  1. Today is #autismawarenessday It’s so easy to think you know the answers when you’ve not actually walked in the shoes of a parent who also at one point thought they too had all the answers. The truth is we don’t. It’s so easy to say “it’s their jabs” or “they have too much screen time”. It’s so easy to pass judgement on other people, it’s natural, it’s the human race, everyone saying they can do it better until they realise, no they can’t. We went to Private Speech and Language who said they think Tierra has signs of autism, so now we’re on the pathway for the NHS. When they said this I started doing my research, looking into all the signs, so many of them she didn’t “tick the box”… but I did… very particular things, I can’t handle a change in routine, I wear the same shoes everyday, I can’t change certain aspects of my life, I can’t do anything half hearted, I memerise things so long that it hurts out of fear of getting it wrong, I’m obsessive for example the gym I can’t just not go but when I go I have the same trainers with the same bottle and the same outfit. Just to name a few. I went into work and asked them, I went to friends and asked them, I went to my mum and asked her, I asked my fiancé who I’ve been with since I was 14 years old, and everybody said the same thing, “you do show quite a lot of traits” If I’d of never of had T, I’d never of realised so many things about myself. I truly believe she was sent to me to help me realise I’m not crazy. I’ve watched so many people struggle to bond with T because they just don’t understand her at all. And that’s what today is about. Raising awareness that someone may be different, but if you can’t spend time trying to understand them, then that’s a you problem. We all need to do better. So many times if I think a situation would be overwhelming for T & I avoid going, it isn’t because of T, it’s because of the judgement you feel around you when a meltdown happens Tierra is BEAUTIFUL! She isn’t the same as everybody else, but she is unapologetically herself. I get emotional even speaking about her because she’s just so precious. I am so lucky that she is mine. It’s her world we’re just living in it ❤️

Chicken Tandoori Skewers Makes 10 small skewers Ingredients 5 chicken skinless breast diced and evenly put on to 10 sticks Marinade 3 tbsp Greek yogurt ( I used Oatly dairy alternative Greek yogurt) Juice 1 lemon 2 tbsp olive oil 1 tbsp garlic paste 1 Tbsp ginger paste 1 tbsp coriander paste 1 tbsp tomato purée 1 tsp mild chilli powder 1 tsp mild tandoori curry powder 1 tsp fenugreek 1 tsp turmeric 1 tsp garam masala 1 tsp smoked paprika 1 tsp dried coriander Method Mix together all the marinade ingredients. Place the skewers on a prepared baking tray if planning to grill. Using a food brush coat the chicken with marinade and let sit for 1/2 hour. To cook place under a preheated 250° grill and cook for 15/20 mins on each side. Make sure the are golden. With a few charred areas. These will also be perfect for the bbq or air fryer. When ready to serve place on a serving platter and pour over and remaining marinade from the tray. Garnish with mango salsa recipe is on the earlier reel. Enjoy 😊

Crispy Beef and Sweet Chilli Salad Serves 1 Ingredients 3 wafer thin beef minuet steaks Olive oil spray 40g of bagged salad I used @tesco butter head 1/4 of a cucumber thinly sliced 1 spring onions thinly sliced 1 handful cashew nuts 1 tbsp of pomegranate seeds 1/2 a red chilli deseeded and sliced 1 handful of coriander leaves Dressing 1 tbsp sweet chilli sauce 1 tbsp rice vinegar 1 tsp sesame oil 1 tbsp lime juice 1 tsp ginger paste Method Line your frying pan with spray oil. Lay the steaks flat in the pan and cook until crispy on both sides. When cooked remove from the pan and slice. Place the bagged salad on a serving plate. Top with the steak and then add the cucumber. Sprinkle over the onion, seeds, nuts and chilli. Whisk together the dressing ingredients and spoon over the desired amount. Garnish with coriander and serve. Ruby Red Indian Curry Ingredients Serves 4 4 portions of chicken skinless breast cut into cubes Marinade 2 tsp paprika 2 tsp chilli powder 2 tsp cumin 2 tbsp lime juice 2 tbsp lemon juice 2 tbsp olive oil Salt and pepper Sauce 1 onion 1/2 can of tomatoes 2 tbsp tomato puree 2 tsp ground fenugreek 2 tsp garam masala 1 inch ginger 2 cloves garlic 1 red chilli deseeded 2 tbsp olive oil 150g greek yogurt ( I used dairy free alternative Oatly Greek) 1/2 cup of chicken stock Fresh coriander and pomegranate seeds to garnish. Method Pre heat your oven to 180° Place all the marinade ingredients into a bowl and mix thoroughly. Add the chicken and let marinade for at least 1/2 hour. Place all of the sauce ingredients into a blender. Blend until smooth. Place the marinaded chicken into a frying pan and brown over a medium light. Then add to an oven proof dish. Then add the sauce along with the stock to the pan. Bring to a simmer and let cook for 10 minutes. Add the sauce to the chicken add more water if you think it needs it. Place covered in the oven for 1/2 hour. Remove uncover and stir in the yogurt. Return to the oven uncovered for 5 to 10 minuets to let sauce thicken up. When ready to serve place in a serving dish and garnish with fresh coriander and pomegranate seeds. Serve with rice. Delish 😋
