  2. 60 Minute Sundays- Episode 3🩷🍌🍓🍅🍫 Welcome to my new meal prep series where I’m going to show you how to turn 1 hour on a Sunday in to 3-4 days of healthy breakfasts, lunches and snacks for the week ahead to show you that healthy eating shouldn’t be expensive, time consuming or complicated! ❤️ This also wasn’t too expensive, it cost me around £15 for all the bits and bobs I needed 🥰🛒 also thank you @foodthoughtsuk for sending me the cocoa powder and chocolate chips, they’re sooo delish!!!🥰🩷🍫 Baking Tray Pancakes 🍓 Ingredients ⬇️ - 100g oats - 120g self raising flour - 2 eggs - 5 tbsp honey - 1 tsp cinnamon - 1 tsp baking powder - 285-300ml milk - 1 large handful raspberries, 1 large handful of strawberries (halved) 1 large handful blueberries, 1 banana, sliced in to coins Recipe⬇️ - Preheat the oven to 180 degrees (fan assisted) - Add all the ingredients to a baking tray (except for the fruit) and mix well to combine, add the extra milk if it looks a little thick (some plant based milks are a bit more runny) - Add the fruit evenly on top and then bake for 18-22 minutes - Leave to cool before slicing - Store in airtight containers for up to 4 days - You can reheat for 30-40 seconds in the microwave, place them in the toaster or air fryer and serve with Greek yoghurt and a drizzle of honey for breakfast! Chocolate Chia Loaf 🍫 Ingredients⬇️ - 200g self raising flour - 30g cocoa powder - 80g chia seeds - 80g oats - 120g honey/maple syrup - 300ml milk - 60g olive oil - 100g dark chocolate chips Recipe⬇️ - Preheat the oven to 180 degrees. -To a large bowl, add all the ingredients and mix well until combined until you get a thick batter - Transfer to a lined loaf tin, top with some extra chocolate chips if you fancy and bake for 45-55 minutes or until a skewer comes out mostly clean, that way it stays fudgy as the chia seeds firm up when it starts to cool so make sure you don’t over bake it! 🩷 - Leave to cool completely before slicing - Store the slices in an airtight container for up to 5 days or freeze for up to 3 months, leave to defrost in the fridge overnight or place in the air fryer or microwave to reheat!

We are still basing our plate on carbohydrate ‼ 🍞 But this time we’re going for a wholegrain for slower digesting carbs and added fibre and protein 🥑 Avo is packed with fibre and healthy fats which helps our digestive system and hormones 🍳 Eggs are a brilliant protein source and the yolks are full of fat soluble vitamins that our body needs (why pairing with avo makes this even more nutritious as it helps them absorb!) 🌾 Adding some seeds for extra fibre, protein and crunch then seasoning our plate replaces any electrolytes we might need By doing this we are giving our bodies everything they need to support our training and our daily life.   1. What Jenn ate: a food journal for my big sister Since losing Jenn, I’ve been finding small ways to keep her close. Food feels like one of the most natural. It holds so many of our memories. She was a big foodie, and so many of our best moments revolved around food. This is my food journal for her. Food memory 2: blueberry & almond bostock Bread Addiction in Southsea, one of my favourite bakeries, probably Jenn’s too. I think it was around 2021 when we first discovered their blueberry & almond bostock. Thick slices of brioche, soaked in syrup, covered in almond frangipane and bursting blueberries. We became completely obsessed. It became one of our staples. The last time we ate together was December 22nd. The night before, we had our early (very merry) Christmas, and I ended up taking her back to mum’s house to get her showered and sobered up. After, we sat on the sofa chatting for hours, about the future, about everything. Eventually we fell asleep side by side. The next morning, she went off to run errands. But she came straight back (very rare with a raging hangover), with pastries from @breadaddiction . Including a blueberry bostock. That was our last breakfast together. Recipe (serves 4)
- 4 slices thick brioche
~120g blueberries (I prefer frozen options, slightly thawed)
- Frangipane: 100g soft butter, almond extract, 80g caster sugar, 1 egg, 100g ground almonds (you can process whole almonds to make your own if you prefer too!) Method: 1. Mix soft butter, a good splash of almond extract, and caster sugar until they start to become creamy. Then add your egg, mix well. Then stir in ground almonds. 2. Layer brioche slices onto a tray, then add your blueberries evenly, then your frangipane mix, you can flatten slightly but it is not essential, as it will spread once it gets hot. Then top with flaked almonds. 3. Bake at 180°C (fan) for ~20 mins until golden. Dust with icing sugar.   2. Last week, the worst thing I could have ever imagined happened. I lost my sister. My best friend. My darling. "My rock". Jenn was the big sister everyone deserved. I attribute everything I’ve achieved to her constant supply of love. She gave me my career. It was Jenn who encouraged me to become a dietitian, just as she began her journey into nursing. She thought it would be something I would be good at. Watching her find the confidence to go back to college to even apply for university gave me the courage to take the same leap. She gave me my partner. Because she inspired me to go to university, I met the person I now share my life with, someone who shares many of Jenn’s best traits (I count myself double lucky). We celebrated our 8-year anniversary just days before her passing. She gave me amazing friends. Together, we built a beautiful circle of people (with a dark sense of humour) who’ve stood by us through everything, including all of the darkest moments, past and present. She gave me family. Jenn was the glue in our small family. She often made plans even when she was exhausted from working nights. She had an endless capacity to love, often at the cost of her own energy, her own peace. In fact even in her passing she's been working over time to spread love, reuniting mum and me with many family members, which frankly never would have happened otherwise. In her passing, she’s given me a reality check: that life is too short not wear your heart on your sleeve. She never stopped telling me how she loved me, and how proud she was. I want to make others feel the way she made me feel. I won’t do it as seamlessly as she did, of course. To the love of my life. Thank you for everything. I can't wait to see you again. On posting, I've considered deleting this account. It's distracted me from her, and questioned if things might be different without it. But she loved seeing my posts. Instead, I'll return when I'm ready. Content might be less frequent, it might be different. But it's the least of your worries, and mine. If you have some memories with gorgeous Jenn I would love to hear them, or if you're struggling with loss I am here to share the pain.

  3. Is food before 1 year old just for fun? We have many parents asking this question, with many unsure of the importance of solid food in the first year. So how much food does a baby need in their first year of life and is the introduction of solids just that an introduction and should be classed as just fun? What are the official guidelines for parents on introducing food. For the first 6 months babies nutritional needs will be met by breast of formula milk no other means of nutrition is needed up until this point. Babies should begin to wean at approx 6 months and should remain breast fed or formula fed for as long as possible up to this point. At 6 months old breast or formula no longer meet the full nutritional needs of a baby alone and the transition of weaning begins. The main reason for this is a baby is born with a store of iron that last up until they are 6 months then begins to run out they then need iron rich foods to maintain a healthy level. So nutritionally babies need to be gradually over the next 6 months through the 3 stages of weaning increase their soild food intake and decrease their breast or formula intake. By a year old babies should now be eating 3 good meals a day and 2 snacks, milk feeds should have reduced to 2 larger feeds morning and night or 3 small feeds morning, afternoon and night. Between 12- 15 months babies can transition fully on to cows milk from breast or formula. For those on a plantbased diet formula or breast milk should continue until a baby is 2 years old as many plant based milks do not meet their nutritional needs up until then.
