I’m going to start sharing more of my go-to recipes in the hope it’s of interest 😂 I thought I’d start with the ultimate sandwich roll recipe - it’s really easy, even if you’ve never made bread before. I baked these earlier today for the first time in a while and forgot how good they are. They freeze really well but are also excellent straight from the oven smothered in butter, or great as a simple ham sandwich for lunch 🫡 INGREDIENTS 500g strong white bread flour (+ extra for dusting) 7g instant dried yeast 7g salt 40g caster sugar 40g unsalted butter, cut into small pieces, softened 320ml (ish) warm water METHOD 1️⃣ Tip flour, yeast, salt, sugar, butter and about 200ml water into a bowl. Stir to mix, adding more of the water, at this point it should be soft but not too wet, add extra flour or water if you need it. 2️⃣ Knead it with your hands until it’s smoother and resembles dough. Cover and leave to rise until doubled in size, usually about two hours. 3️⃣ Lightly flour a surface and tip the dough onto it. Fold it in on itself to knock the air out, kneading it and bit more. 4️⃣ Weigh the ball of dough and divide it by 12. Knead and shape each piece, using extra flour if it gets too sticky. Place each one on a lined baking tray. 5️⃣ Once all the balls are shaped, leave them to prove for another hour or so until they’re doubled in size. 6️⃣ Dust the top of the rolls with flour before putting them into a hot oven (around 200°C) for 12-15 minutes, or until golden brown. Keep an eye on them so they don’t burn. 7️⃣ Leave them to cool, or enjoy warm slathered in butter.   3. The easiest, tastiest one pot, accidentally vegan dinner. The full recipe is below, but I genuinely eat this tomato and chickpea orzo all year round and I never get bored of it. Please let me know if you’re planning to make it or when you do, I promise it’s good, especially now the weather is getting a bit colder. This recipe makes about three portions 💫 INGREDIENTS 350g cherry tomatoes 3 crushed garlic cloves 170g orzo 570g jar chickpeas (I use @boldbeanco queen chickpeas and include the stock they come in) 1 tablespoon Italian herb seasoning 1 tablespoon tomato puree Salt and pepper to taste 480ml vegetable stock (I use @knorruki vegetable stock pots) 120g spinach Grated Parmesan METHOD 1️⃣ Pre-heat the oven to 200’C Throw all your ingredients into an oven-proof dish 2️⃣ Mix everything together, I sometimes add a splash of olive oil at the end to help stop the orzo from sticking 3️⃣ Put it into the oven for 30 minutes, making sure you give it a good stir every 10 minutes or so to prevent sticking 4️⃣ Take it out of the oven and stir in the raw spinach until it’s wilted. It’ll take a few minutes so be patient 5️⃣ Serve into bowls, finish with as much grated Parmesan as you like and enjoy (I also like a drizzle of chilli oil on mine too sometimes) #quickdinner #dinnerideas #easyrecipe #girldinner #comfortfood

  1. I have no words to describe the pain that I feel. In the early hours of Monday morning I was there as my Mum took her last breath and I am completely and utterly devastated. I held my Mums hand and whispered into her ear how much I truly loved her. Nothing prepares you for this moment and people tell you to speak to your loved one and leave nothing unsaid. There was nothing left unsaid between me and my Mum the only words I wanted to say to my Mum were “I will never love someone as much as I love you” she was surrounded by the people who loved her unconditionally and it was exactly how she wanted it to be. My Mum was my best friend. She listened to all my worries and then took them away, she listened to me when I was upset and made me feel like everything was going to be okay. When I came out to my Mum she held my hand whilst sitting on her bed and said “Sean, I love you with all of my heart and all I want for you is to be happy, I will love you no matter what”. My 70 year old Mum loved me that much she attended pride and danced and sung songs with people just because she loved me. The love she showed me that day I will never ever forget. She loved my partner Gordon so much and the love she exuded for us both we felt every single day. You were there for every moment of joy and celebration in my life and I felt how proud of me you were. All I ever wanted to do was make my wee Mum proud of me. I will never love someone as much as I love you Mum and I hope you truly know how much I loved you. You inspired me to be the person that I am today because I had a beautiful parent and role model that showed me unconditional love and support. You cared and loved all of your children including your grandchildren and we are all numb just now and can’t believe that this has happened within such a short time. Today, is my Mums 73rd Birthday. You always said I don’t feel like 73 I feel 37 (which is the year you had me) so today we are going to celebrate your 37th birthday because everything about you was young, vibrant, colourful and beautiful. Hello Everyone I’ve wanted to make a wee post for a while but haven’t got round to doing it or knowing what to say but I wanted to pop on to say a heartfelt thanks to many of the people on here who know me only from Instagram but have taken the time regularly to message me and check in with me to see if im doing okay. Words cannot express what it means when someone messages you who feels the same as you and understands what you might be going through or just to say hello and I’m thinking about you. Your words of comfort, advice, and sympathy haven’t gone unnoticed and have meant the world to me. The last few months have been some of the worst of my entire life and each day I’ve been trying to rebuild myself and find myself again. I heard a phrase recently that’s stuck with me - you are one person before you lose your Mum and another person after you’ve lost your Mum and this couldn’t be closer to the truth. The loss of my Mum in my life has been huge. I just want to phone her and speak to her and tell all about what’s happening this week, I want to drive up to her house and give her a massive hug and tell her how much I love and adore her but I can’t. However, I’m so proud and honoured that she was my Mum. I’m so proud and honoured that in a world full of people she was the person who became my Mum and I’m so proud and honoured that the heart that pumps in my chest is because she made me. If you have your loved ones around you please give them a hug, tell them how much they mean to you and tell them that you love them. Life only seems short when you worry about what happens next, the only certainty you have is now so grasp it and don’t let go.
