  3. Say the word “Fattoush” these days and most people think; “The salad with pita chips”. Although that may be a true statement, there’s a lot more to this salad that sadly, gets overlooked. We’ll start with the name “Fattoush”, which comes from the Arabic word “Fett”, means to rip or tear. This describes the action used to tear apart the khubz (Arabic flat bread) which is a main ingredient of this salad. In its origins, this salad would’ve been referred to as “salata fatt”, which translates to “torn or ripped salad”. So how did that become “fattoush”? Allow me to explain. Although the origins of fattoush was to simply tear some khubz in a salad, it has morphed into something entirely different now. Due to the Lebaneses people’s competitive nature, chefs started to adding vegetables to their salad, one-upping the next until it reached a point when a chef was asked “what do you put in your “fatt salad”? He replied: “Fattish”, meaning “search” in Arabic and the name stuck! Nowadays, a good fattoush is measured by how many different vegetables you can squeeze into it. Although that may seem like an easy task, a modern day fattoush does have some minor requirements. First, is (like its origins) it must have lettuce and torn Arabic bread. However, today the bread must be toasted or fried and the lettuce must be Romaine. The dressing must include lemon juice, garlic, olive oil, ground sumac and pomegranate molasses. In my version, I build on those requirements, adjoining another dimension of flavors by adding a little sweetness from fresh dates, nuttiness from toasted pine nuts, creaminess from a ripe avocado and a little kick from a sprinkle of ground Aleppo pepper.   2. The Nazis captured my babushka Valentina (right) and her Russian family when she was 8 years old and put them on a train to a work camp. As fate would have it, the train broke down somewhere in Lithuania, and those who were still alive somehow managed to tip the train car over and escape into the dense forest, where they survived on berries and mushrooms until a landowner took them in as house servants. I remember her telling me the story of how they sent her, a little girl, up to a house in the Lithuanian countryside to beg for bread, only to be turned away… Baba Valya lived an incredibly hard life, but she survived, married a Polish man, and together they had an only child, my mother. I can’t smell wild dill in the summer without thinking about her. And every time I say my son Val’s name, it’s a tribute to her perseverance and a reminder that life is worth fighting for. So it was emotional and deeply fulfilling for me to be able to cook the food of my ancestors at @framehazelpark this weekend, and share Valya’s incredible survival story with 80+ friends and strangers while serving a warm berry compote made from black currants and blackberries from my own garden over tvorog-stuffed blinchiki. Food is a connector. Not just at the table, but across space and time. It’s how we preserve and share our stories with each other, traversing all of our human-designed boundaries toward something deeper than I can articulate with words. I’m honored to be able to call this my work, and so, so grateful for all of your support.   3. WHAT AM I UP TO?💥 Lots of people have been asking me lately, and I don’t know that I’ve ever done one of these “introduction” posts. So let me tell you about this magical place where I’m coming up on 2 years as editorial director… I joined the team at @framehazelpark in late 2021 after taking a buyout from the Detroit Free Press, where I was the restaurant critic. At the Freep, I covered the opening of Frame and was a frequent guest of its revolving chef dinners. I’d worked in a limited capacity with Frame founders @joevaughn & @cari.vaughn previously at Hour Detroit, where Joe had photographed most of the food coverage for 25 years. So when he asked me to come on board to help launch an editorial component, it felt like a natural fit. My role has evolved in the almost two years I’ve spent here, and today I help conceptualize and brand dinner ideas, scout and recruit chefs and culinarians for our spaces, represent Frame in various media outlets, work on marketing copy, shoot and edit all of our video content, and occasionally host my own themed dinners. This place and these people have allowed me to continue on my path of food storytelling in a way I never dreamed possible, learning the industry from the inside, pushing myself into new mediums, and working with hundreds of the most talented people in food on a day-to-day basis. I’ve learned the challenges of running a for-profit business with a unique business model and no roadmap, as well as the fulfillment that success brings. Frame is a true incubator, and an important stage for Michigan’s culinary community, linking the city and suburbs while giving up-and-coming chefs and creatives a safe space to learn, fail, adapt, thrive, and be seen. Every one of our experiences is a true collaboration. We share in both the wins and the misses, and the sheer breadth of our programming means that we are learning every day.
