It's not always easy for me to be so vulnerable. The internet can be a true dumpster fire of toxicity, but also I can't deny how much of my community I have found here. Visibility is so fucking crucial to making the world we want to live in. To my Queer family (whether you're out or not)- thank you. You inspire me every single day on what it means to live as a Non-binary/Queer/Trans person. I'm reminded that coming out is not a single defining act. We come out in different capacities to ourselves and others daily- constantly evaluating and adjusting as time goes on. I have identified with every letter in LGBTQ since I first STARTED coming out at age 18. There's so much power in the fluidity and ever-changing lexicon of gender and sexuality. Cheers to being open to what new generations bring to the table, and to honoring what so many cultures before us have always known to be true. People tell me sometimes that I seem so fearless - but I don't think that's quite accurate. So much of the world tells me and my people that we SHOULD be scared, and we all continue to thrive, find joy, or even simply exist DESPITE being completely terrified. Personally, I feel less afraid witnessing my queer siblings fucking GO FOR IT and I hope for someone out there this post will do the same. After testing so many methods, I finally found a way to get perfectly tender beef and veggies that hold their texture. The secret? Cooking them in stages so each one shines! I went low and slow in the oven with mustard, brown sugar, and extra garlic (because I can’t help myself). Potatoes and carrots go in with an hour left, and cabbage only steams at the end—no more overcooked sadness here. Oh, and don’t skip the horseradish cream sauce—it makes the dish, in my humble opinion 😋. Here’s what I used: 🥩 Corned beef (+ spice packet) 🥄 Dijon mustard & brown sugar 🧄 Onion & garlic 🍺 Beer, beef broth, or water 🥔 Potatoes, 🥕 carrots, & cabbage 🌿 Fresh parsley (optional) ➕ Horseradish cream sauce (sour cream, horseradish, Dijon, Worcestershire, salt & pepper) 1️⃣ Preheat oven to 325°F. Rinse corned beef & pat dry. 2️⃣ Place in a roasting pan, rub with mustard & brown sugar. 3️⃣ Scatter onion, garlic, and the spice packet around it. Add liquid (but don’t submerge). 4️⃣ Cover & roast 45-50 minutes per pound. 5️⃣ With 1 hour left, add potatoes & carrots. Add more liquid if needed. 6️⃣ With 15-20 minutes left, add cabbage on top. 7️⃣ Remove beef, let it rest 10-15 minutes, then slice. Serve with veggies & horseradish cream! And as someone who doesn’t like eggs (not vegan, just don’t like them), I think I may be qualified to share some no-egg breakfast ideas—make sure you’re following for more. >>> WHY: A block of tofu ($2–$3) makes 4-5 servings and packs 8–10g of complete protein per serving, plus iron and calcium—without the cholesterol. ✨Ingredients: • 1 small onion, sliced • 8 oz broccoli, cut • 1 block of tofu, pressed • 1/2 tsp garlic powder • 1/2 tsp turmeric • 1/2 tsp cumin • 2 tbsp nutritional yeast (optional but recommended) • 1/4 cup water • 1 tbsp oil, divided • Salt and pepper to taste Instructions: 1️⃣ Press tofu for 15 minutes to remove excess moisture. 2️⃣ Sauté onion in oil for 2-3 minutes. 3️⃣ Add broccoli and sauté for 1 minute. 4️⃣ Add remaining oil, crumble tofu, and stir in garlic powder, turmeric, cumin, salt, pepper, and water. It’s not St. Patrick’s Day without corned beef, but making a big pot takes time and can be $… Soo, grab some deli corned beef, bagged coleslaw mix, and egg roll wrappers to make a big batch (or just a few - 👋 fellow single people!). No matter how many mouths you’re feeding, you deserve something tasty! Keep it simple without sacrificing fun & flavor. Got leftovers from my “real deal” corned beef and cabbage recipe (see previous post)? Turn those leftovers into egg rolls too! Same process. Ingredients for Irish Eggrolls: 1. Deli corned beef or pastrami 2. Egg roll wrappers 3. Bagged raw coleslaw mix 4. Cheese (optional)—Swiss or cheddar 5. Water 6. Dipping sauce: horseradish cream, Thousand Island, mustard, ranch, or blue cheese dressing Optional: Add sautéed onion, garlic, or caraway seeds for extra flavor (recommended). No measurements here—make it as meaty or veggie-forward as you like. Make a big batch and freeze raw or cooked for later, or keep it separate and make fresh all week. Instructions: 1️⃣ Preheat air fryer to 375°F or oven to 400°F. 2️⃣ Sauté onion and garlic for 2-3 minutes. Add coleslaw mix, corned beef, and a splash of vinegar. Season with salt and pepper.
