Grandpa says this is an even MORE traditional French recipe that’s been around for ages. In this recipe, he adds an extra 100g of chocolate, and adds Vanilla Extract too. Also, the egg feels a little more “raw” in this recipe, cause he doesn’t mix the yolks in with the hot cream and chocolate (as he normally does), instead he adds the raw yolks straight into the egg white mix. The result is a Chocolate Mousse that’s stronger in chocolate flavor with a hint of vanilla and feels more dense in texture. Interested? HERE’S HOW YOU MAKE IT ⬇️ STEP 1: BOIL CREAM 200g Whipping Cream 100g Butter 50g Sugar In a pan, add the cream, butter and sugar and slowly let it come to a boil over low-medium heat. STEP 2: MIX IN CHOCOLATE 400g 70% Dark Couverture Chocolate 1tsp Vanilla Extract In a big bowl, add in the chocolate and then pour in the hot cream/butter/sugar mix. Mix everything quickly and let the chocolate melt. Add in vanilla extract and mix again. STEP 3: PREP EGGS 6 Eggs 50g Sugar Separate the Egg Whites & Yolks - egg whites into a big bowl, and egg yolks into a small bowl. In the big bowl, whisk the egg whites with sugar until it forms into stiff peaks. In a small bowl, whisk the egg yolks and then add it to the egg whites. Lightly mix the egg whites and yolks with a spatula. STEP 4: MIX EVERYTHING Add a bit of the egg mix into the chocolate mix. Then whisk it together. Keep adding more of the egg mix into the choc mix, but this time use a spatula to lightly mix everything together until well incorporated. Grind into a fine powder. 2.In a food processor, combine the ground spices with the butter and salt. Blend until smooth and fully incorporated. 3.Set aside until ready to use, or refrigerate for longer storage. Roasted potatoes: 5 large potatoes, thickly sliced olive oil Salt and black pepper 1 whole garlic bulb, crushed A few rosemary sprigs ½ lemon juice 1.Preheat oven to 200°C. 2.Boil potato slices in salted water until just tender. Drain. 3.Place potatoes on a baking tray with olive oil, salt, and pepper. Toss to coat. 4.Roast until golden and crispy, flipping once. 5.Add garlic and rosemary, roast a few more minutes. 6.Remove from oven and finish with lemon juice.❤️
