Here’s what I used: 🥩 Corned beef (+ spice packet) 🥄 Dijon mustard & brown sugar 🧄 Onion & garlic 🍺 Beer, beef broth, or water 🥔 Potatoes, 🥕 carrots, & cabbage 🌿 Fresh parsley (optional) ➕ Horseradish cream sauce (sour cream, horseradish, Dijon, Worcestershire, salt & pepper) 1️⃣ Preheat oven to 325°F. Rinse corned beef & pat dry. 2️⃣ Place in a roasting pan, rub with mustard & brown sugar. 3️⃣ Scatter onion, garlic, and the spice packet around it. Add liquid (but don’t submerge). 4️⃣ Cover & roast 45-50 minutes per pound. 5️⃣ With 1 hour left, add potatoes & carrots. Add more liquid if needed. 6️⃣ With 15-20 minutes left, add cabbage on top. 7️⃣ Remove beef, let it rest 10-15 minutes, then slice. Serve with veggies & horseradish cream!   3. Rainbow parties in the Green Mountains are the best way to welcome spring 🌈😎✨ Yesterday’s Pride festival at @sugarbush_vt was a total blast! The 4th annual Pride Weekend included a Pride Parade down the mountain and apres dance party, plus a Drag Brunch today. It’s so much fun to celebrate love in the hills! 🏳️‍🌈 Pride in the snow sports community is a very big deal. Athletic communities aren’t always inclusive or accessible, especially in the glitzy world of skiing. The first openly gay Olympic skier, Gus Kenworthy, didn’t come out until 2015. Tanner Pendleton, the first pro snowboarder to come out, didn’t share his story until 2020. How many queer athletes came before them? Four years ago, Sugarbush made the awesome decision to host a slopeside Pride Weekend. This has grown into one of the Mad River Valley’s best parties (which is a bold statement… the MRV knows how to throw down). In this highly inclusive neighborhood, diversity is celebrated on and off the slopes. 🦋 After college, I lived in the MRV for 4 years and loved how welcoming this community is. The valley channels every classic and quirky Vermont vibe. I highly recommend everyone spend time here if you’re looking for “real Vermont” fun! Yesterday, my friend @katvt and I decided to take a spontaneous adventure to the valley. We fueled up at @peaceburgervt (truly the best veggie burgers) and danced under the sun at Sugarbush. Everyone had a blast, especially the dogs!! 💜💙💚 Nature is for everyone. I’m so proud of the team at Sugarbush for welcoming ALL to the Green Mountains.   3. Hello. I need your help. Right now. Last month, @usaclimbing quietly released regressive and painful policy changes and requirements for trans climbers. They are wholly unnecessary and irrelevant to achieving fair competition, and pointedly harmful to trans and cis athletes. Furthermore, they were enacted without any community voice. Athletes, coaches, caregivers, or setters. No committees approved these changes. Specifically, they ignored trans and nonbinary voices who fought these policies for almost two years. As a coach and athlete, I openly cried as I read each requirement and imagined humiliating myself to meet them. Specifically the USADA TUE requirements. My heart broke for trans athletes. I got sad. Then I got angry. Then I found support. And now together we are fighting. • We have created a website and @transclimbersbelong and composed an immense amount of information you can use to educate yourself and fight these policies. We are hosting letters and gathering support from route setters, coaches, athletes, and climbing gyms across the country. And we are not going down without a fight. If you know me, you know I will fight for what I believe in. If you support me, support this. This is not about fairness. It’s about harm. And these policies can and must be rewritten to remove harm. • I will not stand and watch the climbing community I love so much be weaponized against my trans and nonbinary family. Not today, not ever. Please spread this message. Spread our work. And finally, write to your local climbing gym and ask them to pull their support for USAC comps until these policies are paused and rewritten. Now. That is my ask. Put yourself out there.
