  2. A couple of days ago I was doing those beautiful Quaker Oats maamoul and had a lot of dough left. How to use it in another way? _ I thought. And then the recipe started building up, I’ll use it as a tart base! Then what to put inside? Something milky! And moist! And flowery! Mouhalabiyeh!!! I had my recipe! And I can tell you, it’s delicious, the dough is crumbly & crunchy with this granulated texture coming from the semolina & a dash of oats. I won’t be posting the dough recipe now, stay tuned on the @quakerarabia insta & you’ll have it soon (I’ll repost it as well), but I’ll take you through the rest of the process. Mouhalabiyeh tart: Ingredients for the mouhalabiyeh: -1 l milk -150g sugar -80g cornstarch -2 tbsp orange blossom water -3/4 cup roughly cut pistachios Steps: -Line the dough in a tart mold (5 to 7mm thick), prick it with a fork, bake for 25 minutes on 170 degrees C. Let it cool. -in a sauce pan, heat the milk (don’t let it boil), turn off the heat and add the sugar, stirring until it’s melted. -pour the milk gradually on the cornstarch while whisking. -put the mixture back in the saucepan on medium heat & whisk until it becomes thick. -remove from the heat and add the orange blossom water. -let it cool while whisking (we don’t want to have this milk skin on the surface), you’ll have to keep whisking for about 10 minutes (excellent workout! You can do it 5 minutes with the right hand & 5 minutes with the left hand). -pour the mouhalabiyeh on the tart base & put it in the fridge overnight. -sprinkle with pistachios and serve.   3. Just before the lockdown, I was in a taxi talking with the driver about the inflation & the dramatic political & economical situation in Lebanon. He was telling me how he couldn’t afford buying his kids a jar of Nutella, he had tried replacing it with other brands, but they would detect the fraud instantly. So they started saving their monthly pocket money to buy a jar of this super addictive spread. This was way before the big Nutella jar reached 27 000 LBP (18 US $). How hard is it to make Nutella at home? It’s very easy! You won’t fool your kids for sure, the homemade spread isn’t as smooth as the industrial chocolate hazelnut spreads you can find on the market, but it tastes much better, costs half the price & is free of palm oil. Try it & let me know how it goes! Ingredients: -227g hazelnuts -100g powdered sugar -35g unsweetened cocoa powder -3 tbsp canola or walnut oil -1 tsp vanilla extract -1/2 tsp salt -45g chopped dark chocolate or chocolate chips Method: -Preheat oven to 180 degree C. - Place hazelnuts on an oven tray. Roast for 12 to 15 minutes. -Remove from the oven and transfer onto a clean kitchen towel. Let cool for 5 minutes. -When cooled, gently rub the nuts with the towel until the skin comes off. -Place nuts in food processor and process until finely ground. Scrape the sides of the food processor bowl as needed. -Process nuts until they start to liquify. It can take about 5 minutes. Stop the food processor as needed to scrape the sides of the bowl. -Add powdered sugar and cocoa. Mix until well combined. -Drizzle in the oil and vanilla. Process until smooth. -Add the salt and process for 5 seconds. -lightly melt the chocolate in the microwave (20 seconds), and add it to the mixture and process until it all comes together. -You can add a bit of extra oil to loosen your mixture. -you can store it in your fridge for a month or on the kitchen counter for a week.
