  1. This morning we woke up to a mad scrabbling in the walls. We thought it was a squirrel or raccoon caught in the wall. It was clearly trapped whatever it was! So we cut into the wall and… out came an Ermine or Stoat! Ermines are white in winter (with a black tip on its tail) and brown in summer. It’s one of the smallest in the weasel family. They have SHARP teeth and are carnivores. They eat mostly moles and mice! They climb well and swim well. The good news is we caught it and released it back outside (away from our house). It was an exciting and unexpected start to our day! Esta mañana nos despertamos con un escarbado loco en las paredes. Pensamos que era una ardilla o un mapache atrapado en la pared. ¡Estaba claramente atrapado, fuera lo que fuera! Así que cortamos la pared y... ¡salió un armiño! Los armiños son blancos en invierno (con una punta negra en la cola) y marrones en verano. Es uno de los más pequeños de la familia de las comadrejas. Tienen dientes AFILADOS y son carnívoros. ¡Comen principalmente topos y ratones! Trepan bien y nadan bien. Crack the eggs in well and mix with fork. Add salt and oil. Slowly incorporate flour into the eggs using a fork. Use your hands to finish incorporating the flour and eggs. Kneed the dough for about 10 minutes, until it’s smooth. Cover in plastic wrap and let rest for 30-60 minutes. Roll out the dough until it’s your desired thickness. Shape into desired pasta shapes.   2. Chinese Cucumber Salad 🥒 This is one of my all time fav childhood dishes that I grew up eating and it’s by far the tastiest salad ever! To be completely honest I much prefer the usual method of bashing the cucumber (lol) and roughly chopping it but this is a super fun way to serve it if you’re bothered! Ingredients 2 large or 3 medium cucumbers Sea salt 1.5 tbsp black vinegar 1 tbsp soy sauce 1 tsp sesame oil 2 tsp liquid sweetener or sugar 2 cloves garlic, minced Chilli oil, to taste Pinch of sesame, to garnish 1. Wash your cucumbers then slice off the ends. Place between a pair of wooden chopsticks and slice in an angle all the way down. Flip and repeat. 2. Put into a bowl and sprinkle some salt over to draw out any excess moisture. Set aside for 5 mins then rinse and drain well. Alternately, you can skip this step and simply marinade your cucumber in the prepared sauce and keep in the fridge until you’re ready to serve. 3. In another bowl, add in the vinegar, soy sauce, sesame oil, sweetener, garlic and chilli oil. Add in the cucumbers and mix well to coat. 4. Simply scoop up with some tortilla chips for the perfect bite 🤌🏼🍃 This is my take on the viral green goddess salad (by @Baked by Melissa) that was popping off on TikTok years ago! I'm personally not huge on dressings being too garlicy/onion flavoured so I've toned it down for this recipe. I also added in avo for creaminess and it is deliciousss! Serves: 4 Salad base: 1/4 green cabbage 1 small head cos lettuce 2 cucumbers Dressing: 1 packed cup fresh basil Handful of baby spinach 1 medium avocado 1/2 jalapeño 1 large clove garlic 1/3 cup cashews 1 tbsp nutritional yeast Juice of 1 lemon 1 tbsp maple syrup 1/4 cup olive oil Salt & pepper, to taste To serve: Hemp seeds Tortilla chips Method: 1. Finely dice your cabbage, lettuce and cucumber and add into a large bowl. 2. Add all your dressing ingredients into a blender. Start on a low speed to break down the ingredients, then slowly increase to blend until smooth. If needed, add an extra dash of olive oil. 3. Pour into the salad bowl and mix well to coat all the ingredients. Taste and add extra salt if needed. 4. Stir continuously until all sugar dissolves. Takes around 7-8 mins. 2. Once all sugar dissolves, turn off the heat and add pinch of baking soda while stirring continuously until it stops foaming. 3. Pour into a baking sheet lined with parchment paper or heavy duty aluminum foil. Wait for 15-20 seconds. Flatten the candy with greased (any cooking oil) jar. Press the mold gently and let it cool down (only takes couple of minutes to cool down). * You can use any pan. It does not matter if it’s nonstick or not. Make sure your pan is dry though. * Do not overcook. You only need to melt sugar. We are not making Caramel. * In terms of baking soda, less is more. Only need pinch of baking soda for 1/4 cup of sugar. * if you do not have parchment paper or aluminum foil, you can use greased stainless steel plate or baking tray. * To clean the pan, you can heat water in it until all sugar dissolves. Or simply let it soak in water for few hours.
