  2. Had a Friday off and headed to @bearcatnola hoping to sneak in with no wait. Unfortunately there was still a 20 min wait even on Friday which speaks to their excellence! Tried something new today, brisket mash with an egg in the hole. This was my first egg in the hole experience and wow I really enjoyed it. The surrounding toast was flavorful, drawing from a strong multigrain flour, this tasted like it was freshly ground and formed just before becoming my toast. The egg nestles inside the toast creating almost a poached texture. Brisket is always a way to elevate your breakfast meats and it certainly works here. From a place that always brings the flavor, the brisket did not disappoint. Well seasoned, chopped up then almost recooked in a vacas fritas style, an excellent accompaniment to delicious eggs and toast. Bearcat’s crispy potatoes are exactly what I look for. Perfectly crispy and soft on the inside once you crunch through on your first bite. Excellently seasoned to add bold spiciness. I love when you get a smaller piece that is a little well done and all crisp. It really can’t be done better. Was feeling hungry so a side of blueberry pancakes made an appearance. Fluffy and soft, they practically melt in your mouth. A nice crunch on a few of the thin edges is always fun. Delicate sweetness, paired with a syrup that I think was fruit based, it complimented the pancakes well and was sweet and fresh. Always an amazing experience at @bearcatnola, everything was packed with flavor and cooked superbly! Always worth the wait!

It is with great disappointment though that I must announce that as of last Tuesday my employment with Monarch ended abruptly and without explanation. I would usually like to say I am grateful for the opportunity but honestly, it’s been a huge relief. When I was hired by Maple Hospitality Group, I was very reluctant to leave a dream job working as the Chef de Cuisine at Carbone Dallas, a job I held for nearly three years. Being offered the opportunity to develop a cuisine unique to my own life’s experiences and share it with the Dallas community was one that clouded my judgement and allowed me to be sold on the idea of leaving a job I loved. It’s unfortunate that Monarch has chosen to go a different route not four months after convincing me to leave my job and less than a month after I made a complaint to MHG’s corporate HR department about managers drinking at work and the impact, I felt, it had on the professionalism of the workplace and our ability to create the best experience for our guests. Life moves on. I refuse to look at this as a setback but rather a deliverance: the opportunity to truly explore my philosophy of hospitality and cuisine and share it with you, without hinderance. Dallas has become my home over the past 6 years. From my time as a sous chef at Bullion – where the Dallas community came to aid in my greatest time of need and then during the pandemic when I found I had an opportunity to reciprocate and give back through the work Heard That Foundation did to feed the community. Then came the opportunity to work as a leader at Carbone, a restaurant I loved in NYC, now here in Dallas allowed me to reconnect and share (while indirectly) a part of the culture I grew up with in an Italian American family from NY through the lenses of chefs I have admired since culinary school.
