This week was national pizza week so I ate a bunch of pizza and with trial and error made this pizza salt bread. I started making salt bread using @erinscozykitchen ‘s recipe and have been experimenting for a month now. Big things - tomato acid can kill yeast, counteract that by adding some more sugar, using tomato paste, and making a nice warm environment for yeast to thrive. I use my oven with a pot of boiling water inside. Easy process, I want to experiment with Nutella salt bread next! #bakingreel #saltbread #shiopan #pizza baking

  3. The San Jose Cementerio (also called the Cementerio San Jose or the San Jose Cemetery) was established in 1919 as a resting place for East Austin‘s Mexican and Mexican-American population. At the time, cemeteries were segregated, so Mexicans were not allowed to be buried in white cemeteries. Cementerio San Jose served the community through the 1950s. Since it sits on donated land and doesn’t fall under the jurisdiction of the Austin parks department for some reason, nobody is technically responsible for its upkeep. This resulted in the land becoming completely overgrown in the following decades. In the past few years, however, residents of the neighborhood and nonprofits have stepped up to maintain the land. If you’d like to get involved in conservation efforts, you can follow @sanjosecemeteryatx & @atxhispaniccemetery to stay updated on future cleanup days and events. If you end up visiting, please be respectful of the graves. Those buried here are people’s ancestors, and many of their descendants still live in Austin. One of the longest-standing Asian grocery stores in Austin — and a huge part of the ATX Asian food community — just announced they’re shutting down. To make things worse, someone vandalized their refrigeration system, cutting the lines on the roof. Because of that, everything frozen or refrigerated is 50% off today and tomorrow while they clear out what’s left. As someone who went to school for this shit (both kinesiology & now food) it hurts my heart and I empathize with my female clients who “never know what to do.” There so much information out there that’s contradictory.   3. These glutes are not performative. I get asked what my routine is and it’s this: consistent lifting of the same movements (or movement patterns at the very least) and progressively overloading. meaning I am getting stronger over time and not doing the same weight. I can do: 405 on hip thrust, 115 on lunges, and RDL 190 lbs. & that’s still on the “lighter side” for advanced lifters. meaning the next step for me is to keep doing what i am doing and increase intensity week by week (when the variables align and I’m not killing my body) I rest 2-3 days a week. Not resting at all is killing your growth and progress.

  3. Here’s the best new croissant in Austin TX, that you probably haven’t heard about. Located in the heart of downtown, you’ll find @goodthings_atx in the unassuming location of @fairmontatx. Executive Pastry Chef @christopher_frigara was trained in France and has worked around the world before arriving in Austin a few months ago. The croissants are truly spectacular, from the insane lamination and honeycomb structure, down to the French butter richness. They also have specialty croissants- we tried the pecan, which surprised us with a delicious hazelnut cream filling!   2. lucky hand-pulled noodles inspired by the year of the snake 🐍🧧 eating long noodles for lunar new year is supposed to bring good fortune, prosperity and luck! the longer the noodle, the longer your life 🍜 recipe below: - 300g ap flour - 1 tsp kosher salt - 2 cups spinach - 150 ml water - veg oil - 2 tbsp sichuan chili crisp - 2 tbsp soy sauce - 1 tbsp chinese black vinegar - 1 tbsp oyster sauce - 1 tsp sugar - thinly sliced radishes, scallions + cilantro ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. in a blender, blend spinach and water. strain and set aside 2. in a large bowl, whisk flour and salt. slowly add the spinach water in batches, combining by hand or stand mixer 3. once combined, continue kneading by hand on a flat surface until smooth. knead ~5 mins, then cover with plastic wrap and rest for 20 mins 4. knead the dough for 3-4 mins, then cover and rest for 20 mins 5. brush the surface of a large plate with veg oil. roll the dough ball into a log shape and cut into 6 equal portions. place the logs on the plate and brush them with oil until all sides covered. cover the plate with plastic wrap and let rest at room temp for at least 1 hour, up to 12 hours 6. using a rolling pin, take one log and flatten it out into a rectangular shape. use a chopstick to make an indentation along the center of the dough, lengthwise 7. hold each end of the noodle strip and gently pull until it starts to lengthen. flick the dough downwards and let it hit the surface while pulling. once it reaches your desired thickness, separate the noodles along the middle line. you can keep them in a loop or cut them. repeat until all are made into noodles 9. bring a pot of water to a boil and cook noodles for ~2-3 mins 10. combine all sauce ingredients in a large bowl and toss noodles. garnish with chili crisp, radishes, scallions and cilantro

  3. smashburger who? smashed dumpling tacos on a tuesday are where it’s at 🥟🌮 we were slightly skeptical of this viral trend, but it was definitely worth the hype Ingredients: - ½ lb ground pork - 2 green onion stalks, thinly sliced - ½ tbsp ginger, grated - ½ tbsp garlic, grated - 1 tbsp soy sauce - 1 tsp sesame oil - 2 tsp mirin - Salt and white pepper, to taste Sauce: - 2 tbsp soy sauce - 1 tbsp Sichuan Chili Crisp - 1 tbsp Chinese black vinegar - 1 tsp agave - 1 tsp sesame oil 1. In a medium bowl, mix together ground pork, green onion, ginger, garlic, soy sauce, sesame oil, mirin, salt and white pepper until well combined. Cook a small piece of the mixture and taste for seasoning. Adjust if needed. 2. Meanwhile, prepare the dumpling sauce by combining all ingredients together. Adjust seasoning if needed. 3. Using a spatula or knife, spread the ground meat mixture onto each flour tortilla in a thin layer, ~¼ inch thick. Repeat until all of the mixture is gone. 4. Heat a large pan over medium-high heat and add 1 tbsp of cooking oil. Place the tortillas meat-side down and cook, leaving undisturbed until meat is browned. Flip and let tortillas cook for about 2 minutes longer on the other side. Repeat with remaining tortillas. 5. Top tacos with cucumber, cilantro and a drizzle of the dumpling sauce. Enjoy!
