INGREDIENTS - 1 kg Mutton / Lamb - 500g Ace Quick Samp - 1 Can KOO Speckled Sugar Beans - 1 Onion, diced - 1 Tsp Ginger and Garlic Paste - 1 Grated Tomato - 2 Chillies, sliced - 200ml Hot Water - 10-12 Mint leaves - Handful Of Coriander - 3 Sprigs Thyme - 1 Tsp Salt - 1 Mutton Stock Cube Spices: - 1/2 Tsp Cumin Seeds - 1/2 Tsp Fennel Seeds - 1 Cinnamon Stick - 2 Cloves - 1 Elachi Pod - 1 Bay Leaf - 1 sprig Curry Leaves - 1/2 Tsp Garam Masala - 1/2 Tsp Turmeric - 1/2 Tsp Coriander & Jeera Powder - 4 Tbsp Kashmiri Masala METHOD 1. In a pot, combine 500g of Ace Quick Samp with 1 litre of cold water. Bring to a boil with the lid on for 5 minutes.Reduce the heat and simmer for 20-30 minutes until the samp is cooked. 2. Meanwhile, in another pot, heat diced onions, curry leaves, sliced chillies, ginger, and garlic with all the whole spices (bay leaf, cumin seeds, fennel seeds, cinnamon stick, cloves, and elachi). Cook until the onions are translucent and the spices are aromatic. 3. Stir in the ground spices and cook for a few minutes. 4. Add the grated tomatoes, cover the pot, and cook until oil surfaces. 5. Mix in the lamb or mutton until well coated. Add mint and thyme, stirring to combine. 6. Season with salt and crumble in the stock cube.Pour in hot water, cover, and simmer, checking on the curry occasionally. 7. Once the curry is nearly done, add the cooked samp and a can of KOO Speckled Sugar Beans. Allow them to cook together for about 10 mins. 8. Garnish with fresh coriander and serve with a knob of optional butter for extra flavour.

  1. I have never received so many questions about this before and I apologise for not being able to respond to some of you. This is a ritual that still runs strongly through our family and I am determined to preserve it for future generations of mothers. I remember how therapeutic it felt. And while I may not be able to prove its physical healing properties, I remember how this very sacred ritual made me feel during an incredibly difficult postpartum journey. I vowed that going forward, I would make sure that any new mother in our family would be held and seen in the unique healing ways within our culture. Ingredients : Bathing leaves (nochi leaves) Guava leaves Gum tree leaves Turmeric (optional) Method : 1. Rinse the leaves thoroughly and transfer into a large pot with water. 2. Rapidly boil for about 2 hours, until the leaves and stems have released all their healing essential oils. The water will turn a brown colour and the smell is very distinctive. 3. Remove all the leaves and use the water in a traditional bucket bath. The water must be used as hot as possible. Pour the water from top(shoulders) to bottom. Use a facetowel to press the warm water firmly on the tummy area. The ritual includes having the room ready with lobaan. Once the mum has had a bath with the water, she can take a regular shower and wash her hair as well. Then stand over the lobaan for a few minutes. The baby can also be bathed at the same time (not with the boiled water) and then rocked over the lobaan.   2. Crab Curry with my Dad The voiceover says it all ♥️ I hope you give it a listen when you can. Here is the highly requested recipe : Ingredients 1 cup vegetable oil Pink crab (cleaned) 2 medium onions (sliced) 2 sprigs curry leaves 5 green chillies Thyme 5 tsp ginger & garlic paste 2 tbsp whole spice mix 6 tbsp mixed masala 2kg jam tomatoes (peeled and blended) Salt to taste 2 tbsp sugar Coriander to garnish Method : 1. Heat up the oil and saute the onions on medium heat until softened. 2. Add the cleaned crab and allow to steam for about 10 minutes. 3. Add the ginger and garlic and fry until the garlic cooks out. About 5 to 8 minutes. Followed by the chillies, curry leaves and thyme. 4. Then add the whole spice mix. This is basically the biryani whole spice mix that my parents toast and grind fresh. 5. Followed by the masala. We use a homemade family masala which my dad adds everything to. From turmeric to jeera powder. You don't need to add anything else when using this spice. Allow the spices to cook and absorb into the crab. Cook for a further 5 minutes. 6. Then add the tomatoes. I remove the peels because they add an unwanted texture to the gravy. Its ok to add it if you don't have the time to remove the skins. We love adding extra tomatoes to create an abundance of gravy that can be scooped up with fresh white bread. 7. Season with salt and sugar and cook for about 40 minutes OR until the tomatoes are fully cooked and the oil surfaces. 8. Garnish with coriander. Serve with white bread or rice. A side note : my dad does not add tamarind to his crab curry. I add a little but I actually prefer it without tamarind. The sweetness of the crab meat can easily be overpowered by the sourness of tamarind. However, it really is a personal choice with flavours ♥️ Add the ingredients that you and your loved ones enjoy most. #crabcurry #durban

Using a pencil, mark out the circumference of a dinner plate on baking paper. Whisk egg whites with a hand mixer until stiff peaks form, then whisk in caster sugar, 1 tablespoon at a time, until the meringue looks glossy. Whisk in vinegar, cornflour and vanilla essence. Spread the meringue inside the circle, creating a crater by making the sides slightly higher than the middle. Alternatively, pipe as desired. Reduce oven to 110°C and bake for 1 hour 30 minutes, then turn off the heat and let the pavlova cool completely inside the oven. Do not open the oven door during this period. For the Lemon Curd: 4 large eggs 1 cup sugar 3/4 cup lemon juice Zest from 2-3 large lemons 1/2 cup butter, cubed Pinch salt In a saucepan, whisk the eggs and sugar together over medium heat. Continue whisking until fully mixed. Whilst whisking, add the juice, zest, and a pinch of salt and mix till well incorporated. Add the butter in increments while whisking continuously. Continue cooking the curd for about 10 minutes while occasionally whisking until it thickens. Remove from heat and strain through a fine mesh sieve, and allow to cook in the fridge before using. To assemble pavlova, add whipped cream, lemon curd and gooseberries, sliced nectarine, blood oranges and berries. Decorate with flowers and a light dusting of icing sugar. 📸: @ibtesam_essa

Ingredients For the Tandoori Chicken Marinade 6 chicken thighs 2 Tbsp ginger and garlic paste 1 tsp turmeric powder 1 tsp cumin powder 1 tsp coriander powder 1 tsp Kashmiri chilli powder 1 tsp tandoori spice ¼ cup yoghurt Salt 1 Tbsp ghee or butter For the Curry 2 Tbsp ghee or butter 2 large onions, finely sliced Whole spices: 2 cinnamon sticks, 4 cardamom pods and a tsp of cumin seeds 2 whole green chillies 5-6 curry leaves 1 tsp turmeric powder 1 tsp cumin powder 2 tsp coriander powder 2-4 tsp Kashmiri chilli powder (adjust for heat preference) 1 tsp brown sugar 1/2 cup yoghurt 4 -6 tomatoes blended till liquid in consistency 1 Tbsp tomato purée Salt 1 small coal and additional ghee for smoking Method Mix the marinade spices together and coat the chicken well. Add ghee or butter to a #LeCreuset Signature Shallow Casserole over medium heat and cook the chicken for 20-25 minutes on medium. Remove from the heat, and over a gas flame, char the chicken thighs until slightly burnt and smoky. Alternatively, add the chicken to an oven-safe dish and grill on the highest setting until slightly charred and golden. Set aside. Add ghee and onions and fry until golden in a shallow casserole on medium heat. Add whole spices, green chillies, and curry leaves and fry until aromatics are released. Add powdered spices, followed by yoghurt, and mix well. Add a splash of water to prevent the curry from burning. Add the tomato, tomato purée, and brown sugar and allow to cook until the oil layer reaches the top, roughly 15-20 minutes. Light the coal on the gas burner until flaming. Add chicken thighs to the curry and place a piece of foil in the centre, adding the hot coal to the foil. Add a teaspoon of ghee onto the coal and seal the pot with the lid to smoke for 3-5 minutes. Once complete, garnish with coriander. Serve with garlic naan.
