Eating Korean bbq is fun since you get to cook your meats on a sizzling pan built into your table, everyone gets to customize their dish, and nobody has to do dishes after 😅 Since we had skipped breakfast, we selected the spicy boneless dark meat chicken, spicy pork belly, thinly sliced beef brisket and the beef bulgogi. My favorites were the brisket and the dark meat chicken, while my husband preferred the flavors of the bulgogi.   2. Hi friends. On March 27, three men with high-powered rifles approached the vehicle my friend and I were in and shot at us 21 times. 7 of those bullets struck me, nearly killing me. To save our lives, my friend attempted to flee which lead to us being involved in a car accident immediately after. I am concussed and my arm is broken. I have several bullet fragments throughout my body, and stitches and staples in my head. I have a long road to recovery ahead of me, during which time I will be unable to work. I am asking for your support to help me cover my extensive medical costs, costs associated with taking care of my son and my mother (who is not working in order to assist with my recovery), rent, utilities, and general living costs for the duration of my 3-month recovery.   1. Sometimes I get stuck in my New Orleans bubble and forget that there are so many great places to try outside of the city! This past week I ventured outside the bubble and found THE MOST amazing dessert shop in Metairie. @sweethandkraft_ has so many interesting ice cream flavors, they have the most BOMB cookies, and macaroons, bubble waffle cones! LITTERALLY Something for everyone! 🍨🍩🍪 My boyfriend and I had to try everything! - I got a scoop of Vietnamese ice cream mixed with a scoop of the Honey Lavender My boyfriend got a scoop of the Strawberry cheesecake and Red velvet cream cheese!   1. I finally got my hands on an @leveebakingco OG QUEEN cake! Truly a work of art, I was inspired just when I first opened the box. The light, delicate, flaky pastry is beautifully put together and lives up to the high pastry standard they’ve created for themselves. The pecan and citrus filling brings a light sweetness. It has such strong aromas through the spices and herbs, I honestly couldn’t tell you exactly what the mix is, but it’s rustic and earthy and if English countryside was a flavor, it would be this. Refined and thoughtful, I highly recommend if you’re looking for an alternative to the icing sugar overloads of the brioche style king cakes.

  2. Had a Friday off and headed to @bearcatnola hoping to sneak in with no wait. Unfortunately there was still a 20 min wait even on Friday which speaks to their excellence! Tried something new today, brisket mash with an egg in the hole. This was my first egg in the hole experience and wow I really enjoyed it. The surrounding toast was flavorful, drawing from a strong multigrain flour, this tasted like it was freshly ground and formed just before becoming my toast. The egg nestles inside the toast creating almost a poached texture. Brisket is always a way to elevate your breakfast meats and it certainly works here. From a place that always brings the flavor, the brisket did not disappoint. Well seasoned, chopped up then almost recooked in a vacas fritas style, an excellent accompaniment to delicious eggs and toast. Bearcat’s crispy potatoes are exactly what I look for. Perfectly crispy and soft on the inside once you crunch through on your first bite. Excellently seasoned to add bold spiciness. I love when you get a smaller piece that is a little well done and all crisp. It really can’t be done better. Was feeling hungry so a side of blueberry pancakes made an appearance. Fluffy and soft, they practically melt in your mouth. A nice crunch on a few of the thin edges is always fun. Delicate sweetness, paired with a syrup that I think was fruit based, it complimented the pancakes well and was sweet and fresh. Always an amazing experience at @bearcatnola, everything was packed with flavor and cooked superbly! Always worth the wait!

  3. Have you been to the appetite repair shop? I headed over there Saturday evening checking out the bonfire fest on Algiers Point. The bbq shrimp I got was definitely the highlight of the evening. It’s an intimate operation and his menu is changing a lot, but hopefully the bbq shrimp will stick around for you to get a chance to try . When you walk in you’ll be welcomed by a myriad of delicious smells. This bbq shrimp had all that perfect spice and warmth, the only thing that would’ve made it better is if the night was a little cooler out. It was served up with warm gooey pull apart Brie bread that was perfect for soaking up all the juices. The shrimp were huge and well cooked, I felt like I was eating lobster more than a shrimp. Definitely go check @appetite_repair out next time your in Algiers Point!

  2. Thank You @modluxdallas for this feature. I am grateful to everyone who took notice of what I was trying to do with the cuisine at Monarch. It is with great disappointment though that I must announce that as of last Tuesday my employment with Monarch ended abruptly and without explanation. I would usually like to say I am grateful for the opportunity but honestly, it’s been a huge relief. When I was hired by Maple Hospitality Group, I was very reluctant to leave a dream job working as the Chef de Cuisine at Carbone Dallas, a job I held for nearly three years. Being offered the opportunity to develop a cuisine unique to my own life’s experiences and share it with the Dallas community was one that clouded my judgement and allowed me to be sold on the idea of leaving a job I loved. It’s unfortunate that Monarch has chosen to go a different route not four months after convincing me to leave my job and less than a month after I made a complaint to MHG’s corporate HR department about managers drinking at work and the impact, I felt, it had on the professionalism of the workplace and our ability to create the best experience for our guests. Life moves on. I refuse to look at this as a setback but rather a deliverance: the opportunity to truly explore my philosophy of hospitality and cuisine and share it with you, without hinderance. Dallas has become my home over the past 6 years. From my time as a sous chef at Bullion – where the Dallas community came to aid in my greatest time of need and then during the pandemic when I found I had an opportunity to reciprocate and give back through the work Heard That Foundation did to feed the community. Then came the opportunity to work as a leader at Carbone, a restaurant I loved in NYC, now here in Dallas allowed me to reconnect and share (while indirectly) a part of the culture I grew up with in an Italian American family from NY through the lenses of chefs I have admired since culinary school.
