Grab the recipe for these crackers below👇🏻I’m happy to send the link to anyone who wants a printable link for this recipe♥️ INGREDIENTS * 1.5 sleeves of club crackers (I use Keebler Brand) * 2 sticks or 1 cup of butter * 1 cup of light brown sugar, packed * ½ tsp of vanilla extract * 1 12oz package of semi-sweet chocolate chips * Hefty pinch of Maldon Sea Salt or Kosher Salt * Preheat your oven to 350 degrees Fahrenheit. Line an 11”x17” baking sheet completely with foil and then place parchment paper on the base of the baking sheet. INSTRUCTIONS 1. Line the foil/parchment lined baking sheet with club crackers leaving no spaces and set aside. It took 52 & one-half crackers to completely cover my baking sheet. 2. In a heavy saucepan over medium heat, melt butter and light brown sugar together and stir occasionally until the mixture starts to boil. Once it comes to a boil, allow your sugar mixture to boil for 2-3 minutes, whisking well. Remove your sugar mixture from the heat and whisk in ½ teaspoon of vanilla extract. Quickly pour this mix over your prepared baking sheet covered with club crackers. Immediately after pouring, spread the caramel quickly with a spatula because the mixture will start to caramelize and set soon after it’s poured. 3. Place your caramel covered crackers into the oven preheated to 350 degrees Fahrenheit. Bake for 13-15 minutes, watching carefully to make sure the edges do not brown. Remove the crackers from the oven, the caramel will be bubbly. Immediately spread your semi-sweet chocolate chips over the crackers. Let stand for five minutes before spreading the chocolate chips with a spatula to completely cover the entire surface of the crackers. After the chocolate is spread, sprinkle the chocolate with a hefty pinch of sea salt or kosher salt. Once your crackers have completely cooled, break them into pieces and store them in an airtight container at room temp or in the freezer.

Adam & Eve Cafe is a coffee shop that specializes in organic Yemeni dishes along with many vegan options. They’re located in the heart of Southside on 20th St S. 🥐A&E Cafe’s food menu offers everything from sweet treats to breakfast sandwiches. I couldn’t resist trying the strawberry & cream fresh baked croissant. The croissant itself was SUPER fresh, light & buttery. I loved the drizzle of luscious Nutella. 🫐The Blazer Açaí Bowl featuring açaí, granola, banana, blueberries, coconut flakes & honey was the perfect combo of tart, sweet & nutty. This antioxidant packed dish is the best açaí bowl I’ve come across in Birmingham. 🍫I was excited to see that A&E Cafe serves Dubai Chocolate Bars! This bar has exploded in popularity after going viral. It features rich chocolate filled with pistachio cream & kataifi (shredded phyllo dough). What makes this bar so enjoyable is the combo of decadent flavors & delightful textures. The chocolate is extra velvety & pairs well with the crisp kataifi & smooth pistachio cream. This is a MUST TRY menu item! 🫖A&E Cafe offers serval coffee & tea options to help you power through your day. I recommend forgoing your usual latte for the more flavorful & exotic Yemeni Tea. Amy & I found that it tastes similar to chai tea, but more rich. It’s bold & features hints of cardamom & clove. 🍰🥤Amy can’t do dairy, so we’re always on the lookout for dairy free treats. A&E Cafe has so many to choose from! The Vegan Carrot Cake features a light, sweet icing & nicely spiced cake. It was soft & delicious. We also enjoyed the Power C juice with oranges, carrots, apples & lemon. It was bright & fresh. 🍃🏙️A&E Cafe is a GEM! It’s a fantastic spot to sit comfortably & start your day. They’re open until 11pm, so it’s also a wonderful place to indulge in an evening tea & dessert. The cafe is vibrant & welcoming & service is friendly. I highly recommend checking them out.   2. Eyes on the fries! Dad & I recently had lunch at the newly opened @eatjoyland . Joyland is the creation of James Beard Award-winning chef Sean Brock. It’s located in Avondale. The restaurant specializes in burgers & draws inspiration from the original fast food restaurants of days gone by. 🍔🍟I tried the Crustburger with Waffle Hashbrowns & dad had the Joyburger Double Deluxe with fries. After one bite, it was evident these were no ordinary burgers & fries. At Joyland, they make their burgers using grass-fed beef that comes from a local farm in Georgia. They also don’t use any seed oils. This is the QUALITY spin on fast food. The Crustburger’s patty is smashed which makes for nice, crispy edges. The bun was warm & the cheese was melty. Absolutely one of the best burgers I’ve ever enjoyed. 🥧🥤We also tried a couple desserts. I had the Peach Hand Pie & dad had a chocolate shake. The hand pie was made using fresh, sweet peaches baked into a flakey crust. It was out of this world good! Dad loved his made to order milkshake. 🌇Joyland is a wonderful addition to the Magic City’s fabulous food scene. The food is excellent, service is friendly & the atmosphere is nostalgic. Dad said it’s 100% reminiscent of the burger joints he enjoyed in the 60s. It reminded me of the places with ball pits & slides we’d eat at when I was a kid. In addition to the indoor dining area, there’s also a comfortable looking patio. Joyland also offers beer along with bourbon & rum to make boozy shakes. I’m already in love with this place. I truly can’t wait to indulge in another Crustburger.😋 ❤️Shoutout to @wardamnjake for this recommendation. This was the last restaurant in my #eatingwithamyreaderschoice month.   3. GRILLiant! Amy & I had lunch at the recently opened @burningtreesmokehouse . Burning Tree is a bbq joint. They’re located downtown on 3rd Ave S near Pepper Place. 🍖I couldn’t resist trying the Brisket Plate. When brisket is done right, nothing on a grill can top it, in my opinion. My plate came with a choice of two sides & choice of sauce. I went with fries, a side salad, habanero bbq & Alabama white sauce. The brisket was smoky & savory with the right touch of buttery fat that makes it melt in your mouth. I really enjoyed it along with the made in house pickles & habanero bbq sauce. The habanero sauce has quite the kick without totally blowing out your taste buds. I liked the Alabama white sauce, but it didn’t pair well with the brisket. That was on me though. I just wanted to try it. The salad was fresh & topped with ripe tomatoes & big chunks of real bacon. The fries were just frozen crinkle cuts that I’d skip next time. 🍔Amy had the BBQ Burger with Brisket featuring bbq sauce, pickles & onions (86 cheese) along with a side of coleslaw. She loved the burger. She’s not really one to reorder the same menu items, but she said it would be hard to order anything but this burger because it was so tasty. The coleslaw was fresh & very sweet, which she enjoyed. 🔥🌲All in all, I was impressed with Burning Tree. The brisket & burger were delicious, service was friendly & the atmosphere is comfortable. This is a casual “order at the counter place.” I’d say Burning Tree is already well liked because they were hopping even at 2:30 on a Saturday..well outside of a regular lunch or dinner rush. I introduced myself to the owner, Warren. He’s no stranger to a pit, having started his career at Jim N’ Nicks years ago. You’ve got a good thing going on, Warren! Thank you & the Burning Tree staff for some great que. #eatingwithamy

  2. I've. Typed this out and deleted it about 30 times now. It's never easy to find words to say goodbye. After many tears I think I've got it. This morning my grandmother, Ruth Greathouse passed away surrounded by my family, surrounded by her loved ones. She went quietly, finally at peace, no longer in pain. For those that were in the know, she had been suffering from multiple injuries after an accident last autumn and was recovering at home but unfortunately it was just her time to go. There will never be enough words in any language to describe how much she was loved and appreciated and admired, by my family and by my friends who she "adopted" during school as her "other grandchildren", to even any stranger that she met, and talked to they instantly were charmed by her infectious laugh and smile. She raised me and taught me from a very young age to be kind and to help others, "give them the shirt off your back, if they're cold" , always told me to do everything I can and put 200% into it, but that it's okay to fail too. She was the best of us at the best times, and honestly terrifying at the worst of times..especially to my friends(iykyk) and she will truly be missed by everyone she's touched. A teacher for 40 years, and a mother and grandmother for 77 years, I think 87 is a great number to call it quits. My heart will be heavy for a long long time, but eventually will heal. For today an angel really got her wings, no longer hurting, no longer suffering just finally at peaceful rest. I love you grandma. Forever and always will too. Thank you for everything ❤️💔
