  3. Today is the first anniversary of our eldest child Deborah’s death. Deborah came into the world full of energy and never stopped over the next 40 years. The past 12 months have not been easy but we remember with immense pride and love the amazing impact she had on so many lives and the incredible legacy she has left. We were young parents when Deborah was born and the first cuddles and touches with your firstborn are something you remember for ever and cannot be taken away from you - life with Debs was always interesting, fun, and manic but there was always a determination in her to help others achieve their full potential especially in her teaching career. When first diagnosed with Bowel Cancer it took us time to realise the seriousness of her diagnosis but we immediately knew she wanted to share her story with others to establish open communication about a subject that many considered a taboo - you will all agree she succeeded ! We followed and supported her work in the last 5 years of life but also remembered we were there as her ever loving parents and grandparents to her children. In what became very difficult times it was wonderful to see the immense love and support she received from her husband Sebastien and their children, her siblings Sarah & Ben together with the unwavering support of their families. During her final weeks at home the atmosphere was unique but most importantly loving - we all understood what the end would be, although I struggled to believe that Deborah was facing the end of her life that she loved so much, but there was a determination to enjoy every last minute and experiences we had together. Although I’m sure nobody expected that Prince William would join us for tea & champagne!! Deborah you always provided a challenge but it was your ability to put it in the right direction and communicate so brilliantly that made a difference. As your brother said on the eve of your funeral - from the beginning you taught me how to live - you had that effect on far more people than you ever knew and that is why you were so loved and are now so missed - Deborah we love you for ever.   3. Marion’s Vanilla Ice Cream This much loved recipe was found after months of looking, scrunched up underneath Mum’s vintage meat mincer, with a label saying “do not touch”. We can only assume this was directed at our Dad… We are incredibly grateful to have found it, as she never showed anyone how to make her vanilla ice cream. She probably thought we just knew from watching her make it so many times, the task has been on us to try and recreate it. She used her Gaggia ice cream machine almost weekly to make huge amounts of this delicious vanilla ice cream, which she would serve to guests at every opportunity. Her secret was to add a huge amount of real vanilla, and serve it with homemade chocolate sauce. I couldn’t look at her ice cream machine after she died, I actually hid it from view. But with time it’s been bought out cleaned and has been humming away making ice cream all Summer long. I know that would make Mum so happy. 200ml whole milk 2 vanilla beans, split 4 egg yolks 80g sugar 200ml heavy cream 1/2 teaspoon sea salt Split the vanilla beans and scrape the vanilla out. Put the milk, the vanilla, and the bean husks into a small saucepan and heat to just before the boiling point. Remove from heat, cover, and let stand for 15 minutes. Remove the vanilla husks and let the milk cool. In a separate bowl mix the yolks, sugar, double cream and sea salt. Then add the cooled vanilla milk and stir well. Pour into a pre-cooled ice cream maker and set the timer for 30 minutes. Once beaten you should have beautiful vanilla ice cream. Decant into an ice cream tub and store for at least 8 hours in the freezer before serving, or until needed.

It’s 2026 can we all agree that vegans don’t have protein deficiencies yet? 🌱 It’s one of the most common misconceptions I still hear, so here’s a breakdown of the protein sources in this dish: • Lentil Pasta: 17g protein per 100g • Peas: 5.7g protein per 100g •Tempeh: 22g protein per 100g •Pumpkin seeds: 24g protein per 100g •Sunflower seeds: 20g protein per 100g •Silken tofu: 7g protein per 100g •Cashews: 18g protein per 100g •Nutritional yeast: 47g protein per 100g That’s 8 plant based protein sources, totalling around 145g of protein in the full recipe and almost 50g per serving! Pasta sauce: 50g wild garlic 50g toasted cashews 40g nutritional yeast 20g rocket 250g peas 1 garlic clove 100g silken tofu Salt and pepper (to taste) ½ lemon juice 25ml olive oil 1 vegetable stock cube 100ml pasta water This pasta sauce was inspired by and adapted from @bosh.tv rocket, pea and pistachio pesto linguine - a recipe from their new cookbook ‘More Plants’ which I highly recommend for anyone looking to eat more plant protein and fibre! Tempeh: 1 block tempeh 1/4 cup pumpkin & sunflower seeds 1 tbsp olive oil 1 tsp maple syrup 1 tbsp soy sauce 1 tbsp nutritional yeast 1 tsp smoked paprika 1 tsp garlic granules Pinch of salt & pepper Method: 1. Prep and blend all the pasta sauce ingredients, adding pasta water once the pasta is cooked 2. Cook the pasta (I used a pack of @allplants plants 215g red lentil pasta for 3 portions but you could use about 280g if you wanted to serve 4) 3. Chop, season and air fry the tempeh & seeds at 200°C for 8-10 mins 4. Stir the sauce through the pasta and heat gently 5.
