed with thinly sliced red onions and a few jalapeños. I also tend to throw in some all spice berries and a couple of star anise. But you can add whatever you like: bay leaves, peppercorns, mustard seeds, cloves, cinnamon sticks. They’re good to eat in a couple of days. Chuck them in the fridge and they’ll last for ages (if you have the discipline!). They’re tangy and sweet and slightly spiced and the beautiful pop of pink is the perfect garnish to any dish.
