  1. This is my secret weapon for Christmas (or any other dinner party) when I want to make something super satisfying without overloading on sugar. It tastes incredibly rich and indulgent, is super quick to make, and is always a hit! Enjoy ❤️ For the base - 1 cup walnuts 1/2 cup Brazil nuts ½ cup toasted buckwheat ½ cup sunflower seeds 2 medjool dates 3 tbsp milled flaxseed 2 tbsp water For the mousse - 2 large, ripe avocado 2 medium sweet potatoes, roasted and then peeled ¾ can coconut milk, making sure you get all of the solidified cream from the top before adding the liquid ½ cup coconut oil 1 cup raw cacao for a dark chocolate tasting mousse, ¾ cup for more of a milk chocolate mousse 8 medjool dates 4 tbsp maple syrup (optional) pinch of sea salt 1 tsp vanilla • Blitz the base in a food processor and then press into your springform pan. • Clean the food processor and then blitz everything together for the mousse. • Pop the mousse on top of the base and then transfer to the freezer for at least 6 hours, or up to one week. I was just crowned a winner of the @theeuropean.fertility.society global awards as the Best Fertility Nutritionist / Dietitian 😱 Not only that but I was joint winners with my all time favourite fertility dietitian @the_dietologist who was/is a trailblazer over in Australia, who has been a massive inspo for me in my practice.   2. My beautiful big bro 🫶🏻 He has sadly been diagnosed with stage 4 brain cancer 💔 I have been in Australia the last few weeks supporting him through treatment. So far he has had no ill effects to chemo or radiotherapy which is wonderful news. May it long continue 🙏🏻 Please send positive vibes his way. Thanks for all the DMs wondering where I am and all the support and love I’ve received from family and friends here and the UK. I am so grateful for this time with him and his family.
