  3. Preparing meals doesn't have to be challenging or complicated. often, you're simply looking for a recipe that gets you most of the way there with the least amount of effort. So here’s the simplest siu yuk (aka crispy pork belly) recipe I’ve tested that requires minimal effort while maximizing flavor AND crispy skin. You can certainly achieve the last 20% of results with methods like drying out the pork belly overnight in the refrigerator, or attempting to layer a cup of salt over the pork belly (which you’ll need to carefully remove to avoid accidentally oversalting the rest of the pork). For the purposes of 80/20, I’ve found that simply sprinkling a generous amount of salt and increasing the initial low cook time at 250F to 40-50 minutes was enough to achieve a delicious siu yuk with a satisfying amount of crispy skin. Ingredients (Sauce) - 1 tsp 5 spice (3.5 grams) - 1 tsp sugar (5.5 grams) - 1 tsp salt (6.5 grams) - 1/2 tsp white pepper powder (1g) - 2 tbsp shaoxing cooking wine (16g) Ingredients (Other) - vegetable oil - 350 - 800g pork belly (there’s enough sauce) Instructions - Pat pork belly dry with paper towels - Score underside of pork belly (meat-side) - Using a knife, skewers, or toothpicks, poke shallow holes along skin side of pork belly. This will help further dry the skin (make sure to not poke too deep, otherwise the meat juices will surface during air frying, which will prevent crispy skin from forming) - Rub sauce onto underside of pork belly, try not to get any sauce onto the skin (it’s okay if you, do just wipe it off) - Place pork belly on top of two parchments of tin foil, and fold tin foil to form a tight wall along all sides of the pork belly (make sure the wall is slightly taller than the height of the pork belly) - Sprinkle a generous a mount of salt on top of the pork belly skin - 250F for 40 - 50 mins - Brush skin with vegetable oil - 375F for 20mins (Air fryers and ovens can vary in temp so please check your pork belly every 5 minutes for burning or whether it needs more time) #siuyuk #roastpork #airfryerrecipes #airfryer #easyrecipes #pareto #8020rule #asianrecipes

  1. Backpacking + Steak in Yosemite 🥩⛺️
 This trip was not planned at all, and it ended up being one of my favorites.
Camping right in front of Half Dome with that view felt different.
 I’ve come down this trail before while heading to North Dome, but I had never really explored the Snow Creek area. All I knew was that it’s considered one of the most difficult hikes in Yosemite. With no plans for the weekend, I decided to give it a try.
 I arrived in Yosemite on Friday and spent the night at Camp 4. As usual, I took my time the next morning and didn’t get on the trail until around 11 AM. The hike isn’t very long, but it is extremely steep. It was tough. By the time I reached the top, I was already pretty tired and the sun was starting to go down fast. I had mapped a few possible spots to camp, explored the area, and ended up finding this spot with incredible views, a fire pit, and water nearby.
 I filtered about 6 liters of water to be set for the night, set up my tent, and relaxed for a bit. As the sun started to drop, I started cooking. I made a NY steak with peppers and eggs, asparagus, and a portobello mushroom with parmesan cheese. Of course, a classic beer.
 I started the fire and watched an incredible sunset with views of Half Dome, followed by a sky full of stars. The next morning, after more than 10 hours of sleep, I woke up to a beautiful day. I made blueberry pancakes and coffee for breakfast, packed everything up, and headed back down to the truck.
 This is definitely a trip I will never forget. Yosemite is one of those places you never get tired of. It keeps impressing you no matter how many times you go.

  2. Backpacking + Cheeseburger at Thousand Island Lake 🍔🏔️⛺ I almost canceled this trip while I was at the trailhead. The wind was blowing like crazy and my phone showed a wind advisory in place for the area. After sitting in my truck for almost 45 minutes thinking about it, I finally decided to send it, and I’m so glad I did! I started the trip on Friday, driving through Tioga Road and spending the night at June Lake. The next morning I woke up at 6, packed my stuff, grabbed a quick coffee and a breakfast pie from the local store, and headed to the trailhead. Like I mentioned, the wind was blowing pretty bad, and I sat in the truck thinking about other possibilities. After 45 minutes, I decided to just send it and started hiking. The hike was stunning, with beautiful views and patches of snow along the way. Once I arrived at Thousand Island Lake, it was mind-blowing. Banner Peak was covered in snow and the lake was still halfway frozen. I spent some time scouting for a campsite. After finding a spot and almost setting up, I saw a hill and knew there had to be a better view up there. Even though it was super windy, I decided to camp there. Good thing I had the @durstongear X-Dome, which handled the wind perfectly. I chilled for a bit and then started cooking dinner. This time it was a double bacon cheeseburger with an IPA, one of my favorite combos. I watched the sunset and went to bed since it was still windy and getting cold. I set an alarm for 1:30 AM to check the sky and hopefully take some night photos. As soon as I got out of the tent, the Milky Way was there with the naked eye. I took a few photos and then left my camera filming all night, which led to that amazing timelapse. The next morning I woke up and the wind was gone. I made some classic Outdoor Boys bread with honey butter and coffee, packed my gear, and hiked back to the truck. Thousand Island Lake has been on my list for so long, and I’m so happy I finally made it there. I can’t wait to explore more of the Sierra this summer. I hope you enjoyed the video.   3. Backpacking The Lost Coast Trail in California 🌊⛺️🥾 I did this trail 2 years ago and it completely blew my mind, so I had to come back a second time. As much as I love the Sierras, I think the coast has its own unique magic. I planned this trip last minute as usual lol. I saw a permit available a week before and immediately got it. I drove 5 hrs from the Bay Area to Shelter Cove, stayed at the campground there, got some really good food and beer, and the next morning headed to the trailhead. The first day I hiked around 7 miles to Cooskie Camp. Absolutely beautiful hike with incredible ocean views the entire way. I found an amazing campsite overlooking the coast, explored the area a bit, started a fire, and made rigatoni with tomato sauce, parmesan cheese, and cherry tomatoes. Of course I had to pair it with my favorite wine, Angelica Zapata Malbec. The sunset only came out for about 30 minutes, but it was absolutely beautiful. I chilled by the fire the rest of the evening and went to bed. The next morning I woke up after 10 hrs of sleep lol. It was raining a little, but after waiting for a bit it cleared up. I made some classic Outdoor Boys bread with coffee, packed my stuff, and kept hiking. Day 2 was around 10 miles with tons of wildlife and constantly changing landscapes. I camped at Big Flat Camp, filtered some water, talked with a few other backpackers, and this time made a charcuterie board by the fire before heading to bed early. The last morning it was raining again, this time a little harder, so I skipped breakfast and started hiking back to Shelter Cove. Before making it back to the parking lot, I had to finally soak my feet in the Pacific Ocean after spending 3 days avoiding the tides and water lol. It felt amazing. This trip was absolutely beautiful. The Lost Coast really feels like a completely different side of California and I’ll definitely be coming back again someday.
