Recipe here! #Ad #Makeitmutti Sauce (makes enough for 4 meals): 4 tins Mutti Polpa 160g ‘nduja 80g butter 2 sprigs each of basil and tarragon 2 medium shallots (or small onions), trimmed and peeled Salt, to taste To serve 2: 40g Parmesan, grated 225g rigatoni or your favourite shape 1/4 of the tomato sauce 2 fat tbsp mascarpone Place everything for the sauce in a large pot and place over medium-low heat. Cook for exactly 1 hour, stirring occasionally. Discard the shallots and herb sprigs and divide the sauce into 4. To serve two, add 1/4 of the sauce to a pan big enough to comfortably hold (and toss) your pasta. Cook the pasta in salted boiling water 1 minute shy of al dente, then add directly to the sauce over a low heat with the mascarpone, a small ladle of pasta water and toss very well. Add a handful of Parmesan then toss again, adding more pasta water if necessary. Divide between plates and pass the remaining cheese around. NB:// the sauce scales up and down really well - simply divide the “sauce” by 2 or 4 to reduce the quantity. T X #makeitmutti #fyp #sausagepasta #ragu #rigatoni #comfortfood Serves 2 (with seconds) 5 tbsp olive oil 6 fat sausages, casings removed 1 hpd tsp fennel seeds, lightly crushed 2 tbsp chopped rosemary 2 small red onions, chopped 4 cloves garlic, sliced 3 bay leaves 2 hot red chillies, split (or chilli flakes, to taste) 2 tins Mutti Peeled Tomatoes 1/2 bottle red wine 100ml double cream Couple strips orange peel Nutmeg, a few scrapes (optional) 100g parmesan, grated, plus the rind 350g rigatoni or your favourite pasta shape Flaky sea salt Heat the olive oil in a large pot or casserole over medium heat and tear in the sausages. Allow the nuggets to caramelise before stirring, then repeat. When nicely caramelised all over, add the fennel seed and rosemary and frazzle briefly in the hot fat. Tip in the onions, garlic, bay, chilli and season with a generous pinch of salt. Reduce the heat to low and cook for 15-20 minutes, until the onions are lightly browned. Drain the tomatoes through a colander, retaining the passata for another delicious Mutti recipe. Turn the heat up and add the wine. Cook, stirring and scraping, until the meat starts frying again, then add the parmesan rind (if you have one), orange peel and tomatoes. Season lightly with salt. Reduce the heat to low and cook gently for 30 minutes. The sauce should be reduced - almost dry - and very delicious. Fish out the bay, orange peel and parmesan rind. Pour in the cream, shower in half of the parmesan and grate in the nutmeg. Cook the pasta in salty boiling water until 1-2 minutes shy of ‘al dente’, then add to the sauce with a splash of pasta water. Toss gently until the pasta is cooked to your liking, then plate up, finishing with more parmesan, orange zest and a drizzle of olive oil. Pour out the rest of the wine, kick back and enjoy it.

Crispy fennel-crusted breaded chicken cutlets, ‘nduja puttanesca sauce made with @Mutti Pomodoro UK Polpa, burrata, herbs, lemon zest. Sounds good, right? Two recipes for the price of one with some simple tips along the way! Recipe below X #makeitmutti #milanese #fyp #chickenparm #burrata #puttanesca #chickenrecipes #schnitzel #parmigiana  Serves 2-4 For the sauce: 4 tbsp olive oil 1 medium banana shallot, finely chopped 1 tbsp ‘nduja (or chilli, to taste) 3 cloves garlic, grated 1.5 tbsp capers 4 anchovy fillets (optional, but recommended) 2 tbsp black olives, torn or chopped if large 1 tin Mutti Polpa 1/2 tsp sugar Salt For the chicken: Neutral oil, for shallow frying 4 boneless chicken thighs 2 large eggs 125g plain flour 150g panko breadcrumbs 1 tbsp fennel seeds (optional, but recommended) 1-2 burrata, or stracciatella, to serve Parmesan  Lemon zest Tarragon, parsley & dill, picked, to serve Salt and freshly ground black pepper Heat the olive oil in a small pan over medium-low heat. Add the shallots, season lightly with salt and cook for 8-10 minutes until soft and sweet. Tip in the ‘nduja, garlic, capers, anchovies and olives. Once the ‘nduja and anchovies have dissolved and everything is sizzling, add the Mutti Polpa (swilling out the tin with a little water) and the sugar. Turn the heat up to medium and cook for 10-15 minutes until reduced slightly but still fresh-tasting. Remove from the heat and cover until needed. Season your chicken thighs with salt and black pepper, then fold between baking parchment. Bash flat with something heavy (such as the pan you’ll be frying with), until the thighs are about 7mm thick. Divide the flour, eggs and breadcrumbs between 3 bowls and season everything with salt. Beat the eggs well with 1 tbsp cold water and mix the fennel seeds through the breadcrumbs. Dredge the chicken in flour, shaking off the excess, then submerge in the egg mixture, then finally the breadcrumbs (really pack the crumbs on). Heat 1cm of neutral oil in a large frying pan over medium-high heat and fry the cutlets on both sides until golden brown, about 5 minutes, then transfer to a rack. Arrange the chicken on a baking tray and top with the sauce. Grate over some parmesan then transfer to a hot oven for 10 minutes or so. Tear up the burrata and spoon over the chicken. Finish with the herbs, lemon zest and olive oil. Enjoy! Ps. the sauce is great as it is with pasta (just add some chopped herbs, and pasta!).
