This chicken is so good everyone will be asking for seconds. That sharp, fresh and zesty lemon flavour in each and every bite. Bonus, you use the same sauce for the pasta. Just 30 mins and you’ll be outta the kitchen, boom! . Ingredients: 2 Large chicken breasts, cut in half lengthwise 200g flour 50g Parmesan grated 50g Panko breadcrumbs 2 Eggs 2 Cloves garlic minced 1 tablespoon Italian seasoning -NOTE* this will be split in the recipe - I used @schwartz.uk 3 lemons, 1 cut in half, and the zest of 2 lemons reserved. You’ll need the juice from the other two for the sauce. 100g Butter 250 ml Chicken broth (one stock pot dissolved also works) Neutral oil for frying, I used sunflower Salt and pepper Handful of fresh parsley chopped. 200g Pasta of choice (I used bucatini) . Method 1. Cut the chicken breasts in half lengthwise. Lightly beat with a mallet (the back of a pan works too), until even in thickness. 2. Get your dredging stations ready, 3 bowls. In one bowl place flour and season with salt and pepper. In another whisk together the eggs and 1.5 teaspoons of the Italian seasoning, lemon zest and season with salt salt and pepper. The last bowl combine the parmesan and panko bread crumbs with remaining Italian seasoning. 3. Dip chicken into the flour and coat both sides shaking off excess, then into egg mixture to coat, and finally dredge chicken in the parmesan and panko mixture, make sure to coat well and press firmly. Method Preheat ovens broiler 1. Cut the chicken breasts in half lengthwise. Lightly beat with a mallet (the back of a pan works too), until even in thickness. 2. Get your dredging stations ready, 3 bowls. In one bowl place flour and season with salt and pepper.
