WEEK 5 | MEAL 3: BABE ON A BUDGET TAKES THE WEEKLY SHOP 🛒🛒🩷🩷 MEAL 3: MARRY ME BUTTERBEAN LASAGNE 🍴 3 portions* ⏰ 35 minutes Store cupboard essentials: oil, minced garlic, smoked paprika, mixed herbs, cayenne pepper, salt & pepper, veggie stock cube, lasagne sheets Ingredients - 1 red onion - 1tsp minced garlic - 70g sun-dried tomatoes - 1tbsp tomato purée - 400g butterbeans - 1tsp smoked paprika - 1tsp mixed herbs - 1tsp cayenne pepper - Salt & pepper - Veggie stock cube - 6-8 lasagne sheets - Handful spinach - 1-2tbsp creme fraiche - Handful fresh basil - Cheddar cheese - 1 garlic baguette To make... 🫘 Dice up your red onion & fry off in the oil from your sun-dried tomatoes and once softened, add minced garlic and continue to cook for 2 minutes. 🫘 Dice up your sun-dried tomato into teeny tiny chunks and add them into the mix along with your tomato puree. 🫘 Mix well before adding your drained butterbeans and seasoning with smoked paprika, mixed herbs, cayenne pepper & salt and pepper. Mix well. 🫘 Add 500-600ml of veggie stock and bring to a simmer before breaking in your lasagne sheets. 🫘 Make sure they’re covered - adding more stock if needs be. Bring to the boil, cover and simmer for 10-12 minutes, regularly separating the sheets with a fork. 🫘 Stir through spinach, creme fraiche and fresh basil before topping with a generous handful of cheddar cheese and popping under the grill for 5 minutes. 🫘 Serve up with garlic bread straight from the oven and enjoy! *BULKING OUT OR DOWN? This serves 3 but you can easily bulk up with more lasagne sheets! 🫙 Store in the fridge in an airtight container & reheat until piping hot. Please do feel free to shop around, you may well get it cheaper! 🫰🏼 YOUR SHOPPING LIST: 1kg Greek Style Natural Yoghurt 150g Chia Seeds 150g Raspberries 100g Dark Chocolate 1 Cauliflower 3x Red Onions 200g Paneer Tikka Paste Pots 400ml Coconut Milk 400g Chickpeas 400g Chopped Tomatoes 250g Microwave Rice Mango Chutney 2kg White Potatoes 200g Extra Firm Tofu 56g Shawarma Seasoning Little Gem Lettuce Small Cucumber 100g Sun-dried Tomatoes Tomato Purée 400g Butter Beans 120g Baby Leaf Spinach 300ml Crème Fraiche Fresh Basil 220g Cheddar Cheese Garlic Baguette x2 2x Bell Pepper 250g Flat Top Mushrooms Avocado 300g Tomato & Mozzarella Tortellini 🤠 = £33.97 Spend your additional £1 on wraps if you cannot be arsed making your own!   3. Today is the first anniversary of our eldest child Deborah’s death. Deborah came into the world full of energy and never stopped over the next 40 years. The past 12 months have not been easy but we remember with immense pride and love the amazing impact she had on so many lives and the incredible legacy she has left. We were young parents when Deborah was born and the first cuddles and touches with your firstborn are something you remember for ever and cannot be taken away from you - life with Debs was always interesting, fun, and manic but there was always a determination in her to help others achieve their full potential especially in her teaching career. When first diagnosed with Bowel Cancer it took us time to realise the seriousness of her diagnosis but we immediately knew she wanted to share her story with others to establish open communication about a subject that many considered a taboo - you will all agree she succeeded ! We followed and supported her work in the last 5 years of life but also remembered we were there as her ever loving parents and grandparents to her children. In what became very difficult times it was wonderful to see the immense love and support she received from her husband Sebastien and their children, her siblings Sarah & Ben together with the unwavering support of their families. During her final weeks at home the atmosphere was unique but most importantly loving - we all understood what the end would be, although I struggled to believe that Deborah was facing the end of her life that she loved so much, but there was a determination to enjoy every last minute and experiences we had together. Although I’m sure nobody expected that Prince William would join us for tea & champagne!! Deborah you always provided a challenge but it was your ability to put it in the right direction and communicate so brilliantly that made a difference. As your brother said on the eve of your funeral - from the beginning you taught me how to live - you had that effect on far more people than you ever knew and that is why you were so loved and are now so missed - Deborah we love you for ever.
