  1. The culture & cuisine of Peru is captivating. When I visited over a decade ago, I was entranced by the seafood dishes, specifically the ceviche with its use of corn and potato, the principal crop of the country. The vibrant colors, both in fabrics and dishes, mesmerized. I always thought Peruvian cuisine was so under-represented in Philly and surrounding areas, until finally a few places popped up in recent years. In the last month, a truly authentic one has opened in @collingswoodnj called @kikos_collingswood, a BYOB that respects tradition and which is owned by the wonderful Cervantes family (1st time restaurateurs), who handle both the front and back of house. Chef Kiko (who has a background in culinary) mans the kitchen while Carlos is on the floor as well as crafting plates from his heritage (he’s also part Chilean), with their children and relatives serving plates with huge smiles. The hospitality is so genuine that it exudes happiness, because they’re truly excited to serve and share their culture’s unique food. The classic ceviche with meaty, textural Corvina fish is outstanding, especially with the Canchas, the large crispy, fried Corn kernels that also taste great on their own with a beer. Sweet potato also appears, adding color and contrast to the subtle heat. Peppers are also very prevalent in Peruvian cooking, and the use of yellow pepper (Ají Amarillo) in another ceviche rendition adds additional layers of color and creaminess. You’ll find that same bright yellow in the Causa, another hearty staple that is best described as mini casseroles with layers of potato sandwiched with a filling. Kiko’s causa is large (shareable as an appetizer), beautifully presented, and served cold, with puréed potatoes seasoned with ají amarillo paste and lime juice and stuffed with chicken salad, mayo, peas and carrots... A true taste of the Shore and the Sea at @hookedupseafood, where the Bright family has created a welcoming dining destination during the Summer months that has become an integral part of the Season. It’s an incredible Boat-to-Table experience that’s casual, fun, and delicious, while bringing family + friends together. Bring your own wine or beer, and be ready to get your hands playfully dirty. Don’t miss the Little Neck Clams that are laden with garlic, butter, and parsley, which gets sopped up by toasted garlic bread. The special Jonah Crab Claws yield sweet, cold meat that’s even better when dipped into the butter. If John Dory is available, be sure to order it blackened or simply seared in tacos with mango salsa, or a platter with 2 sides. The Skewered Shrimp (and scallops when available) with fries and slaw comprise a wonderful warm weather plate. If owner/fisherman Bill is in the back cutting Swordfish or fresh Tuna, add those to your full table. I could write a book.📖 - The approach our healthcare and even fitness (preventative healthcare) widely uses is faulty at best. The prescription is to blame, overlook, and over-medicate. Rarely do we look at why our systems are off. Rarely do we take into account we are natural beings living in an artificial world and that maybe it’s not our brains that are faulty, it’s that they can’t survive/thrive under these conditions. - The second I took control over my anxiety was the second I got back to my roots as a human being- something we often forget that we are. For me this meant: Less screens, more REAL food, more REAL conversations and relationships, more time in nature, in the sun, more time living and less time worrying. Facing whatever my fear was.. death? Realizing we die every day we live in fear by wasting the time we do have. - Sometimes medication can be a wonderful thing... but are we overprescribing before we are looking into what may be influencing it? Are we empowering people to self-govern their own healing? Are we encouraging them to know that they have that power? It’s been an amazing journey thus far and I have so much further to go. But from frequent panic attacks to a Holocene era of calm and focus... I am only just now realizing the extent of my power over myself. - Follow your voice first, and then fill your spaces with more voices who uplift that God-given power to evolve past your circumstances. I love you and believe in your healing!!!! ❤️

I WISH I’d known this😤 I thought that the only way to lose weight and change my body was to live off of lemon water w/ apple cider vinegar, rice cakes + tuna, cauliflower rice, protein shakes and grilled chicken salads. And it worked for a little… I would be SO GOOD during the week, I would pack my perfectly portioned meals, and my 100 cal snacks and be so proud of myself!
