  1. This fermented Amla pickle (in brine, not oil) is a winter staple that packs in both Vitamin C + probiotics in the most natural and easy to prepare form. I’m always stunned at how the humblest of local produce contains exactly what the body needs for optimal health- like Amla which happens to be one of the richest sources of Vitamin C, with just one small amla containing more Vitamin C than 2 whole oranges. If we look closely, there’s wisdom in our cultural practices like आवळीभोजन- a bygone practice that both my father and father-in-law recall from their childhood days, when women would not just worship but also have a meal under the Amla tree on Kartik Navami. It’s Kartik Navami tomorrow, and while we might not have the time or an amla tree to sit and have a meal under, surely we can go into our local markets to get some amla to make our own annual tradition of valuing, cooking with and consuming this local superfood. Here’s the simple recipe for this quick pickle that is ready in just 3-4 days, stays in the fridge for upto 6 months and makes a great healthy side for meals. Wash and clean the amlas.  Now my mother-in-law’s recipe pricks the amlas all around with a fork, so the salt solution seeps through, but you can also make slits.  Make the brine- the ratio is 30 gms (2 heaping Tbsp) salt for 1 litre of water. Mix this well. Filtered water is fine. My mother-in-law eyeballs the salt (and later checks the saltiness and adjusts), so I checked the ratio with fermentation queen Payal @kobofermentary Now add this brine to a clean glass jar and drop in the pricked amla. Don’t fill the jar to the brim- keep some space for the bubbles. Keep in a cool, shaded place for 3-4 days- tasting and mixing it each day. After 3 days the astringency should have reduced and you should see small bubbles. These need just 4 ingredients and the end results (like, but better the inside of a bounty bar! as a friend exclaimed) never disappoint. I made these in a rush, due to our altered Diwali plans, and was happy to find a reliable partner in @instamart for the ingredients of course, but also for a sturdy steel Kadhai to make this preparation. What’s more, I found cooking essentials like oil added to my cart almost for free (a mere 9 Rs) with my Kadhai purchase, a sweet surprise indeed. So, this festive season light up your kitchen & home with the great collection & offers at @instamart As for the recipe, here goes In a heavy-bottomed Kadhai, combine 2 heaping cups of freshly grated coconut/ 180 gms 1 cup of sugar/ 260 gms 2 Tbsp water Heat this on medium heat While the mixture is cooking, bloom a fat pinch of saffron strands in 1 Tbsp water warm water Cook down the coconut-sugar mixture till it no longer bubbles- this will take 10-12 mins. Add the bloomed saffron, cook down some more till the water evaporates but the mix starts coming together as a ball. Turn off the flame, add 1/4 tsp ground cardamom Mix well. Turn it onto a plate greased with ghee/ coconut oil. Pat onto the plate, add an optional handful of chopped nuts, and when it cooles slightly (but not completely) cut into squares.
