Including marinated squash with whole toasted spices, garlic and oregano - really good with an oozy burrata. Confit Romano peppers and lemons with roast chicken and cheesy polenta. There’s a Tagliata and smashed nocellara olive salad. And finally a Tuscan style olive oil and almond cake with rhubarb that has an unbeatably light texture. Loved writing these.   2. Iftar for our neighbours!! It was so lovely this year that the holy month of Easter and Ramadan fell around the same time! Whilst the faiths may differ, they both preach peace, love and community and so I thought, what better way to share the love than through a big dinner?! Due to factors beyond my control I only started at about 2pm so this was a flat out few hours of cooking and oh my goodness despite what it says on my CV, time management is not my forte and this was right down to the wire to get dinner served at the right time 😅 I also only found out about 3 hours in that I was catering for 11…in my head I was aiming for 7, so it’s a good job I naturally over cater 😂 Anyway, let me know what you think of the food and let me know if you want any of the recipes and I can add it to my long list of recipe reels I need to make!   3. Potato bread Farls 🤤 Recipe 👇 Oh my DAYS this stuff is amazing!!!! My favourite bake to come out of Ireland, I could eat this stuff every day and not get bored honestly 🤤 fun fact: it’s also great for curing hangovers (my tried and tested method at least 😅) Let me know what you think in the comments! Have you ever tried it before? Also which do you prefer: soda farls or potato bread farls?! (I’m team potato bread) Ingredients: 3 medium to large potatoes 1 big knob of butter 120g plain flour plus extra for dusting 3/4 tsp baking powder Olive oil Salt Method: 1. Peel, quarter and boil 3 good sized potatoes until very soft 2. Add in the butter and mash until super smooth 3. Mix in the flour and baking powder and then knead into a dough 4. Tip onto a floured surface and roll until about 1cm thick then cut into squares/circles/triangles (these are called farls) 5. Lightly dust each side of your farls with flour and fry in a *dry* pan over medium heat for 3-4 mins on each side until browning 6. To serve, fry each farl in olive oil until golden and sprinkle with salt then ENJOY! PS. my gorg new pot is from @procookuk #stpatricksday #irishrecipes #potatobread

PIZZAAAA Couldn't be arsed tonight, honestly, I just wanted to sit down with a pint of tea and a packet of digestives for dinner, and to be honest, if I thought I'd enjoy it - I would have, but I know me quite well after 41 years. It wouldn't fill my soul with joy or my belly with food. After calling myself out for my obvious arseholery I dragged my arse to the kitchen and settled on pizza and chips. Now I know I could have used a million different HeB options for my "base" or even made one myself but I didn't, I knew what I wanted. I wanted a 9.5 syn Deli Kitchen Greek flatbread base so that's what I had. Topped it with a homemade pizza sauce, HeA cheese and some lovely red onion; sometimes simple is best innit? Look at Joey from Friends: point proven. 9.5 syns for a proper pizza vibe is an utter bargain, but if you're too much of a tight arse to use the syns; use whatever you want.... And then shove a twix down your face later, because you "got syns left". That'll mean you've eaten hundreds more calories than you would have done just eating the fucking flatbread but WHATEVER DEIRDRE, YOU DO YOU. Special mention for @angusandoink "Fries with That" seasoning - first time trying them and v impressed. Cheesy, bacony and made my Actifry chips a whole heap sexier. Syn wise, if you piled it on, you'd need to be mindful but we used 10g between us, which works out as a quarter of a syn... I inhale more than that walking past Gregg's. Calorie wise, 7 calories for 5g. IT'S GOOD. You can buy it, like I did, from their site😉. Apart from it burning my mouth off AGAIN tonight, I enjoyed it immensely. So, 9.5 syns, one HeA and approx 545 calories.   2. One pan chicken, chorizo and mozzarella orzo thingy. Sounds like I've strung random words together and hoped for the best, which is generally how I cook too. It's hit or miss. You're welcome. Also, I'll level with you, this is not tonight's dinner. Tonight, I've had a tuna mayo sarnie, because the "meh" continues and I still can't be bothered. This WAS dinner earlier in the week though and it was properly good, so judge me for my sarnie but still make it. Dead easy, minimal washing up and ready in about 15 mins. It's 👌🏻. This'll give you three portions my size. One chopped onion and red pepper fried till soft, 15 syns of chopped chorizo (how much you get will depend which brand you use, check the app), chucked in and then one diced chicken breast (we like ours cut quite finely) fried for a few mins too. Add in one clove of garlic (either finely grated or minced)and a tablespoon of tomato puree - stir around for a few mins. Add in a tablespoon of smoked paprika, a chicken stock cube or stock pot, 220g orzo (dry weight), a smattering of chilli flakes and then top up the pan with 650ml of boiling water. Let it all bubble together until the pasta is cooked and the majority of the liquid is gone. You might need to add a bit more water - don't get distracted or it'll be rubbish. You've been warned. When it's done, stir through some chunks of mozzarella, more on top and then put the lid on the pan till it all melts. FYI A wide deep saucepan is the best thing to use rather than a normal tall one you'd use for pasta. Tell you what, we'll be having it again. All in it was 5 syns, one HeA and approx 560 calories. Anyway, I'm off to scowl at a sunset.   3. HOLD ON TO YOUR PANTS PEOPLE, I PRESENT TO YOU: A HAM AND CHEESE ROLL. Oh come on, you’d moan if I was showing you complicated stuff all the time wouldn’t you? To be fair you moan when I don’t  too, so I can’t wait – HOOORAYYY FOR ME. I guess the only thing that might catch your eye on here is the coleslaw. I make my own and to be honest, what I dress it with changes like my pants but this time it was: white cabbage, carrots and onions mixed with a mix of reduced fat crème fraiche (1 tablespoon for one syn) Greek Fat Free yoghurt (free), a teaspoon of Dijon mustard (free) and a drizzle of vinegar from a jar of cornichons…. I know… random… but it worked. The cheese is a smoked cheddar for my HeA, the roll is my HeB (54g this time, clearly the runt of the bakery litter) and the ham is ALSO smoked. Not by me. I also fancied some apple, and no it wasn’t so I could point and say “look: speed”, its just because I fancied some apple. And I enjoyed it. So there. All in it was 360 calories. 10 OUT OF 10. She was my fluffy four legged bush buddy - calmly protecting me, keeping me warm, sharing my steak, doing the dishes, chasing swans, collecting tinder, leaping out of the canoe, filling my boots with drool, but most importantly being just the best company anyone could ever want - we had some amazing adventures together over those short few years we shared.   3. I recently walked the Great Glen Way with Mrs In the woods - 78 miles across the Scottish highlands from Ft William to Inverness. We were very lucky with the weather - only one wet day! But the midges were brutal… Having canoed the GGW, I was keen to walk it too - giving me (us) a different viewpoint looking down onto the water rather than up from it. Although much of the route is along forestry tracks amongst dense pine forest, when the vistas did open up, they were breathtaking! I’m afraid I didn’t film this one - it was a walk for us to enjoy without the cameras. B6 🟤 Cashews: Phosphorous. Copper. Protein. Mono fat. B6. Folate. …………… Ingredients Base. 225g cashew nuts 40g sultanas Juice and grated zest of 1 lemon 2 tablespoons Agave or Maple Topping. 100g cashews 80ml fresh lemon juice 60ml agave or maple ¼ teaspoon turmeric 2 tablespoons coconut oil 1 teaspoon grated lemon zest to decorate Method. Base. 1. Put cashews in a food processor and process until coarsely ground. 2. Add sultanas. Lemon juice, syrup and lemon zest and process until the mixture begins to stick together and forms coarse crumbs. 3. Sprinkle the mixture into a 30x10 cm tin lined with parchment. 4. Press down to form a base. 5. Chill in freezer for 20 minutes. Topping 1. Combine the cashews, lemon uice and syrup in a blender and process until smooth. 2. Add the turmeric and blend again. 3. Add the coconut oil and blend thoroughly. 4. Pour over the chilled base and spread evenly with a spatula. 5. Freeze for 2 hours and then transfer to the fridge. 6.   1. Did you know you can order a saya when you buy one of my knife? The wooden sheath is very good to protect the edge of your blade when you are not using it. Even Inside the roll or on your kitchen's magnetic rack. Most of my saya are made from Tulip wood. It's a light and soft wood perfect for blade's protection. The saya I made are custom to the blade and secure with a brass pin. Like everything else they are made by hand, by myself and with love in my workshop.   2. "Favourite tool Friday" Today I would like to present my Kasfly. It's a sand paper holder that can be use for truing the bevels on blades. It's a fantastic tool as it combines the speed and grit of sanding paper with the same motion as stone work. It's a great alternative to the more traditional hand sanding and allow you to work with synthetic or natural stone afterwards. It stay true (flat), you can use any grit, it come with a rubber backing to add some flex and create a more convex bevel. After my horizontal grinding wheel I use the Kasfly to true my bevels. Usually with a 240 grit Rhynowet (red line). It's super abrasive and remove a lot of material to leave a flat surface for the more conventional stone work.   3. What do you need to make a knife ? Steel and wood for material. Forge, anvil, hammer, tongs, files and stones for tools. Your body and your brain (that's important 😂). That's it 🙌🏻.   1. Loaded Hummus with Merguez Sausage, Pickles and Crispy Chickpeas. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I keep getting haunted by plates of loaded hummus on instagram, so I decided it was time to try my own spin on it. This is a homemade hummus base (tinned chickpeas cooked again until super soft, garlic, lemon and tahini, plus ice cold water to make it silky smooth and creamy). I’ve topped it with some homemade pickled red cabbage, a bunch of fresh herbs, some crispy chickpeas (roasted in the oven and dusted with cumin salt) and some oily lamb merguez sausage balls. For the merguez I used a punchy recipe from Ottolenghi which combines the lamb mince with lots of rose harissa, smokey paprika, cayenne and spice. I love how the sausage drips that beautifully bright smokey orange oil into the hummus. It’s divine. We devoured this plate with a good chunk of soft, tearable bread. The crunchy sweet/salty pickles, with the crispy chickpeas, the creamy hummus, the fresh herbs and the spicy meatballs. It’s a perfect mouthful.   2. Cacao Nib, Pistachio and Sage Pesto with Parmesan Pangrattato. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I was gifted a bag of organic raw cacao nibs this week by the lovely team over @forrist . Cacao nibs are unsweetened, broken cocoa beans. They have a crunchy texture and a deep, dark, bitter chocolate flavour. I wanted to use their bitter-sweet earthiness to add depth to a savoury dish. After a bit of googling I stumbled upon @hungryrightnow recipe for cacao nib pesto. Apparently there are lots of Italian recipes that use cacao nibs as a savoury spice. It’s a super easy recipe with some really clever flavour pairings. You blend up the cacao nibs with parsley, sage, roasted pistachios, raisins, garlic and some good quality extra virgin olive oil. Then you mix the pesto into some al dente spaghetti with a good amount of salty pasta water and serve with a sprinkling of parmesan pangrattato. It makes for a really unique twist on a classic pesto. The earthy cacao nibs pair beautifully with the crunch of the pistachios, the sweet raisins and the tangy garlic and herbs. Definitely worth a try if you’re a pesto-head looking for something a little different.   3. Pink Pickled Onions. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ These Mexican pink pickled onions are a staple in my fridge. They go on anything and everything: tacos, sandwiches, salads, scrambled eggs, canapés, cheese, cold cuts, fried rice, avocado toast. There’s not much that can’t be improved by one of these sweet & salty, tangy pink pickles. The recipe couldn’t be more straightforward. One cup sugar, one cup white vinegar, one cup water plus a couple of teaspoons of salt, all heated up and poured into jars stuffed with thinly sliced red onions and a few jalapeños. I also tend to throw in some all spice berries and a couple of star anise. But you can add whatever you like: bay leaves, peppercorns, mustard seeds, cloves, cinnamon sticks. They’re good to eat in a couple of days. Chuck them in the fridge and they’ll last for ages (if you have the discipline!). They’re tangy and sweet and slightly spiced and the beautiful pop of pink is the perfect garnish to any dish. Part of the @buzzworkslife group, the restaurant itself is gorgeous and modern with a welcoming vibe. They are also offering up 30 wines by the glass which I absolutely love as sometimes you don’t need a bottle and it’s nice to have a good selection to choose from. We ordered from the daytime menu and both myself and my Dad went for the Crab Linguine with Fennel, Pink Grapefruit and Chilli. Whilst my Mum went for the Wild Mushrooms on Toast. We also couldn’t resist sides of Mac & Cheese and Chilli Fries. We finished with a round of teas and coffees. We had a lovely lunch and it was great that half of the restaurant was doggy friendly meaning Dexy could come too! N E W O P E N I N G 🍽️ [ad/pr invite] Small Plates, Good Wine & Great Times at Brand New @dublinstreetsocial 🍷🥩🌱 I’m back with another exciting new opening for you guys and you’ll find this one in Edinburgh’s gorgeous New Town. @dublinstreetsocial is a new bar and bistro offering up small plates perfect for sharing, great wine as well as bonus points for being doggy friendly. We shared three of their small plates as a main and my favourite just had to be the Scottish Sirloin Steak on a bed of Lyonnaise Potatoes and Warm Bread just perfect for soaked up the juices and all of that wild garlic and bone marrow butter. Rich, indulgent and absolutely delicious! We also tried the Charcoal Barbecued Boneless Chicken Thighs with a Chimichurri Mayo which were tender and tasty and the Confit Garlic and Chilli Flat Breads with Teriyaki Pork Shoulder and a Sesame & Lime Slaw. For dessert we enjoyed the Salted Caramel and Chocolate Ganache Tart with a Caramelised Banana Ice Cream - the ice cream was incredible! A strong 10/10. We also had a lovely bottle of wine but I’ll definitely be back to try their lovely looking cocktail menu. The welcome was warm and friendly despite the pouring rain and we had such a lovely visit with tasty food and great wine.   2. 📍 MOUNTAIN This place has been all the rage lately - expectations were high as it was set up by Tomos Parry, founder of @bratrestaurant and it’s been booked up since it opened. It definitely lived up to expectations. It’s bigger than Brat and based in Soho, but the same style of cooking over fire and I love that the kitchen is basically part of the restaurant so you can see the chefs at work. We went as a group of 4 which I’d recommend as you can try more of the menu.   3. These humungous sandwiches could only mean one thing - we FINALLY visited @sandwichsandwichuk 🥪 Ridiculously late to the party I know. We went for: 🔸 Egg mayo - Crushed Free Range Eggs, Mayonnaise, Vine Tomato & Rocket 🍳 🔸 Chicken Kyiv - Breaded Chicken, Pulled Bacon, Garlic, Parmesan, Herby Soft Cheese, Caramelised Red Onions & Iceberg Lettuce 🐓 (no cucumber so we subbed for tomato) We went at 4pm on a Saturday to the Gresham Street branch. They were running out of a few things - no cucumber for the chicken Kyiv, initially we were told no tomatoes. BUT the sandwiches were delicious. Loved the egg but probably wouldn’t order again unless I was eating in the comfort of my own home cos it was a MESS 😂 egg in the hair and all sorts. Rated the chicken Kyiv but I’m glad we went half half as a whole one might have been too much. We also got a scotch egg which we couldn’t finish there and then but it was a delight the day after.   1. 🌮 Chicken and Cauliflower Taco 🌮 . Can you believe this is my first time making tacos? 😂 I always used to eat them out . I made two types of tacos 💫 Spicy Chicken 💫 Spicy Cauliflower . I marinated chicken thighs and cauliflower in chilli powder, paprika, onion powder, garlic powder and salt. This was then sautéed or can be cooked in the oven. . I made Pico De Gallo by mixing chopped tomatoes, lime juice, chopped chillies, chopped cilantro, chopped red onion and salt. This is perfect for honestly anything, I love them with chips. . I also used some fresh red cabbage, fresh avocado and @violife_foods shredded cheese [AD] as toppings. I honestly prefer vegan cheese to real cheese and this one was perfect. For the tacos I used store bought ones. Anyone knows a good recipe for soft or hard taco shells hit me up. 😂 . Food staples are VAT free. …..on a side note, ever wondered why Jaffa Cakes are determined to always be a cake?…..cakes are staples and VAT free; chocolate covered biscuits are luxuries and liable to VAT…… Anyway…… That means businesses that buy ingredients in can’t offset their VAT bills at the end of the financial year. That means bigger VAT bills for hospitality businesses to pay. A reduction to 10% for hospitality would be a simple solution to keep the industry above water!   2. 💌 A LOVE LETTER TO SUGO 💌 Honestly when somewhere gets so much hype you almost always take it with a pinch of salt however @sugopastaglasgow has to be the exception to this rule! We've never had anything less than a great meal and it's so affordable! 🍝 This time I went for the special ravioli which was mushroom and truffle (literally my dream flavour combo) and bf had the pappardelle - LOOK AT THE RAGU!!! 🔥 We also shared some burrata and bread. Everything was so well balanced and good to perfection as always, the team on were also lovely! I think every single person greeted us and said goodbye! 🥰 It's pretty rare to not find a single fault in a place but Sugo really nails it on all fronts for us, we walked out there and both said that was just such a nice experience!
