Farmer’s markets give me the opportunity to support local producers including our local Ontario dairy farmers, and I really enjoyed this one! . First, I visited the Ontario Dairy Farmers Corner where I tasted a ton of cheese made with local milk. It was all delicious, especially the homemade ricotta (I have a Reel on how to make ricotta, if you scroll down far enough!) . I got to meet Jeff Wilson, a local Ontario dairy farmer whose dairy farm is one of the over 3,200 family-run dairy farms that produces high-quality milk for Ontario communities. I asked him so many questions about the cows, milk production and all things dairy. Jeff was happy to share all his knowledge and passion for dairy farming! Jeff runs the farm with his parents and sisters Ericka and Jaime, and they treat their cows like family. Did you know that all the milk we get in Ontario is locally produced? . I moved on to the produce, and I found my favorite apples. The squash was amazing - they even had red kabocha squash, which is hard to find and my favorite for its dry, sweet flesh.  . I ate Tibetan momo, and they were so good, even though my mouth was on fire AND I spilled momo juice down my vest. #worthit. .   1. PREPABLE PROTEIN BAGELS | Batch make and freeze for a prepped breakfast that isn’t overnight oats. A super food frittata sandwiched with melty smoked cheese and a protein bagel packed with 22g grams of protein. Feel free to add in some sliced tomatoes and spinach after defrosting for the ultimate speedy breakfast. 287kcal per bagel. 22g protein. You will need 4x protein bagels 1/2 carton 500g egg whites 2 eggs 1 handful of chopped parsley 1 handful of chopped basil 1 spring onion, diced finely 4 diced sun dried tomatoes, drained from oil 4 slices of smoked applewood cheese (or use normal cheddar but the smoked reminds me of bacon bagels!) 1. Whisk the eggs and whites with chopped parsley, basil, diced spring onion, sun dried tomatoes and season with salt and pepper. Tip into a suitable oiled or non stick baking dish so it will cut into 4 bagel sized squares around 2cm thick. If you only have a dish that gives you a thin frittata, simply double stack in the bagel! 2. Bake the frittata at 200c fan for 5-10 minutes until set. Allow to cool. 3. Cut the frittata onto 4 squares to fill each bagel. Place a slice of cheese on top and close. Wrap each bagel in foil and freeze for up to 3 months. 4. To serve, remove from the freezer to thaw overnight then either stick into the air frier or warm in the oven at 200c for 5-6 minutes until the cheese has melted.   3. WHAT I EAT IN A DAY AS A NUTRITIONIST Breakfast: hot honey eggs on sourdough with avocado paired with a vanilla protein collagen matcha. Why: High in protein to keep me satisfied all morning and improve satiety to avoid mid morning slumps. Chilli flakes contain a powerful antioxidant capsicum which can further balance my blood sugar. Avocados are a source of fibre, healthy fats and skin-loving vitamins. Vanilla collagen from @myprotein adds an extra boost of protein to my breakfast which is so delicious and easy to drink. Matcha is my favourite slow release caffeine to leave me energised for the morning. This combination keeps me going all the way to lunch. Lunch: Tuna crunch toasted bagels Why: A quick lunch that I can make between meetings. I add lots of extra vegetables and herbs to my tuna mix to support my gut health with lots of lovely diversity. I swap mayo for yoghurt to get in extra calcium, and vitamin B12. Tuna is a great lean protein providing lots of lovely B vitamins and dietary vitamin D. Dinner: Creamy roasted red pepper pasta with lentil pasta Why: Red peppers are packed full of vitamin C which supports the functioning of your immune system. I like to make a creamy sauce with nutrient dense cashews to get in extra minerals like iron, zinc and also magnesium which can aid in my sleep. Lentil pasta provides a boost of fibre and protein compared to regular wheat pasta making it a nice swap. Snack: Peppermint tea and 70% dark chocolate Why: peppermint tea helps settle and soothe my gut after a day of eating. Dark chocolate is packed full of antioxidants called polyphenols which can feed my good gut bacteria in turn reducing inflammation and promoting good gut health. #wieiad #whatieayinaday #wieiadrealistic

I think these are the biggest onions I’ve ever seen?! 🧅 French onion meatballs & Parmesan orzo did nottt disappoint Recipe adapted from @Revi 🫶🏼☺️ For the onions: - 2 large yellow onions - 2 tbsp butter - Pinch of salt For the meatballs: - 1 lb lean ground beef - 1 egg - 1/2 cup Parmesan - 1/2 cup Italian breadcrumbs - 1/4 cup Parsley, chopped - 4 cloves garlic, minced - 2 tbsp Worcestershire - 1/2 of the caramelized onions - salt, pepper, garlic powder to taste For the sauce: - other 1/2 of caramelized onions - 1/2 cup white wine - 1 cup beef bone broth - 1 tbsp tapioca flour - 1 tbsp water For the orzo: - 4 servings orzo, cooked & drained - 1/2 tbsp butter - 1/4 cup half & half (I used DF) - 1/2 cup grated Parmesan - salt, pepper & garlic powder to taste In a large pan, caramelize onions by cooking them over medium heat with the butter & salt for 30-40 minutes or until done While the onions are cooking, prepare meatballs by combining all ingredients in a large bowl (including 1/2 of the onions once they’re done). Mix until combined & roll into balls. In the pan you cooked the onions in, add the meatballs and cook on each side for 3-5 minutes. Once cooked through, remove from the pan. Add the other 1/2 of the onions back to the pan, along with the white wine and bone broth. Combine the tapioca flour & water into a slurry and add to the sauce to thicken. Add meatballs back in and let simmer for 10-15 mins. For the orzo, combine cooked orzo with the cream, butter, Parmesan & seasonings.
