  3. Today is the first anniversary of our eldest child Deborah’s death. Deborah came into the world full of energy and never stopped over the next 40 years. The past 12 months have not been easy but we remember with immense pride and love the amazing impact she had on so many lives and the incredible legacy she has left. We were young parents when Deborah was born and the first cuddles and touches with your firstborn are something you remember for ever and cannot be taken away from you - life with Debs was always interesting, fun, and manic but there was always a determination in her to help others achieve their full potential especially in her teaching career. When first diagnosed with Bowel Cancer it took us time to realise the seriousness of her diagnosis but we immediately knew she wanted to share her story with others to establish open communication about a subject that many considered a taboo - you will all agree she succeeded ! We followed and supported her work in the last 5 years of life but also remembered we were there as her ever loving parents and grandparents to her children. In what became very difficult times it was wonderful to see the immense love and support she received from her husband Sebastien and their children, her siblings Sarah & Ben together with the unwavering support of their families. During her final weeks at home the atmosphere was unique but most importantly loving - we all understood what the end would be, although I struggled to believe that Deborah was facing the end of her life that she loved so much, but there was a determination to enjoy every last minute and experiences we had together. Although I’m sure nobody expected that Prince William would join us for tea & champagne!! Deborah you always provided a challenge but it was your ability to put it in the right direction and communicate so brilliantly that made a difference. As your brother said on the eve of your funeral - from the beginning you taught me how to live - you had that effect on far more people than you ever knew and that is why you were so loved and are now so missed - Deborah we love you for ever. Jamaican Style Oxtail Mac & Cheese Recipe 🇯🇲🔥 SAVE & share if you’d try this one ❤️ ✨Ingredients (Oxtail): • 1 kg oxtail (cut pieces) • 2 tbsp all-purpose seasoning • 1 tsp black pepper • 1 tbsp minced garlic • 2 tbsp green seasoning • 1 tbsp Worcestershire sauce • 1 tbsp browning • ½ red, ½ green & ½ yellow bell pepper (diced) • 1 small onion (diced) • 1 tbsp brown sugar • 1 tbsp oil • 3–4 cups hot water (as needed while cooking) 🧀 Ingredients (Mac & Cheese): • 400g macaroni (I use spirali) • 3 tbsp butter • 3 tbsp flour • 3 cups whole milk • 1 cup grated cheddar • 1 cup grated mozzarella • ½ cup grated red Leicester (for colour & flavour) • 1 tsp all-purpose seasoning • ½ tsp salt • ½ tsp Aromat 🔥 Method: 1️⃣ Season oxtail with all-purpose, black pepper, garlic, green seasoning, Worcestershire sauce, browning, bell peppers & onion. Marinate overnight if possible. 2️⃣ Heat oil in a pot, caramelise brown sugar, then add oxtail and mix. Cover and let it release its natural juices. 3️⃣ Add hot water from the same bowl you seasoned in, pour over oxtail and slow-cook 3 hours (or pressure cook ~45 mins) until tender and falling off the bone. Once cool, debone it. 4️⃣ For the mac & cheese: melt butter, whisk in flour to form a roux, then slowly add milk while whisking till smooth. 5️⃣ Season with all-purpose, salt & Aromat, then remove from heat and stir in all three cheeses until creamy. 6️⃣ Fold in the cooked macaroni. 7️⃣ In an ovenproof dish, layer shredded oxtail at the bottom, add a sprinkle of cheese, top with creamy mac, then finish with more cheese. 8️⃣ Bake at 180°C (350°F) for 20–25 mins, then broil 5 mins for that crust 👌🏽 Would you try this combo? 👀

  3. Hot Cross Bunnies 🐰 These adorable Easter-inspired buns are soft, spiced, and packed with dried fruit, just like classic hot cross buns but with a cute bunny twist. Perfect for a fun springtime bake - save for your Easter baking inspo! 
Here’s how to make them . . . Makes 10 Ingredients: 
For the dough:
500g bread flour
7g fast action yeast
1 tsp salt
1 tbsp mixed spice
1 tbsp ground cinnamon
110g mixed dried fruit
50g golden caster sugar
1 egg
250ml full-fat milk
65g butter, melted For the cross paste:
50g plain flour
3-4 tbsp water For the glaze:
2 tbsp granulated sugar
2 tbsp boiling water Make the dough by mixing all the dry ingredients in a bowl. Melt the butter, remove from heat, then stir in the milk. Add to the bowl with the egg and mix. Knead for 8 to 10 minutes until smooth and elastic. For the first proof, place the dough in an oiled bowl, cover, and let it rise for two hours until doubled in size. Shape the bunnies by knocking back the dough and dividing it into two parts at a 2:1 ratio. Shape ten dough balls from the larger part for the bunny heads and twenty smaller dough pieces for the ears, using the smaller portion. Attach the ears to the heads and place them on lined trays. Cover and let them rest for 30 minutes while the oven preheats to 190ºC. Pipe the cross by mixing flour and water into a thick, pipeable paste. Transfer to a piping bag and decorate the bunnies. Bake for 20 to 25 minutes until golden brown. For the glaze, mix boiling water and sugar, then brush over the warm bunnies for a glossy finish.
