  2. This is the third time I’m teaching how to make correct, authentic Ncha for Abacha just the way our mothers did it, the traditional way. INGREDIENTS: • Ose Akpi • Ehuru (Calabash nutmeg) • Efuru • Fresh okra • Palm oil • Ita Ngu • Abacha • Salt • Knorr seasoning cubes • Garden egg • Garden egg leaves • Fried fish • Kpomo • Onions • Ogiri Igbo PROCEDURE: 1. Begin by toasting the Ose Akpi, Ehuru, and Efuu in a dry frying pan over low heat for about 5 minutes, stirring constantly to avoid burning. 2. After toasting, grind the spices using a mortar or blender, depending on what you have available. 3. Pour the fresh okra into the mortar and pound until smooth. This gives the Ncha a unique consistency. 4. In a small cup or bowl, scoop out 2½ teaspoons of Ita Ngu. Mix it with water and sieve it into the mortar. Stir the mixture gently and continuously for about 3 minutes. 5. Heat up some palm oil until it’s properly hot. You can test this by adding a tiny drop of the oil into water—if it sizzles, it’s ready. Pour the hot oil into the mortar. A sizzling reaction means the oil was hot enough. Stir the mixture continuously for 3–5 minutes, until it thickens slightly and changes texture. 6. Add your Ogiri Igbo and stir thoroughly using your pestle. This adds a deep, local flavor to the sauce. 7. Wash your Abacha properly with warm water and place it in a large bowl or pot. Layer the Ncha mixture over the Abacha. 8. Add salt and seasoning cubes to taste, then stir everything together to combine evenly. Adjust the seasoning if needed. 9. Garnish with fried fish, kpomo, garden egg, garden egg leaves, and onions for that authentic, rich finish. And there you have it, your traditional Ncha for Abacha is ready to be enjoyed!   3. Let’s Make Anyu Agworoagwo with Yam and Unripe Plantain. This dish carries so much nostalgia for me🤗 Growing up, once we returned from primary school, we’d drop our bags in front of our mum and run straight to grandma’s house. The first thing we’d ask was “Grandma, what did you cook?😀 With a smile, she would reply “I cooked AMU ENYI.” In my childish interpretation, that meant “ELEPHANT PENIS” 🤣. We would all burst into laughter and then rush to devour the food served hot with palm oil. It was always so delicious that, by the time we got home, we could boldly tell our mum we had eaten Amu Enyi to our fill. Even if she had jollof rice and chicken waiting, we wouldn’t touch it. That’s how good this humble, traditional meal was. INGREDIENTS • Anyu (Pumpkin or Squash) • Yam • Unripe plantain • Palm oil • Onions • Ukpaka (oil bean) • Ogiri Igbo • Knorr seasoning cubes • Salt • Fresh red pepper • Green vegetables • Ugu leaves • Smoked fish PROCEDURE 1. Wash thoroughly, cut into halves with a cutlass or heavy knife, slice into smaller pieces, and remove the seeds. 2. Peel yam and unripe plantain, cut into chunks, and wash. Put them in a pot with the Anyu pieces, add water, and cook until soft. Drain, then scrape out the soft Anyu flesh from its greenish back (or peel before cooking if you prefer). 3. Place the scraped Anyu in a mortar and pound gently with fresh red pepper until smooth and well combined. 4. Heat palm oil in a pot, add sliced onions, Ukpaka, and Ogiri Igbo. Season with Knorr cube and salt, then stir to release flavor. 5. Add the pounded Anyu, yam, and plantain into the sauce. Stir well, then add smoked fish. Finish with chopped green vegetables and ugu leaves.
