  3. We arrived at our castle like home for the week to find a pleasant surprise waiting for us in our rooms. For the ladies, a tartan sash and brooch. For the gents, a traditional Scottish Kilt. Ahead of dinner we gathered in the foyer of our hotel and instinctually began to inspect and adjust each other’s wardrobe. Once we had given each other the all clear, it was a short ride to The Malt Barn at @glenfiddichwhisky distillery. We disembarked from our coach to be welcomed by a Highlander and his Bagpipes. The sun had just set and it was now time to begin the festivities. In place of a traditional seating card, guests found their way to their seats by identifying a personalized bottle of Glendfiddich 15yo with their name on it. The moment we were all seated and settled, the bagpipes started up again, ushering in the star course of the evening- Haggis. In keeping with Scottish tradition, we were treated to the poem by Robert Burns, Address to a Haggis. “Fair fa' your honest, sonsie face, Great chieftain o' the pudding-race! Aboon them a' ye tak your place, Painch, tripe, or thairm : Weel are ye wordy o'a grace As lang's my arm. The groaning trencher there ye fill, Your hurdies like a distant hill, Your pin wad help to mend a mill In time o'need, While thro' your pores the dews distil Like amber bead. His knife see rustic Labour dight, An' cut you up wi' ready sleight, Trenching your gushing entrails bright, Like ony ditch; And then, O what a glorious sight, Warm-reekin', rich!” It was a night of culture…filled with food, singing, dancing and whisky.
