I Cup Medium Grain Rice 1 Cup Cihan Rice or Basmati Rice 1/2 Kilo Chicken, We used thigh 3 long Large Eggplants 2 large Potato’s 2 large Tomatoes 300 grams Lamb mince 2 Tbsp of butter, divided 1 Chicken Stock Cube dissolved in a Bowl with 3 Cups of water( you might not need all of it ) Spice blend for rice 1 tsp Black pepper , Saxa ground pepper 1 Tsp Mixed Spice 1 Tsp All Spice 1 Tsp Salt Soak both rice in a bowl for minimum 1 hour Add oil to a pan, add mince meat, salt and pepper. Cook mince and set aside in a bowl. Slice tomatoes Slice eggplants long ways as per video. Add salt and let them stand for 10 minutes. You will see moisture release. Use kitchen paper to dab them and remove moisture. Deep fry your eggplant in batches. Set aside on a plate with kitchen paper once cooked. Line your pot with first. Tomatoes, then the mince, then the eggplants ( see highlights) Add Potatoes, Chicken then your rice. In a large pot add Water and a Chicken stock cube and dissolve. ( Check Salt ) Bring to a Boil and have it ready because you want to add boiling stock to the rice. Place enough stock to just cover the rice. Fold down your eggplants on top of the rice downwards Bring to a boil then turn down to the lowest heat. C H U R R O S 2 cups water 110 grams unsalted butter 2 Cups Plain Flour 2 Tbsp Sugar 2 Medium Eggs 1 tsp Vanilla Essence or Paste 1/4 tsp Salt Vegetable oil for frying Sugar Coating 1 Cup Sugar 1 1/2 tsp Cinnamon Add water, butter, sugar and salt to a large Pot , bring to a boil over medium to high heat. Add flour the reduce the heat to low and cook and stir constantly with a rubber spatula until mixture comes together and is smooth. Transfer mixture to a large mixing bowl, let cool 5 minutes. Add Eggs and Vanilla and blend with a Food mixer or by hand. Add mixture into a piping bag. Line baking paper on a tray and pipe the mixture to the desired size. Freeze for 10 minutes. Heat oil in a pot and fry until golden. Transfer to plate with paper towel then quickly coat in sugar mixture. #churros #dessert #recipe #snack

Set aside.
 Season the chicken breasts with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
 Heat 1 tablespoon of oil in a pan over medium heat. Cook the chicken until it golden brown and cooked through. Set aside
 Once chicken is cool chop into strips or small pieces. Set aside. In the same pan, add olive oil and butter over medium heat. Add the garlic and sauté until fragrant.
 Pour in the heavy cream and add garlic powder, onion powder, paprika, salt, and chicken salt. Stir to combine.
 Gradually whisk in the parmesan cheese and simmer the sauce until thickened to your desired consistency. Set aside in a plate. To Assemble Cut your loaf in half. Spread Butter all over. Drizzle your Alfredo sauce over your loaf. Add a 1/4 cup of Parmesan Cheese all over the loaf Add a 1/4 Cup Mozzarella Add Your sliced Chicken Drizzle more sauce all over loaf Bake in the oven for 15 minutes or until Golden.   1. This week was a a rough one, and we often have those days, but when I see videos of my nene and Dede I remember my why. Some of you might remember this, and some of you might have no idea… but this is where it all started to unfold for me 🤍 Back in 2017, I won a competition where I submitted my own recipe. If you won, your recipe would be featured in the Yellow Pages and you’d be on the cover. It was such a special experience, but what I remember most is my Dede. He was so proud. He hugged and kissed this book over and over, came into the room just to tell us how happy he was. That moment has stayed with me forever. I miss him so much. And on the days where I feel stuck, or like this path isn’t meant for me, or I’m not doing enough… I think of him. I think of the strength he gave me and the part of him that still lives in me. Crispy Hainanese Chicken Rice 🍗🍚 Ingredients * 4 chicken marylands * 1L chicken stock * 1 bunch spring onion * 1 thumb ginger * 4 garlic cloves * Sesame oil * Salt * Chicken fat/skin trimmed from chicken * 2 cups jasmine rice, washed * Cucumber * Bok choy * Spring onion oil * Sweet thick soy sauce * Chilli sauce Method Simmer chicken marylands for 40 mins in chicken stock with spring onion, ginger and garlic until tender. Remove, pat dry, brush with sesame oil, season with salt and air fry until super crispy. For the rice, render chicken fat and skin until crispy. Add garlic, ginger and washed jasmine rice and fry for 1–2 mins. Pour in reserved chicken stock and cook until fluffy. Serve with cucumber, bok choy, spring onion oil, sweet soy and chilli sauce 🥢 #hainanesechickenrice #crispychicken #easydinner

  3. The best way to use those little random packets of pasta 😅 Jungle Pasta A comforting family favourite with creamy béchamel, rich beef sauce and a golden cheesy topping. Ingredients THICK style Béchamel * 60 g unsalted butter * 60 g plain flour (½ cup) * 800 ml full-cream milk * ⅓ cup finely grated Parmesan * Salt and black pepper, to taste Meat Sauce * 2 tbsp olive oil * 1 onion, finely diced * 3 cloves garlic, minced * 1 carrot, finely diced * 1 celery stalk, finely diced * 500 g beef mince * 2 tbsp tomato paste * 2 tsp Italian herbs * Salt and black pepper, to taste * 700g @muttipomodoroau passata * 350 ml water (fill the empty passata bottle halfway, shake, and pour into the sauce) To Assemble * 500 g pasta (penne, spirals or shells) * 2 cups grated mozzarella or tasty cheese Method 1. Make the béchamel Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 2 minutes. Gradually whisk in the milk until smooth. Continue cooking, stirring constantly, until the sauce is thick and coats the back of a spoon. Stir through the Parmesan and season with salt and pepper. 2. Make the meat sauce Heat the olive oil in a large frying pan over medium heat. Add the onion, garlic, carrot and celery and cook until softened. Add the beef mince and cook until browned, breaking it up with a spoon. Stir in the tomato paste, Italian herbs, salt and pepper, cooking for 1–2 minutes until fragrant. Pour in the passata, then fill the empty passata bottle halfway with water, shake well and add it to the pan. Simmer for 20–30 minutes, until the sauce has thickened. 3. Cook the pasta Bring a large pot of salted water to the boil. Cook the pasta until just al dente, then drain. 4. Assemble Return the pasta to the pot and stir through the béchamel until evenly coated. Transfer to a baking dish, spoon over the meat sauce, then sprinkle generously with the grated cheese. 5. Bake Bake at 180°C fan-forced (200°C conventional) for 20–25 minutes, or until the cheese is melted, golden and bubbling.   3. Kylie and I met in around 87, I think Neighbours was about to end and she’d done Locomotion and Hand on Your Heart ? I was Fashion Director of a magazine called Follow Me which was kinda edgy and stylists didn’t really exist back then so the photographer booked to shoot some PR images and album cover for her Japanese label was the photographer I worked with mostly (and also happened to be married to, Grant Matthews) and we were booked together. I actually knew nothing of her. I’d never watched Neighbour’s, I’d not heard her music, I was in an elite fashion bubble and that was my world (and also had a new baby). I was immediately taken by her - firstly physically- she was gorgeous, perfectly proportioned and I knew I could ‘transform’ her into my idea of how a pop star should dress (I had this idea that I could influence the world with my notion of how fashion should be). We got on really well and Kylie has very good instincts and I think also she recognised that we’d be a good fit in terms of progressing her style and so we did everything together after that. Every tv interview outfit, Top of the Pops outfits, random performance outfits, tour outfits etc. I’d style looks and tape Polaroids into a binder allocating looks to events. I had just Ava at this stage so couldn’t tour with her so that’s how we had to do it. All of our fashion choices were made together, I never decided on anything independently, we definitely collaborated on all her looks. Mostly I’d come up with ideas and we’d flex them together or she’d veto them. She was the ultimate professional- never tiring (although I would know she absolutely HAD to be exhausted), always gracious. Another take, another interview, always with a smile. I could talk about this period forever but in a nutshell, I am so grateful and privileged to have been a part of her early fashion transition, and to have been her friend.   3. This recipe took me YEARS to replicate, my grandma used to make it when I was small but couldn’t remember it when I asked her about it a while ago. I hope it brings you and your family as much happiness as it brought ours ❤️ So here she is! ⚪️ Orange & Almond cake 1 Cup butter 1 Cup caster sugar 1 Cup plain flour 1 Cup course Semolina 3/4 Cup veg oil 1/2 Cup milk 5 eggs - Room temp 2 Tspn baking powder 1/4 Tspn salt 1 Tblspn vanilla Zest of two oranges Halved almonds For the orange syrup: Juice of 2-3 large oranges (Approx 2 Cups juice) 1 1/2 Cup caster sugar Directions: 1. Preheat the oven to 180 degrees 2. Prepare cake tin - line tray with baking paper & spray with oil & sprinkle with caster sugar. 3. Put orange juice & caster sugar in a small pot, bring to the boil, simmer till sugar is dissolved, remove from heat & cool. 4. Put dry ingredients in a bowl (orange zest, flour, salt, baking powder) 5. Beat eggs - after 2 mins slowly add caster sugar till eggs are fluffy & foamy. 6. When fluffy, slowly add oil while beating for a further 3-5 mins. 7. Melt butter & add to dry ingredients, along with the milk & vanilla.. 8. Fold in the egg mixture till combined. 9. Put mixture into cake tin, top with halved almonds & cook for 40-45 mins or till a skewer inserted into the centre comes out clean. 10. Remove from oven, leave cake in pan & pour syrup over the cake while the cake is warm (syrup cooled). 11. Set aside for 4-5hrs (for best results overnight) 12. Slow cooked steak tacos that basically cook themselves 🌮🔥 Throw it all in the slow cooker in under 5 minutes, let it do its thing for 8–9 hours, then come home to tender, pull-apart steak ready for tacos (or burrito bowls if that’s your vibe). Perfect for busy days, batch cooking, or nights you really can’t be bothered but still want something seriously delicious and hearty. Save this for later and thank yourself midweek Serves 3–4 2 rump or chuck steaks (approx 250g each) 400g tin tomatoes 1 cup water 1 tbsp cumin 1 tbsp paprika 1 tsp chilli Salt and pepper (Adjust spices to taste or use a pre-made mix) Add everything to the slow cooker and cook on low for 8–9 hours until the steak is tender and easy to pull apart.
