This is your sign to start your Christmas cake… My favourite tradition of them all ✨ Save this post for your Christmas cake recipe for years to come 🫶🏽 If you have been here for a while you will know that it’s my forever tradition to bake my Christmas cake on August bank holiday and then feed it weekly from now until Christmas Eve ready to decorate with Olivia before church ✨ To make your Christmas cake you will mix : 350g sultanas 175g raisins 500g currants 350g halved cherries Zest of two oranges and the juice 150ml @tesco Brandy Stir up and leave at least 24 hours Then: Cream together 250g light brown sugar 250g butter 4 eggs 1tbsp black treacle 1.5tsp mixed spice 75g blanched chopped almonds 275g plain flour Then stir in your fruit mix Double line a cake tin with baking paper higher than the tin and on the base, I use a tin that has a side release to make it easier to get the cake out … these are golden!! It’s a 24cm spring form tin from @lakelanduk Add your mix … and place a piece of cut out baking paper on top of the cake to stop it burning! Put into the oven on 140 and cook for 4 hours … at this point I hope you have your Christmas music on because your home is going to be the ultimate Christmas smell!!! Then after 4 hours remove the cake and allow cool … wrap it in baking paper and then tin foil or brown paper and store In a cake tin … then every week from now until Christmas take the cake out and feed it! So to feed put tiny holes in the cake I use a cocktail stick and brush over brandy ~ be as generous as you like ~ I quite like a drunken cake 🙊 each week turn the cake so that you feel from the top one week then the bottom the next this allows the brandy to evenly distribute and you cake to be AMAZING!!!!! I decorate mine on Christmas Eve while making mince pies before church … traditions 🫶🏽 I’ll simply coat it in apricot jam, cover in rolled marzipan and coat in royal icing and stick my little old snowman on top 👌🏽 … simple-ly perfect 🫶🏽 Merry Monday 🫶🏽 #christmas #christmascake #christmascakerecipe #bakewithme #christmascooking #homemade #christmastraditions

  1. From the moment we set off, Fin and I had no idea just how much this race would challenge us, change us, and bring us closer together. We’ve crossed countries, faced setbacks, ran for buses (too many times), and soaked in moments I’ll never forget. From the laughs to the tears, every mile has meant something. 🇨🇳🇳🇵🇮🇳 This was THE most amazing opportunity I’ve ever had and to be honest I don’t think I can ever top it! We’ve literally been able to see parts of the world I never dreamed I’d visit! What a wild, emotional, unforgettable ride.🏃🏼‍♀️‍➡️ We’ve experienced so many new things and we met so many amazing people of different cultures and backgrounds. It was such a valuable experience and I cannot express how grateful i actually am to have been able to be a part of it!🌏 But what really stayed with me were the strangers who became lifelines, the people who helped us without hesitation, offered directions, a meal, or just any information when we needed it most. I’ve made some lifelong friends in the team and cast, as well as learned so much more about myself and what I can accomplish.🏃🏻‍♀️‍➡️ On top of that I now know that any ups and downs me and Fin will face we can obviously overcome it because we completed Race Across The World together successfully (with a few bickers)!!💃🏻 I cannot recommend travelling this way more to anyone! I get that not everyone will be lucky enough to have this opportunity but if this journey has taught us anything it’s that you can seriously do anything as long as you put your mind to it.🫶🏻 Super excited to see what our next journey will hold for us.
