  1. From the moment we set off, Fin and I had no idea just how much this race would challenge us, change us, and bring us closer together. We’ve crossed countries, faced setbacks, ran for buses (too many times), and soaked in moments I’ll never forget. From the laughs to the tears, every mile has meant something. 🇨🇳🇳🇵🇮🇳 This was THE most amazing opportunity I’ve ever had and to be honest I don’t think I can ever top it! We’ve literally been able to see parts of the world I never dreamed I’d visit! What a wild, emotional, unforgettable ride.🏃🏼‍♀️‍➡️ We’ve experienced so many new things and we met so many amazing people of different cultures and backgrounds. It was such a valuable experience and I cannot express how grateful i actually am to have been able to be a part of it!🌏 But what really stayed with me were the strangers who became lifelines, the people who helped us without hesitation, offered directions, a meal, or just any information when we needed it most. I’ve made some lifelong friends in the team and cast, as well as learned so much more about myself and what I can accomplish.🏃🏻‍♀️‍➡️ On top of that I now know that any ups and downs me and Fin will face we can obviously overcome it because we completed Race Across The World together successfully (with a few bickers)!!💃🏻 I cannot recommend travelling this way more to anyone! I get that not everyone will be lucky enough to have this opportunity but if this journey has taught us anything it’s that you can seriously do anything as long as you put your mind to it.🫶🏻 Super excited to see what our next journey will hold for us. SW SPAGHETTI CARBONARA 🍝💛 Happy Monday lovelies 🌸 I made this lovely slimming friendly & super easy take on a Carbonara at the weekend & oh my goodness, idk why I don’t have it more often?!! 😍 It’s not traditional but inspired by a carbonara 😅✨ SYN FREE & Carb HEAVEN 🤪 It does look quite a big portion but I promise it’s just the angle! 😅 Could have had a bit more salad tbh but oh well 🤷🏻‍♀️ To make (recipe & ingredients for 1 portion): I boiled 1 portion of spaghetti (free) in a pan of boiling water according to pack instructions and then cut up 3 slices of bacon 🥓 (protein/ free - all visible fat removed) and diced half an onion 🧅 (speed) and I fried this on the hob until cooked! 🔥 Then in jug I mixed 4 tbsps of Quark (free - fat free cream cheese), 2 tbsps of Parmesan 🧀 (HEX A), 1 egg 🥚, salt & pepper 🧂, sprinkle of dried/ fresh parsley! 🌱 Then mix all this together to make the sauce! 🙌🏻 Once the spaghetti is cooked I drained & added in the sauce off the heat so it didn’t curdle! MALTESER ROCKY ROAD HEARTS ❤️ Happy Sunday lovelies 🌸 So I had some malteser bunnies / Easter choc leftover 🐰🐣 so decided to use them to make some rocky road! 😍 Have you got any Easter choc leftover? Make ROCKY ROAD! 🍫 170 𝗖𝗔𝗟𝗦 / 8.5 𝗦𝗬𝗡𝗦 𝗳𝗼𝗿 𝗵𝗮𝗹𝗳 𝗮 𝗵𝗲𝗮𝗿𝘁! They are quite sweet & super chunky in my mould so you could even half again into smaller pieces 💁🏻‍♀️ Inspired by @eatuplondon 🥰 You can use any Easter choc or simply use maltesers if you don’t have any! The joy of rocky road is that you can pretty much use anything! 👏🏼It’s so easy to make & I cut up the hearts before eating & to show you the middles 🤩 Method - this made 8 hearts / 16 cut into 2: 💛 Firstly I melted 150g of milk chocolate 🍫 & then filled the bottom of my heart mould 💛 I crushed up some maltesers using a rolling pin & added these into the mould 💛 I let this set in the fridge for 20 mins before then adding the next layer! 💛 Next I added some mini marshmallows 💛 And then melted 150g of white chocolate 🤍 & then filled the top of the heart moulds 💛 Finally I added a white or milk malteser bunny on the top along with some whole maltesers and some more mini marshmallows! 💛 Leave to set in the fridge for over an hour / until they are hard Then you have yourself some malteser rocky road 😍 It’s so nice (I’ve had 2 hah) but going to give the rest out to family & friends! CHOC ORANGE CHEESECAKES 🍊💛 Happy Wednesday lovelies! 🌸 Need to use up some christmas choc? 🍫 I know I do! 😂 Got a lil on plan treat for you 🙌🏻 7.5 - 8 SYNS per cheesecake pot 😍 (the white is 0.5 SYNS more) They are so DREAMY! ✨I am obsessed with @terryschocolateorange 🍊 The best part is they only take 5 mins to make! 🥳 Ingredients/ instructions (for 2): 💛 Crush 2 @lotusbiscoffuk biscuits (4 SYNS) - I tend to do it in a bowl with a rolling pin & divide between the two pots as the base 💁🏻‍♀️ 💛 Then mix 3 tbsps of quark (free) or you could use cream-cheese & 2 tbsps of 0 fat Greek yoghurt (free) in a bowl! Then if you want to make both flavours pictured divide into two separate bowls! 🙌🏻 🤍 For the white chocolate I mixed in 2 tbsps of Options white hot chocolate powder / an 11g sachet (2 SYNS) 🤎 For the milk chocolate I mixed in 2 tbsps of Options Belgium chocolate orange 🍊 / 11g sachet (1.5 SYNS) 💛Once mixed, spoon your mixture(s) into your pots & then they are ready to top! 😜 For the toppings on both I cut up one segment of each chocolate Orange flavour & sprinkled on top & then placed a whole segment on top! (2 SYNS per segment so 4 SYNS on top per cheesecake) & I also added a little grated Orange! 🍊 Then voilá you have yourself a cheesecake pot! 😍 You can do any flavour you like so if you have after eights you could use a mint hot chocolate etc!
